Pasta in a Creamy Artichoke and Saffron Sauce

The saffron does all the work for you in this dish—you’ll freak out when you take your first bite and actually taste how easy this was to make. Since you now have saffron on hand, next time you’re making regular old rice, add a pinch of saffron and your rice will taste extraordinary.

Poached Artichokes

We like these artichokes both cold and hot. The green olive brine adds a wonderful flavor. Even better, it comes free in your jar of olives. Alternatively, olive brine is now sold as its own ingredient for mixing cocktails. The artichokes are great with potato gnocchi or on top of pizza. They can be sautéed in butter or lightly breaded and deep-fried. They are delicious wrapped in pieces of prosciutto or served as a salad with sliced tomatoes and a simple lemon vinaigrette. If you don’t want the flavor of lemon in your artichokes, you can add citric acid at a ratio of 0.5 percent to your water instead to prevent oxidation.

Fried Artichokes, Jewish Style

I used to think that this dish, called carciofi alla giudea, originated in Rome. But now I am not so sure. When I was visiting Barcelona last spring, it seemed as if every restaurant, every bar, every street vendor was selling this crispy delicacy of deep-fried artichoke flavored with herbs and garlic and served cold. I love it. This is a recipe that has come down in the family of Violette Corcos Abulafia Tapiero Budestchu of Paris.

Tunisian Stuffed Vegetables with Meat

For Women, cookbook are often memories of their mothers. Daisy Taïeb, the mother of two daughters, wrote Les Fêtes Juives à Tunis Racontées à Mes Filles (Jewish Holidays in Tunis as Told to My Daughters). “My daughters wanted to learn the religious customs in Tunis, like the fète des filles, a festival where the girls go to the synagogue all in white,” she told me. “Soon, with rapid Frenchification and assimilation, you will be able to learn about these traditions only in museums.” One day when I was in Nice, I watched Madame Taïeb cook her famous meatballs stuffed into vegetables. She was making them for Friday night dinner, to serve with couscous. Though I had expected a quiet, grandmotherly woman, I found her to be a trim, stylish lady who had taken the Dale Carnegie course on public speaking. She is the president of the French version of the Jewish Federation in Nice, and the representative of B’nai B’rith on the Côte d’Azur. These days, Madame Taïeb, who has lived alone since her husband’s death, invites people in for Sabbath dinner. “In Tunisia, you have the same foods as in Nice— fish, vegetables, spices— so it is not difficult to make the recipes,” she told me. “But you have to use your hands to judge, not your eyes, when making meatballs.” For Madame Taïeb, couscous with meatballs stuffed into peppers, artichoke bottoms, and eggplants, one of my favorite dishes, is symbolic of family, remembrance, and Friday night dinners.

Artichoke and Orange Salad with Saffron and Mint

Artichokes, one of my favorite vegetable, are edible thistles that were prized by the ancient Romans as food of the nobility. They have been a springtime food in the Mediterranean for thousands of years and particularly loved by Jews. Usually the French serve artichokes as a cold salad appetizer with a vinaigrette. Although I have seen this recipe in many Jewish cookbooks from North Africa, I hadn’t tasted it until Paula Wolfert cooked it for me on my PBS show, Jewish Cooking in America. It was a merveille, as my French friends would say. In the years since, I have eaten many different versions of this salad. Céline Bénitah, who lives in Annecy but came from Berkane, on the Algerian border of Morocco, said that all North African Jews who grew up in this orange- growing region have their own versions of this recipe. Hers includes saffron. Of course, this salad tastes best when fresh artichokes are used, but frozen artichoke hearts or bottoms work as well.

M’soki (Tunisian Passover Spring Vegetable Ragout with Artichokes, Spinach, Fava Beans, and Peas)

When Dr. Sylviane Lévy (see page 65), a physician in Paris, got married, she had a Passover dilemma. Her husband’s Tunisian family ate m’soki, a verdant soupy ragout with spring vegetables—like artichokes (considered a Jewish vegetable), spinach, and peas—and meat; her family, originally from Toledo, Spain, and later from Tétouan, Morocco, ate a thick meat- and- fava- bean soup. So which did she choose? Instead of picking sides, she serves both at her Seder. Now her grown children associate these soups with the taste of home. M’soki, also called béton armé (reinforced concrete) because of its heartiness, is so popular in France today that Tunisians, Algerians, and anyone who has tasted it now prepares it for Passover, and at special events throughout the year. This very ancient soup, probably dating from the eleventh century, would have included lamb, cinnamon, rose petals, and white or yellow carrots. It would not have included harissa, as peppers were a New World import.

Mahshi Kharshouf

This old classic is prestigious in the Arab world. In Egypt, during their season, artichokes were sold by vendors who brought crates to the kitchen door, and our cook pared the bottoms. Nowadays I use frozen artichoke bottoms that are so good you cannot tell they are not fresh. Look for them (a flat-cup variety) as produce of Egypt in Middle Eastern stores.

Artichokes and Preserved Lemons with Honey and Spices

This is good hot or cold, as a first course. The Moroccan play of flavors, which combines preserved lemon with honey, garlic, turmeric, and ginger, makes this a sensational dish. I make it with the frozen Egyptian artichoke bottoms that I find in Oriental stores.

Kharshouf bel Ful wal Loz

The Copts of Egypt observe a long and arduous fast during Lent—El Soum el Kibir—when they abstain from every kind of animal food, such as meat, eggs, milk, butter, and cheese, and eat only bread and vegetables, chiefly fava beans. Artichoke hearts and fava beans in oil is a favorite Lenten dish, also popular with the Greeks of Egypt. These two vegetables are partnered in every Middle Eastern country, and indeed all around the Mediterranean, but this dish with almonds is uncommon and particularly appealing. You can find frozen artichoke hearts and bottoms from Egypt that are difficult to tell from fresh ones, and frozen skinned fava (or broad) beans in Middle Eastern stores. But if you want to use fresh ones, see the box on the opposite page for preparing artichoke hearts or bottoms. If your fava beans are young and tender, you do not need to skin them.

This Moroccan tagine is easy to make with the frozen artichoke bottoms from Egypt and frozen skinned fava beans (both really good) available in Middle Eastern stores.

An elegant and tasty omelet. Use the frozen artichoke bottoms from Egypt which you can find in Middle Eastern stores, or hearts, which are more common in supermarkets.
