Smoke-Poached Chicken Breasts

Poaching sounds chef-toque complicated, but simmering meat in a liquid on the stovetop is pretty straightforward and keeps the kitchen cooler in hot weather. Better yet, poaching is especially good for keeping the usually dry chicken breast meat moist. We even add a smoky component to the poaching liquid for terrific smoked chicken salads and sandwiches. For chicken salad, aim for a balance of smoke, sweet, and savory. The smoke really takes to fresh and dried fruits like green apple, pineapple, mango or papaya, raisins, dried cherries, or cranberries. Parsley and green onion are always a good choice, and celery and good mayonnaise are a must.

Chicksticks

Frying chicken is like outdoor barbecue: Sometimes we just don’t have the energy to do the work. In a pinch, chicksticks make a nice pile of crispy chicken strips with a high crust-to-bite ratio. Our trick is to roll the chicken breast strips in a mix of oil and bottled smoke before breading. Serve them hot or cold and take them anywhere. Kids love them with ketchup and honey mustard; sports fans drag them through buffalo sauce or chipotle ketchup (see Note). Cut them up to top a Caesar salad. Load them in a hoagie roll with pickles, mayo, and lettuce. For fancier meals, serve them with fresh lemon.

Quick Sticks

A heavy little cast-iron hibachi is R. B.’s favorite outdoor grill for fast and efficient high-heat cooking. Indoors, that efficiency is called the broiler. Both tools use direct high heat to sear tender cuts of meat hot and fast. It’s just that the broiler heats from above, the grill from below. Even better, the broiler gets burning hot in minutes with the turn of a knob. Quick Sticks are a very loose version of Thai satay—thin cuts of chicken and steak rubbed with curry, threaded onto skewers, and quickly broiled. The dipping sauce is first-class cheating—barbecue sauce with some chopped peanuts thrown in. Icy Q-Cumbers (page 153) are a Quick Sticks must.

Chicken Paillards with Parmesan Breadcrumbs, Escarole, Capers, and Rosemary

Chicken breasts probably wouldn’t make the list of my favorite foods. But these chicken paillards are a different story. Pounded thin, dredged in Parmesan breadcrumbs, and sautéed until golden and crispy, these chicken breasts are a synthesis of a few retro classics: chicken Parmesan meets chicken Milanese meets fried chicken. Whatever you want to call it, it’s a true crowd-pleaser, for everyone from the most sophisticated diner to the pasta-with-butter-eating child.

Saffron Chicken with Parmesan Pudding, Spring Onions, and Sugar Snap Peas

This dish proves my quirky theory that green and orange foods go together. Think about it: peas and carrots, oranges and asparagus, winter squash and arugula. Saffron, a beautiful rusty orange, pairs perfectly with spring’s green bounty. Saffron has been used as a flavoring and coloring agent (even as hair dye!) since ancient Egyptian times. The saffron thread is actually the stigma (part of the female reproductive organ) of the saffron crocus. Each one must be handpicked from the flower, which accounts for saffron’s outrageous price. Fortunately, a little goes a long way. Use it with a light hand, as too much saffron can easily overwhelm a dish. Buy whole threads, not powder, and store them in a cool, dark place. Buy only a little saffron at a time, so you’ll be able to use all of it while it’s still fresh.

Parmesan-Crusted Chicken

You don’t need bread crumbs in my take on chicken parm. The blend of finely and coarsely grated cheese with just a little flour creates a crunchy, savory crust. I love to serve this with Salsify in Lemon Butter (page 192).

Grilled Chicken Salad with Apples and Roquefort

Boneless, skinless chicken breasts are often derided as dry and bland. But I love pounding them and then grilling them until juicy. Their subtlety makes them perfect for a range of flavors—especially in salads. This is one I eat throughout autumn as a complete meal.

Chicken Breast Ballotine Stuffed with Ham Sausage

A ballotine is a boneless cut of any meat, fowl, or fish, stuffed and wrapped into a bundle and braised. It is like a miniature galantine, except that a galantine is a more elaborate preparation involving the whole beast, or like a roulade, which is a simpler preparation of a piece of meat pounded thin and wrapped around something. All are a form of sausage, and the stuffing can be almost anything edible. Here, the wrap is chicken breast and the something is ham sausage. You might think of it as a sausage with a sausage filling. Fancy though it might sound, its preparation is not difficult, and the outcome is decidedly elegant. Because this is a dish where the chicken takes a lead roll, it is important to have the best-tasting chicken available: organic and with a fatty skin still on the breast. It’s the skin that makes the sausage unctuous. The cheesecloth wrap ensures that the breast remains moist throughout as it braises. I serve the ballotine warm for a main dish with the braising liquid reduced to a sauce. I also serve it chilled as an appetizer. To serve chilled, refrigerate the ballotine overnight still wrapped in cheesecloth. The next day, remove the wrap, slice thinly, and arrange on a platter. Accompany with cornichons, Dijon mustard, and baguette slices.

Soulful Stew

Here’s a stew that comes and goes on our menu, rotating with a couple of other meat stews. It’s lighter than the others and is simmered with ten different vegetables. It’s healthy food for your meat-lovin’ soul.

Chicken & Zucchini Piquante

This one-skillet dinner is loaded with flavor and easy to prepare. Serve over some steamin’ Perfect Rice or your favorite macaroni. You can also substitute boneless, skinless chicken thighs for some real concentrated chicken flavor—love that dark meat!

Chicken-Fried Chicken

If you love good fried chicken, this is the quick version. It’s just like its namesake, “chicken-fried steak.” Breading up and frying a nice boneless flat piece of meat, whether it’s beef or chicken, will give you a meal in minutes. It makes a great main course, or try slappin’ the finished product in a crusty roll or even slicing it over a mess of salad greens.

Chicken Exotica

Indian spices and tandoori cooking inspired this one. The spicy, yogurt-based marinade tenderizes skinless chicken breasts to perfection. They cook up so tender you won’t even need a knife.

Chicken Steak Grandiose

Just like the name says, this is a big chicken dish. Grilled whole boneless chicken breasts are layered with eggplant, prosciutto, basil, provolone, and BBQ sauce for a heaping meal-size portion. For those with dainty appetites, the same approach can be applied to half chicken breasts. You might even want to come up with your own grandiose combinations, like grilled zucchini, oregano, and feta; grilled portabella mushrooms, bacon, sautéed onions, and Cheddar; or grilled tomatoes, sliced sausage, chopped cilantro, and pepper-jack cheese. Remember, just think big.

Stuffed Chicken Highbrow

As far as Dinosaur patrons are concerned, anything with goat cheese is kinda suspicious. Add some asparagus and you’re tippin’ the highbrow scale—hence the name of this dish. Many have discovered the tangy difference goat cheese makes when matched up with our Mutha Sauce.

Charcoal Bar-B-Que Chicken

Because we smoke most everything at the Dinosaur, when I get home I really enjoy the flavor that cooking over plain old charcoal brings out. It’s that delicate chicken flavor touched with spice and caramelized barbecue sweetness that I’m after. No-Baste, No-Bother Roasted Turkey

Every Thanksgiving, I hear cooks groaning about having been up all night basting the big turkey, and I just smile. I’ve found a foolproof, easy way to make a great turkey and get your sleep too! It also makes the most tender, moist turkey I’ve ever tasted. The first time I cooked Thanksgiving dinner for my family, Garth couldn’t believe this method would actually work, so he politely asked me to cook a “stunt” turkey so he could taste it for himself before the big day. Most of my friends have been just as hesitant, but once they have tried it my way, they never go back to the old way. To make sure the oven temperature doesn’t drop too quickly, I put a sign on it threatening bodily harm to anyone who even thinks about opening the oven door during this process!

Chicken Broccoli Casserole

This casserole is hearty and contains everything you could want on the table in one dish. It’s a favorite of our whole family. It makes ten servings, but my husband likes it cold for breakfast the next day, so in my house you’d better take your serving at dinner the night before, ’cause that’s all you’re gonna get!

Chicken Baked in Cornflake Crumbs

This is a nice recipe for southern girls like me who love fried chicken but realize they can’t eat it everyday. The cornflakes give you that crispy crust like fried chicken without all of the added fat of deep-frying—not that I’m saying there’s a thing wrong with deep-frying! My motto is “Everything in moderation, including moderation.”

Trisha’s Homemade Chicken Salad

I keep this chicken salad in the refrigerator pretty much year round. It’s easy to make, and it keeps in the fridge for a week. Of course, at my house, it only lasts a few days! I serve this on toasted bread, or with wheat crackers as an appetizer.
