Thai Curry

Thailand has been heavily influenced by Indian culture. India's religion, music, and especially their food have all become part of Thailand's heritage. Curries are often thought of as an Indian thing, but Thai versions of curry are just divine. Serve this dish with Tom Yum , if desired.

Falafel

These falafels can be prepared as crusts for use in the Middle Eastern Plate, or they can be made into more traditional falafel balls. To make these balls, just follow the instructions below but roll the mixture into 1-inch balls, then dehydrate them for only 8 to 10 hours.

White Delight

The vanilla sapote is misnamed since it is actually not a member of the sapote family but a member of the citrus family. Vanilla sapotes, also called white sapotes, are green on the outside with pale ivory flesh. The green sapote (a true sapote) is green on the outside and orange on the inside. Look for vanilla sapotes at Latin markets and specialty produce stores.

Tangerine Soufflé with Citrus Coulis

To encourage the soufflé to climb up the sides of the dish, grease the dish with butter and sprinkle it with sugar. The sugar prevents the soufflé from sticking to the sides.

West Texas Stacked Enchiladas

In most parts of Texas, enchiladas are rolled tortillas stuffed with a filling and covered in sauce. But often in West Texas (and also New Mexico) the filling and sauce are instead layered between flat tortillas. They look a bit different, but the end taste is the same, not to mention stacked enchiladas are a heck of a lot easier to make. Another feature of stacked enchiladas is the inclusion of a fried egg on top. I don't know how this tradition came about, but it's a brilliant addition. When the yolk mixes with the sauce, its creamy transformation takes the sauce from merely delicious to truly decadent. I was born and raised a rolled-enchilada girl, but I can appreciate a plate of stacked ones, especially those made with an ancho chile sauce. And if I squint, I can see in the stack the rugged terrain of West Texas, with the egg standing in for clouds and the sun. It's West Texas on a plate.

Bengali-Style Fish in Yogurt Curry

Bengali Dahi Maach Tender pieces of tilapia are marinated with caraway seeds, turmeric, and cayenne pepper and then pan-fried until crisp and golden brown. The dish is finished with a yogurt curry enhanced by the spicy flavor of mustard seeds. The result is a great mixture of flavors and textures, and a simple way to prepare versatile tilapia.

Peach Iced Tea Sorbet

A frosty glass of refreshing iced tea is the inspiration for this sorbet. Iced tea flavored with peaches has nearly outpaced tea with lemon in recent years. Bottles of tasty peach tea are available in most stores, but you can also brew your own with peach tea bags. If you use bottled tea in this recipe, make sure it isn't diet. This sorbet is a good way to use peaches so dead-ripe that they cannot be eaten whole or sliced because any small brown soft spots disappear into the tea. The vodka improves the texture of the sorbet, as does the corn syrup. Use tea-flavored vodka if you have it, although plain vodka works fine. Pouring a splash of the sweet tea vodka or bourbon over the soft sorbet makes an excellent slushy for grown-ups.

To add a pungent touch of crunchiness to this classic Italian salad, after grilling the bread, rub it with garlic before tossing it with juicy tomatoes.

If you were unaware of that relationship before tasting this recipe, afterward you will try never to serve a slice of watermelon without a mint sprig somewhere nearby.
