Thai Tofu with Pineapple and Veggies

This is a nice change of pace from more common soy sauce–flavored stir-fries, but it’s just as quick and every bit as delectable. Don’t be alarmed by the ingredient list, which is relatively long compared with those in most recipes in this book. It really is a quick dish, and with such an array of healthy components, you’ll need little else to make a satisfying meal.

Thai Steamed Green Garden with Coconut-Peanut Sauce

Offering an attractive presentation of steamed fresh veggies, this is a nice change of pace from stir-fries. It’s a fresh-tasting meal that gets its personality from a luscious sauce.

Nearly Instant Thai Coconut Corn Soup

When I first came up with this soup, I was looking to make something speedy to serve with a main dish salad. And speedy it is, taking only about fifteen minutes from start to finish, yet it tastes like a long-simmering soup. At first, I thought I was imagining things, but I’ve made it many times since, and that’s just how long it takes. The tiny bit of red curry gives it ample heat; if you’d like a spicier soup, use more, and for a less spicy effect, omit the red curry altogether

Thai Balls

A few months after the Shop opened we got a call from the Food Network asking if we would be interested in being guests on Big Daddy’s House with host Aaron McCargo, Jr. They asked if we could develop a new meatball for their Thai-themed episode. The recipe, which captures all of the fresh, wonderful flavors of Southeast Asia, was a big hit on the show and in the Shop as well. Be careful not to chop the herbs too finely and feel free to add extra chiles if you prefer your meatballs extra spicy. The garnish—crunchy peanuts, basil, and grated carrots hit with rice wine vinegar and soy sauce—is a killer. Serve it all with Peanut Sauce (page 67, optional).

Pan-Seared Sturgeon with Thai Red Curry

One of the benefits of working with so many chefs at the Workshop is that the experience sometimes takes us out of our comfort zone. We tend to shy away from spicy foods at the winery, but with this dish, Honolulu chef Alan Wong, who participated in the 1990 Workshop, reminded us that we don’t need to be so cautious. Our wine can happily accompany a dish with Thai flavors if the heat is balanced with a touch of sweetness and citrus and mellowed with coconut milk. We were pleased—and admittedly surprised—at how seamlessly our Anderson Valley Pinot Noir married with Alan’s red-curry sturgeon. Accompany the fish with stir-fried bok choy or spinach and steamed rice to soak up the luscious sauce.

Pad Thai

Here’s my take on Pad Thai. There are a lot of ingredients here, but most of them keep well in your pantry, and substituting is easy—you could use finely chopped cabbage in place of the bean sprouts or substitute soy or hoisin sauce for the nam pla.

Shrimp in Yellow Curry

Thai Dishes called curries contain curry powder and a combination of herbs and aromatic vegetables. A typical dish might feature a mixture of garlic, shallots, chiles, lime leaf, sugar, and galangal or ginger. This curry, which features coconut milk, is just such a dish. Serve it with white or sticky rice.

Lemongrass-Ginger Soup with Mushrooms

This Thai soup, like most European soups, begins with chicken stock. You can use canned stock if you like, because the added ingredients here are so strong that all you really need from the base is a bit of body. (Good homemade stock has better body than canned stock, of course; use it if you have it.) You can find all of these ingredients at almost any supermarket, and if you don’t have luck at yours, try an Asian market, where they are as common as carrots, celery, and onions. (And if you do go to an Asian market, pick up some rice or bean thread noodles, which require almost no cooking time and turn this dish into a meal.) You don’t need oyster mushrooms, by the way—fresh shiitakes or even white button mushrooms are just as good. All you really need to know is that lemongrass must be trimmed of its outer layers before being minced and nam pla (fish sauce) keeps forever in your pantry (and tastes much better than it smells).

Cha Yen

In Thailand, this refreshing drink is served at many stands in little plastic bags with straws so you can drink it on the go, but Thai iced tea has soared in popularity at Thai restaurants across America—and for good reason. Thai tea leaves, which can be found at most Asian groceries, combine black tea leaves, star anise, orange flowers, vanilla, cloves, and cinnamon. This blend gives the tea its distinctive taste and orange color, but the technique and style of the drink will work with any good black tea, or you can use black tea with added herbs, in the style of chai (page 668).

Ginger Chicken

A simple stir-fry, one made with a great deal of ginger and typical Thai seasonings. It makes a great weeknight meal; serve it with jasmine or sticky rice. Information on Thai fish sauce (nam pla) is on page 500.

Peanut Chicken

Like Ginger Chicken (preceding recipe), a Thai-style stir-fry that is super fast and very flavorful. If you use a mild, fragrant curry powder, like the one on page 593, this will appeal to many kids; it’s more sweet than spicy. Serve with jasmine or other white rice. Thai fish sauce (nam pla) is discussed on page 500.

Steamed Chicken Cups

Steamed dishes are not common even in Thailand (most Thai dishes are stewed or stir-fried). But this is a lovely, mild, sweet dish I had at an upscale restaurant in Bangkok; I thought it was an innovation, but it turns out to be quite traditional. You can prepare the mixture ahead of time, cover, and refrigerate the ramekins until you are ready to steam them. Serve it with rice and a salad or vegetable dish. To make ground chicken yourself, cut boneless, skinless breasts or thighs into chunks and put them in a food processor; pulse until ground, being careful not to overprocess. You can use turkey or pork in place of the chicken if you like. Information on Thai fish sauce (nam pla) is on page 500.

Braised Duck or Chicken with Fresh Curry Paste

A basic Thai-style curry, most often made with a convenient canned product from Thailand called “curry paste.” Here I make my own version, for a fresher taste. The technique is simple: First you brown the main ingredient; I use poultry here, but it can be meat, seafood, vegetables, or tofu, and the process would barely change. Then you cook the curry paste, loosening it with some liquid (typically coconut milk), and finish the dish by simmering. Straightforward and authentic. Serve with Basic Short-Grain Rice (page 507) or steamed Sticky Rice (page 508). See page 9 for information on dried shrimp and page 500 for details on Thai fish sauce (nam pla).

Two-Way Chicken

Dark, glazed, and bittersweet, this is another marvel of simple cooking from Southeast Asia. It takes no longer than a classic European chicken sauté, yet when you make it you will impress not only your guests but yourself. You can stop after step 2 and have a Thai-style dish, which is good, or proceed to step 3 and have one of the best Vietnamese-style chicken dishes you’ve ever tasted. Either way, serve with rice. Seared Swordfish with Lemongrass, Tamarind, and Fried Garlic

A wonderful technique and combination of flavors that works so well with swordfish that I would be reluctant to substitute (Spanish mackerel, usually quite difficult to find, would be a good alternative). If you’re unfamiliar with lemongrass, trim its ends, then slit and peel its tough outer layer to expose the tender core; you usually get about 1 tablespoon from each stalk. See page 500 for information on Thai fish sauce (nam pla). Sticky Rice (page 508) is the thing here, along with a lightly dressed salad or very simple vegetable dish.

Braised Pork with Coconut Milk

A surprising cousin of the Italian Roast Pork with Milk (page 400), similar in its preparation and results, completely different (but equally superb) in the eating. Because the pork is cut up and braised, it cooks more quickly. Use meat from the shoulder end. See page 500 for information on Asian fish sauces like nam pla. Serve this with Sticky Rice (page 508). Other cuts of meat you can use here: boneless chicken thighs.

Minced Pork and Shrimp in Coconut Milk

Incredibly quick and perfect on a weeknight with steamed Sticky Rice (page 508), which of course takes twice as long as the dish itself! See page 500 for information on nam pla. Other meat you can use here: Ground turkey, chicken, veal, or beef.

Green Mango Salad with Meat

Here’s a salad that combines the fresh tartness of green—unripe—mangoes with a little stir-fried meat. Unripe mangoes are more common than the ripe variety at most supermarkets, but if you can’t find them, substitute Granny Smith apples. Nam pla—Thai fish sauce—is described on page 500. Palm sugar is authentic but pretty indistinguishable from brown sugar.

Laarb

You could call this chicken salad Thai-style, but whatever you call it—you’ll see larb, larp, laarb, and other variations on menus—this is a quick, delicious, appetite-rousing starter. Teaming it with any of the more substantial Thai dishes in this book and some rice makes for an impressive meal. (If you need information on nam pla, see page 500.) Most laarb served in this country is made from chicken, and certainly that’s good and easy. But laarb is even more delicious made with pork shoulder or beef tenderloin. In any case, this is one place where you should mince the meat together with the garlic by hand; food-processed meat is just a little too mushy here. The process shouldn’t take more than five minutes, though, so don’t be put off.
