This drink transforms a standard Champagne cocktail into something a bit more zesty and floral. Bright orange in color, Aperol is a light aperitif with a unique bittersweet taste that blends beautifully with fruit and bubbly. Making watermelon juice is a snap; simply pop a wedge of seedless watermelon (without rind) into a blender, turn it on for two seconds, turn it off, and you’re done.
Almond Braised Lamb Shanks with Toasted Almond Salad
This out-of-the-ordinary stew is seriously good and its enticing aroma seductive. The sauce is smooth and complex: cinnamon, mustard, cumin, fenugreek, and cardamom all add up to an intriguing flavor that really lingers. The parsley-almond garnish adds brightness to the dish. Sweet, nutty, and crunchy, with layers of Indian spices, this killer recipe is a musttry. Serve it over basmati rice.
Grilled Wild Salmon Steak with Fennel Hash and Sweet Onion Sauce
Salmon steaks are shaped sort of like a horseshoe and have the bone left in the center. They’re really thick and meaty and don’t stick like fillets, which means they’re perfect for the grill. Wild salmon is preferable to that raised in fish farms, as it tends to be healthier for you and taste better. Be sure to remove all the little pin bones with a pair of tweezers or have your fish guy do it. With the bounty of produce on the planet, I gotta say onions are probably my favorite vegetable. They can be transformed in so many different ways. This onion sauce is so velvety you’d swear there is butter in it. The trick is to cook the onions low and slow so they don’t brown or caramelize. This fennel hash is also killer with steak or eggs in the morning.
Crab Salad with Ruby Grapefruit, Pickled Radish, and Pink Peppercorn Vinaigrette
Grapefruit and crab are a classic combo; the addition of pickled radishes is both a colorful and surprising flavorful enhancement. Leftover vinaigrette will keep covered in the refrigerator for up to two days and goes great with all shellfish, particularly shrimp.
Florida Lobster Salad with Avocado, Papaya, and Jade Dressing
This mix of lobster, avocado, and papaya is a luxurious alternative to your everyday salad. It’s sweet and creamy, perfect in the summer on a hot day. With the exception of cutting the avocado, all of the ingredients for the salad can be prepared ahead of time. Then, assembling the salad becomes a quickie. Leftover jade dressing will keep covered in the refrigerator for up to two days and is fantastic with grilled lamb chops.
Jumbo Lump Crab Cakes with Carrot Butter Sauce
I know it’s a bold statement, but this is the best damn crab cake you’re ever gonna eat! Unlike most recipes, this one doesn’t depend on bread crumbs or any other filler to hold the crab together. Sweet, succulent crab is mixed with not much more than butter and cream, which, when chilled, binds the crab cake together beautifully. When panfried, the outside gets crisp and brown while the butter melts inside, and what you bite into are warm lumps of luscious crab. When you want to pull out all the stops, this dish is impressive, elegant, and looks and tastes fantastic. The crab cake mixture is best if made ahead so it has sufficient time to chill and harden. For an hors d’oeuvre, form the crab mixture into mini cakes. The super simple carrot butter sauce adds not only a bit more richness but also a subtle sweetness and vibrant color. Try it with grilled fish, too.
Tomato Bread Soup with Mini Grilled Fontina Cheese Sandwiches
With only a handful of ingredients, this Tuscan peasant soup is deceptively simple, but tastes so rich and decadent, you’d swear there was cream in it. Heads up: blending the soup with olive oil is an important step to produce its velvety texture. The bread becomes suspended—almost like a custard—in the silky tomatoes; the basil adds a subtle perfume. Paired with nutty, gooey-smooth Fontina cheese sandwiches, this comfort food classic pushes all the right buttons.
Falafel with Tahini Sauce
Falafel, usually tucked into pita bread with lettuce, tomato, and tahini sauce, is one of the best-known Middle Eastern street foods. At home, falafels make a rustic hot hors d’oeuvre, with a bowl of creamy tahini sauce for dipping. These fry up just right: crunchy on the outside and fluffy in the middle. The baking powder gives the falafels a little lift so they don’t sit in your stomach like belly bombs! All the fresh herbs make for a vibrant flavor and super green color. The chickpeas need to soak for a bit, so plan accordingly. The falafels are amazing with Quick Pickled Vegetables (page 235).
Pot Roast with Gravy
Marie called most any dish that she added wine to “French,” and her French pot roast was a star of the genre. The paprika and bell pepper are additions from the late writer Laurie Colwin, who along with Marie would top my list of people to eat pot roast with.
Red Lentil Soup with Smoked Paprika
Quick-cooking red lentils have a sweet, mild flavor that pairs well with rich paprika.
Raw Vegetables with Garlic-Anchovy Mayonnaise
This was one of the coldest winters here anyone can remember and many producers harvested root vegetables from underneath a cover of snow. It was hard on the farmers but great for the carrots, which didn’t get prettier but definitely got sweeter while resting in the cold winter earth. Carrots aside, early spring is the time to eat raw vegetables, especially at Fickle Creek. Gather as many colors, textures, and flavors as you can, such as small fennel, carrots, and radishes but also sweet scallions, baby turnips, and hearts of butter lettuce. Good on their own, they are of course also delicious with homemade mayonnaise. If you have an immersion or stick blender, you can make your own mayonnaise in 2 minutes.
Carrot Soup with Toasted Curry and Pistachios
I love any dish that can be made using water rather than stock. It’s a bit of useful laziness that can help establish the clean, pure flavor of the ingredient itself, whether it’s carrots or clams. One key is a slow, patient approach to cooking (or “sweating”) the onions and garlic, creating sweetness and depth. Homemade curry powder keeps well for a few weeks and warms up deviled eggs, beef stew, or hot buttered popcorn.
