Sesame-Chile Paste
You can buy go chu jang, the excellent, slightly sweet and not-superhot Korean chile paste that is a part of Crab Soup (page 135) and many other Korean dishes, but in many places it’s easier just to make this substitute, which keeps for about a month, covered, in the refrigerator. It’s a good sauce for any grilled food or even raw vegetables. The best chile powder for this is not the typical Mexican chile powder but ground Korean chiles—co chu kara—which (obviously) you can buy at Korean markets (you can also buy pretoasted and ground sesame seeds). It’s bright red, looks like coarse cayenne, and is not super hot. A good alternative is chile powder made from ground New Mexico chiles.
Dry Peanut Chutney
This can be served, with rice, alongside any dal (page 433) or as a condiment with spicy stewed dishes. It can also be mixed into yogurt to make a kind of Raita (page 175).
Harissa
Among the simplest and most useful all-purpose chile pastes—terrific as a condiment for grilled food, and useful by the spoonful in braised dishes—this one can be made with nothing more than dried chiles (the standard red ones, inexpensive and readily available at any Asian market, are fine), garlic, and olive oil. A bit of cumin or Tabil is a nice addition. However—and this is a big however—harissa need not be fiery; it can be made with relatively mild chiles, like New Mexico or ancho chiles. Furthermore, whether you need the chiles or not is up to you; even if you use “mild” chiles, the sauce will be fairly hot if you do not. Obviously, some experimenting may be necessary to find your tolerance level. I have eaten harissa in many different forms, and this recipe is my choice. Harissa keeps for at least a week or two, refrigerated. It will lose a bit of intensity over time, but this is not necessarily a bad thing; some would call it mellowing.
Vinaigrette
In Western cooking, vinaigrette is the closest thing to an all-purpose sauce. I recommend making vinaigrette in a blender, where it becomes so stable that it can be prepared hours before it is needed. Once made, it can be used on everything from green salad to cold meat, vegetables, or fish dishes to anything that has been broiled or grilled, whether served hot or at room temperature. I well remember the first time I had good vinaigrette, and it was in France. It was so far and away the best salad dressing I’d ever tasted (and at this point I was twenty-six years old, so I’d tasted at least a few, though the vast majority had come out of bottles) that I had to ask the secret. The answer—now so obvious, then a revelation—was shallots. But you can use such a wide variety of flavors in vinaigrette (see the variations) that these days the standard French variety seems almost clichéd.
Mayonnaise
An invaluable sauce that has countless uses with both fish (especially poached or fried) and vegetables, not to mention canned tuna. Make it once and, although you’ll probably keep the bottle variety around, you will turn to this time and again. For a stronger mayonnaise, use extra virgin olive oil and add a pinch or more of cayenne.
Rouille
The classic accompaniment to Bouillabaisse (page 138), this is also a great spicy mayonnaise for use almost anywhere.
Dosa
Thin and crisp, the distinctively large and cylindrical dosa are the famous crispbreads of southern India. Made from a base of ground lentils and rice, they’re delicious and, paired with a simple raita or chutney, the basis of a meal for many people. I ate dosa with amazement throughout India, but I learned how to make them here, with help from Monica Bhide and Suvir Saran, both friends who have written wonderful books about Indian cooking. Note that the difficult part of the dosa-making process—soaking and pureeing—can easily be bypassed if you have an industrial milling machine that can pulverize the lentils and rice into flour straightaway. And a couple of companies do just that, adding salt and fenugreek for flavor, add baking soda to give them a little puff, and sell the resulting mix throughout India and in the States. This mix makes dosa a convenience food you can fry up at the drop of a hat. I think it’s still worthwhile to give this recipe a try, but if the soaking and pureeing are going to keep you from trying dosa, by all means use the mix. Soak the lentil and rice flour in water as directed on the back of the package, and when the batter’s ready, start with step 4. (You can use the mix for the uttapam on the next page as well.)
Farro Salad
Farro is a wheatlike grain grown in central Italy (known as spelt here). Barley makes a good substitute; cook it the same way. Here it is combined with a simple pesto; it’s a lovely picnic or summer party side dish, with almost anything.
Sopa de Tortilla
This classic Mexican soup is the perfect solution for leftovers—stale tortillas, cold chicken, and overly ripe tomatoes. It can be garnished with a variety of toppings, from the classic avocado and cheese to steamed greens.
Chicken Soup with Chipotle Paste
A staple in Mexico, often garnished with diced raw onion, avocado, tomato, and a squeeze of lime. You can make the chipotle paste by buying canned chipotles in adobo (sold at almost all Latin markets and many supermarkets) and simply whizzing them in a blender. The results, however, are searingly, blindingly hot and not at all like what you get in restaurants in Mexico, where the paste is made from scratch. Fortunately, making the paste from scratch takes all of 20 minutes, 10 of which are spent soaking dried chipotles (available at most places that sell dried chiles or online at www.penzeys.com and other mail order sources). The lovely brick-red paste, used in small quantities, converts the blandest chicken soup into something hot, smoky, and delicious. Leftover paste is also great on broiled or grilled chicken or pork or stirred—again, in small quantities—into poached or steamed vegetables.
Plantain Soup
An unusual and quite useful plantain recipe, usually associated with Cuba. Like many soups, this one can be made in advance and reheated, though you’ll probably want to add a little more lime juice just before serving for freshness. See page 623 for information on plantains.
Chestnut Soup
Throughout the northern Mediterranean littoral, chestnuts not only grow on trees; they fall to the ground each autumn and are, for many people, a free crop. (They once did the same on this continent, but a blight wiped them out.) The first fall I visited northern Italy, I saw them drop and realized there were more than anyone could possibly eat. As a result, they are used in a much wider array of dishes there than they are here. This is a rich soup, one that can be made in a matter of minutes with cooked, frozen, or even canned chestnuts, and the results are inevitably good. Add a little splash of port just before serving to give this a bit of a kick.
Mediterranean Squash and Chickpea Soup
Brilliant orange pumpkinlike squash fill the vegetable stands of Morocco and most other Mediterranean countries every fall, and they show up in stews, couscous, pasta, and soups like this.You may find the same squash in the States, but butternut, acorn, or sugar pumpkin—pumpkin grown for flavor, not size—are perfect substitutes and easy enough to find. (Canned pumpkin is an acceptable if not ideal alternative; drain it well.) Make this up to a day in advance, reserving the cream and cilantro to add just before serving.
Spinach and Chickpea Soup
Most people seem to adore chickpeas, and one of their strongest attributes is that, unlike other dried legumes, they produce delicious cooking liquid. So if you lack stock for this dish, don’t worry about it. But—and this is true for the several chickpea recipes that follow as well as this one—the cooking time for chickpeas is unpredictable. Cook the beans the day before you plan to make the soup if at all possible, or at least soak them for several hours to reduce the cooking time (or, in a pinch, use canned chickpeas). Once they’re done, the cooking time is just a few minutes. If you are so inclined, this soup remains equally authentic and becomes more substantial if you add 1/2 to 1 pound browned sausage chunks. You can brown the sausage right before the onions, in the same skillet.
Green Bean Soup with Mint
If you want a little crunch, process the soup without the green beans, then stir them back into the puree before serving. This is best served at room temperature, since heat will dull the mint’s bright flavor
Sopa Fria de Mango
Mangoes abound not only in the Caribbean but also, these days, in the United States. When they’re cheap (in Latin markets they’re often four for a dollar) there is no better use for them than this sweet soup, which can be served as an appetizer, especially in hot weather (or for dessert; see the variation). It’s also lovely at Sunday brunch.
Sopa de Aguacate
This creamy soup is wonderful on hot days; pair it with tortilla chips and you have a great lunch. Unlike most avocado soups, which are cream based, this one features the sweetness of tomatoes and the bite of chiles. You can make this into a dip by adding another avocado or two and reducing the amount of stock to just enough to allow the mixture to be pureed. A nice touch is to use a third avocado, diced, as a garnish.
Ignacio Blanco’s Roasted Vegetable Gazpacho
Ignacio Blanco is a friend from Galicia, the northwestern corner of Spain. He taught me this delicious (and, yes, traditional, though it is cooked) gazpacho. Best made in August, when all these vegetables are at their peak.
Basic Red Gazpacho
Having eaten countless dishes called gazpacho—both in and out of Spain—I feel less an authority than anyone to define it. Some people would have you believe that all gazpachos contain soaked bread, and indeed many do. Some say it must have vinegar; but I’ve been served plenty of good cold soups called gazpacho that were barely acidic. Others call any cold, drinkable soup that meets the need for both food and drink gazpacho. (A chilled can of crushed tomatoes would meet this definition and, with parsley and garlic, wouldn’t be too bad on a hot day.) I do have a few rules of my own for gazpacho: First, try to avoid green bell pepper. Even if it looks nice, this under ripe fruit adds crunch at the price of bitterness; use red or yellow peppers instead. Second, the raw flavors of uncooked gazpacho really do seem to mellow when you allow them to meld for a few hours or even overnight; while not essential, this is a nice touch. And finally, sherry vinegar (or high-quality wine vinegar) is preferable to balsamic vinegar in gazpacho; not only is it more authentic, but its cleaner flavor provides better balance. See the next recipe for a more complex version of this classic. Or add some cumin or paprika to this one, use tomato or V-8 juice in place of the water, and add fresh herbs—especially basil—as you find them.
Mulligatawny
Originally an Indian vegetable soup, this became popular among British colonialists, who added chicken to the mix. I like it better in something approaching its original form, but see the variations for more substantial versions.
