Striped Bass Salad

I love this salad—it’s so fresh and clean-tasting. Sometimes I make a meal of it. Because I really want you to make this salad, I’m calling for store-bought fillets. But if you have a whole striped bass that you’ve filleted, this salad is a great way to use odds and ends from the fish. Poach the fish head and the belly parts you’ve trimmed from the fillets in the court bouillon. Remove the meat from the cheeks and along the top of the head, and trim the bellies of bones and skin. I like the crushed red pepper to be conspicuous in this salad, so don’t be afraid to use it. Start with about 1/2 teaspoon and go from there. And don’t throw the cooking liquid out: save it to make the salad nice and juicy. You could use crabmeat or even chicken instead, I guess, but white fish, like the bass, is perfect prepared this way.

Little Pizza Turnovers

If you haven’t bought a deep-frying thermometer yet, this is a good time to do it. A few of the pizzette may “spring a leak” while they fry—you can minimize the risk by not overfilling the pizzette, and by wetting and sealing the edges well as you form them.

Fried Mozzarella Sandwich Skewers

We made this dish at Ristorante Buonavia in the early 1970s with white bread. Now I find I like the flavor and texture of wheat bread, and I like it even more if the bread is lightly toasted before you put the sandwiches together.Vegetable stock is nice here—it cuts the acidity of the white wine without adding a definitive flavor. If you don’t have vegetable stock, use water or, if you want to add a richer flavor, chicken stock.

Fried Mozzarella “in a Carriage”

The carriage in the title refers to the bread that the mozzarella rides in. Like the preceding recipe, this dish was originally made with white bread. Whole-wheat bread adds texture and complexity. You can see in the directions below that everything is laid out before the oil is heated. Once the oil comes to temperature, you should be ready to start frying right away.

Stuffed Mushrooms

Serve these nice and hot, or let them cool to room temperature. If you’d like to make this a little more contemporary, you can add a dash of balsamic vinegar to the red peppers and scallions as they cook. In true Italian-American style, these are topped with butter, but in Italy, we would use olive oil. Best yet, top them with butter, then “bless” them all with a little olive oil. This wonderful stuffing is delicious in celery stalks baked with a light tomato sauce. You can also line up blanched asparagus on a baking sheet, sprinkle the bread crumbs over them, and bake them until the crumbs are crispy. I’m sure you can come up with a lot of uses for the bread crumbs. Remember, I give you the basics, but I want you to go and play.

I’ve updated these classics of Italian-American cuisine a little by using fresh thyme. If you like, you can substitute (or add) dried oregano. Chopped anchovies make a nice addition, too.

Stuffed Artichokes

The flavorings in this dish are zesty—a combination of the traditional and a few touches of my own. The anchovies add a lot of flavor, but if you don’t like them, don’t use them. Lemon zest lightens the flavor of this hearty dish a little. (You might find that adding just a little bit of zest to other robust dishes will do the same for them.) It may seem strange to chop the crushed red pepper—especially as they fly around the chopping board a bit while you’re trying to do so—but it prevents you from biting down on a big flake of pepper in the stuffing. If you have vegetable stock or chicken stock, you may use it in place of the water called for in the recipe. It will surely add flavor.

You can prepare the clams right in their baking dish up to several hours in advance and bake them just before you serve them.

Baked Clams Oreganata

I always add diced fresh tomato to this dish, because I think it contributes a little freshness. Now is the time to try to find the Greek or Sicilian oregano dried right on the branch—it makes a difference. Many Greek and Italian groceries will have it. You can buy powdered hot red pepper, but I like to chop up the flakes myself.

Mussels in Spicy Tomato Sauce

This dish can wear many hats. As is, it makes a light appetizer. Served with a zoccolo (fried bread “clog”—see the recipe that follows), it becomes a more substantial main course. Or you can prepare the mussels as described and toss them with freshly cooked linguine. This recipe will make enough sauce for a pound of linguine—six generous servings.

Zucchini and Eggplant Vegetable Lasagna

This is for the pasta shunners out there who still find themselves pining for a big, gooey serving of lasagna. Nothing can really replace the toothsome texture of fresh pasta, but given the amount of “bad” carbs a serving of pasta contains, it’s understandable that some choose to avoid it altogether. Thin slices of zucchini and eggplant stand in for the pasta in this lasagna, made with fat-free ricotta and low-fat marinara sauce. It all adds up to a truly delish alternative to traditional high-calorie lasagna.

Chicken Cacciatore

Many cooks overload Italian-American-style red sauce with olive oil. While it is a healthy fat, it’s still a fat. At 120 calories per tablespoon, that’s a lot of leeway in the hands of a liberal cook. In this version, the olive oil has been reduced to 1/2 tablespoon for all 4 portions and it still tastes great. If you use chicken thighs, you’ll end up with a little more cholesterol but a lot more flavor. (If your diet requires very small amounts of cholesterol, use boneless, skinless chicken breast instead of the chicken thighs, and simmer them for only 10 to 12 minutes to prevent their drying out.

Chicken Piccata

This is one of those Italian-American classics—a dish that looks and tastes as though it was born in the Old Country but that was really born in the United States. Capers are used liberally in Sicilian cooking, and a lemon-caper sauce lives up to its name, piccata, which some say means “piquant.” Other translations say piccata means to add fat—which might be where all of the butter in the original sauce comes in. This recipe calls for just a dab of butter for flavor in the tangy, tart sauce.

In Italy, pasta and meats are generally served as separate courses, but in this country, we like to combine them into a single main course. This creamy pasta pairs well with the sauteed chicken.

Shrimp Scampi with Broccoli

When I was young, I worked at a resort in the Poconos on the weekends. The way they made Shrimp Scampi was to simply let peeled shrimp sit in very large vat of warm garlic butter until an order came up. After many years of high-end cooking, I realized that wasn’t such a bad method after all—unless you were interested in living past the age of fifty. In this version, quick-broiled shrimp and broccoli, in a butter-free lemony, garlicky sauce spiked with fresh oregano, is every bit as good.

Tuna Burgers with Basil and Pepperoncini Mayonnaise

In preparing these burgers, use a food processor to chop the raw tuna, but be careful not to overdo it. Pulse just enough to chop it—too much action can toughen the fish, and you’ll wind up with a dry burger instead of a juicy, flavorful one.

This dish has become a staple on the American menu. From McDonalds to gastro-pubs to fine-dining restaurants, everyone has their own version. I’d venture to say mine is among the tastiest and healthiest out there.

Not-Sagna Pasta Toss

Easier than lasagna, because it’s not lasagna, this pasta, meat sauce, and ricotta toss-up is just as hearty and comforting as the layered Italian fave, but it’s ready in a fraction of the time and with much less effort. Serve with a simple green salad dressed with oil and vinegar.
