Cheddar

Macaroni and Cheese

The toasted crumbs on top have a cheesy crispness, and the pasta beneath is creamy and rich. Kids will appreciate the individual servings, but the recipe makes plenty, so why not pour the extra into a baking dish to feed the ravenous parents?

Broccoli-Cheddar Dip

This thick, cheesy dip is delicious with broccoli spears or bread sticks, or even as a spread on slices of bread. Serve any leftovers on baked potatoes or tossed with potato salad.

Hot Dogs Stuffed with the Works

Editor's note: The recipe and introductory text below are from Mastering the Grill: The Owner's Manual for Outdoor Cooking, by Andrew Schloss and David Joachim. You will need large hot dogs (knockwurst or foot-longs, take your choice) to hold all of the filling in this recipe. "The works" means anything and everything you like on a hot dog, so if there's something that works for you that we haven't included, bring it on; you can't mess it up. Whatever you do, the results will be over the top. One word of warning: Don't wrap the bacon too tightly, or it will break when the hot dogs swell during cooking.

Corn Pudding

Editor's note: The recipe and introductory text below are from Fonda San Miguel: Thirty Years of Food and Art, by Tom Gilliland, Miguel Ravago, and Virginia B. Wood. Chef Miguel Ravago also shared some helpful tips exclusively with Epicurious, which we've added at the bottom of the page. This delicate soufflélike dish, the Mexican counterpart to the spoon bread of the American South, is invariably the most popular dish on the Hacienda Sunday Brunch Buffet. It is especially good served with grilled meats, ham, or turkey in mole.

Cheddar Rice Fritters

Your guests will still be talking about these zingy, crunchy bites long after the party's over. A combination of tender rice, melting Cheddar, and a crisp bread-crumb shell, paired with a spicy vinegar dipping sauce that cuts right through the richness, these irresistible nibbles will disappear almost before you finish frying. It might seem a little unusual to cook the rice in a combination of water and milk, but it imparts a luxurious creaminess that makes the fritters all the more addictive.

Tex-Mex Roasted Lamb Ribs With Cheese Grits

Pork and beef are the usual suspects when it comes to ribs, but the rich, bold flavor of lamb is a perfect match for this tangy Tex-Mex marmalade glaze. Grits cooked with a generous amount of Cheddar and Parmigiano-Reggiano round out the meal.

Nacho Macaroni and Cheese

Mac and cheese goes southwestern with corn chips and salsa verde.

Slow Cooker Potato, Cheddar, and Chive Soup

The combination of potatoes and cheese just can't be beat, especially here, in this rich, filling soup.

Broccoli and Cheddar Skillet Flan

There are fluffy eggs, melting cheese, and golden hash browns in every bite of this one-dish meal. It makes a good stand-in for quiche, with potatoes acting as a crust.

Mac and Cheese with Buffalo Chicken

A comfort classic meets a bar-food favorite. WHAT TO DRINK: Pabst Blue Ribbon, an old-school brew that's enjoying a cult revival, is a light and refreshing foil for this rich dish.

Scottish Sharp-Cheddar Shortbread

•Look for a sharp, white Cheddar that is on the dry side, such as English Wensleydale Farmhouse Truckle or Extra Old Black Diamond Cheddar.
•It's important not to whip air into the dough — simply mix until blended.

Pimiento Cheese

Editor's note: The recipe and introductory text below are from The Joy of Cooking, 75th Anniversary Edition: 4500 Recipes for the Way We Cook Now by Irma S. Rombauer, Marion Rombauer Becker, and Ethan Becker. To read Epicurious's review of the cookbook, go to The Best Cookbooks of 2006. This rich, spicy cheese spread appeared in some fashion in JOY from 1931 until the 1960s. The 1936 edition declared it "a grand cheese spread for hot or cold sandwiches."

Spiced Sweet Potato Gratin

Who says a gratin has to arrive on the table in a baking dish? In this version, the potatoes, spices, and cheese are layered and baked in a springform pan, giving the dish a cake-like look.

Assorted Cheddar Crisps

One dough yields three kinds of thin, buttery Cheddar crackers. While it's a good idea to keep appetizers to a minimum on Thanksgiving, these (along with mixed nuts in the shell) will pique everyone's appetite just enough. Make sure you sample one of each—there won't be any leftovers.

Mac and Cheese with Chicken and Broccoli

To make this dish even more decadent, add cooked chopped pancetta or cooked and crumbled smoked bacon.

Hot Dog Howlers

**Editor's note:**This recipe is reprinted from Rose Hammick's and Charlotte Packer's book Great Parties for Kids. For Hammick's and Packer's tips on throwing a kids' summer party, click here. Children love hot dogs. The sauce freezes well and can be made in advance.
