Chile
Pipián
Pumpkin seeds figure heavily in much Mexican cooking. You can buy them toasted, but toasting them is an easy enough task, and they’re arguably better when toasted fresh—especially in lard or oil. (If you’d like to avoid the mess—or the lard—you can also toast the seeds on a baking sheet in a 350°F oven or in a dry skillet as you would sesame seeds, page 596.) Ancho chiles—dried poblanos—are mild and richly flavored. You can use them freely without worrying about overpowering heat. This sauce is best served over something simple, like grilled steak or chicken.
Salsa Verde
This is a sharp, spiky sauce, but not a superhot one (it’s not a supergreen one, either!). Use it as a dip for chips or vegetables or as a basting sauce when roasting meat, fish, or vegetables.
Roasted Onion Salsa
Somewhere between a vegetable dish and a salsa, this is great as a topping for simple grilled fish or chicken. If you have a gas grill, you can make this almost effortlessly; it’s easy, too, when you’ve started a charcoal fire for another purpose.
Xec
A tiny little side condiment served with grilled chicken or fish that can make any meal sing. It’s fine without any chile at all, but I like a touch. This is a very fragile dish; make it at the last minute and serve it all at once. It will go fast, believe me.
Avocado “Mayonnaise”
Neither mayonnaise nor guacamole, but something in between and, in some instances, better than either as a sandwich spread. Great, too, as a dip for cold shellfish. You can also thin it with heavy cream, sour cream, or yogurt and use it as a salad dressing (think of it as real Green Goddess). Make it spicy or not, as you like; I’ve had it both ways.
Cilantro Salsa
Killer on grilled meats, this simple herb puree is like pesto with more kick.
Vegetables with Dried Shrimp and Coconut Milk
This dish contains a lot of flavors, but one distinguishes Indonesian cooking from almost every other: dried shrimp. These tiny crustaceans can be bought at most Asian markets and need only be soaked in hot water for a few minutes before use. (There’s also a shrimp paste, which requires no soaking; you can use this instead.) But, like nam pla—Southeast Asian fish sauce—dried shrimp are an acquired taste for many people. I like them, but I’ve also made this successfully without them when I fear guests will balk. Other vegetables you can prepare this way: I’ve never seen this without green beans, but certainly you could substitute any root vegetable for the carrot and zucchini or any other summer squash for the eggplant.
Cheese and Chile Quesadillas
In their simplest form, quesadillas are warm corn tortillas encasing spicy melted cheese, but the basic construction simply begs to be built upon. See the variations and keep in mind that the possibilities are endless—take advantage of what you have in the refrigerator or garden. Fresh corn tortillas are best, but flour ones are acceptable. You may dry-sauté the quesadillas, with no oil, in a nonstick or well-seasoned cast-iron skillet.
Subz Miloni
Like many dishes from India, this one contains a lot of ingredients and requires a fair amount of precooking work but is easy to assemble. If you can find fresh paneer—the simple cheese that appears in many Indian dishes—by all means use it. But tofu makes a great substitute. Serve over rice or as part of a larger Indian meal.
Shrimp with Garlic
A classic Spanish tapa, cooked quickly in small ramekins and served sizzling. In Spain, the ramekins are put over direct heat, which, frankly, makes me nervous; I use a heavy skillet and take that right to the table. The Spanish are practically obsessed with the type of shrimp they use and prefer them to be fresh rather than frozen; but most of us don’t have much choice. That’s okay: as long as the shrimp are of high quality, the dish will be delicious. Double the amounts here if you want to serve this as a main course, and, no matter when you serve it, be sure to offer bread as well; the sauce is incredible.
Amritsari
Crisp-fried ladyfish are a specialty in India, and even though ladyfish themselves are part of the reason they’re so great and we don’t see them here, we can come pretty close to duplicating the dish; both batter and marinade are spicy, distinctive, and exciting. Plan on serving immediately.
Bacalaitos
These traditional bite-sized treats are served as a starter or a snack throughout the Caribbean (and, for that matter, in parts of Europe). They must be served hot: I recommend that you serve them to your guests while they’re standing around the stove and let them eat them with their fingers (or on toothpicks). If you want to serve them at the table, consider Aïoli (page 603) as a dipping sauce. Or you can follow Moorish traditions and serve them with honey or molasses.
Fresh Corn Fritters
If you’re accustomed to sweet corn fritters—even served with maple syrup—these are going to come as either a joyous revelation or a rude awakening. They’re just as crunchy, but spicy and mildly hot.
Queso Fundido
The original and superior version of nachos with cheese has the smoky spiciness of roasted chile and chorizo. While it can be served with tortilla chips, it is best scooped and wrapped into warm corn or flour tortillas. This makes a great simple lunch served with salad or soup.
Clam Cakes
The Korean coast is known for its variety of delicious clams, which inspired this local specialty. More like super flavorful pancakes than the highly breaded clam cakes sometimes served in the States, they are a good use for our sea clams, which are sold fresh, chopped, in their own liquid (canned clams, which are acceptable, will not be as flavorful). These are best eaten with your fingers, by the way.
Sautéed Peppers with Miso
Every culture that grows peppers grills them, and the people who eat them always swear “they’re not that hot.” Well, in Japan, not only are they not that hot, they are often sautéed; and only in Japan are they sauced with miso. Use mild long green chiles like Anaheims or—if you can find them—mild long red chiles, and you’ll come pretty close to duplicating the original.
Fried Green Chiles
This simple starter is served all over the world—at least wherever chiles are grown—but I first had it in Basque country. Here they’re fried, but you can grill fresh chiles as well; in either case they taste fresh, smoky, salty, and spicy all at the same time. The chiles you use can be mild or hot. If you use mild long chiles, like Anaheim, most people will be happy.
Taquitos
This is an amazing finger food, best set up using a simple assembly line of two or even three people. (You can also roll all the taquitos ahead of time and fry them immediately before serving; if you do this, and have cooperative friends, it’s almost as easy to make forty or even eighty taquitos as it is to make twenty.) Best served immediately from the skillet, they can also be made ahead and reheated in the oven. Serve with sour cream, any salsa (pages 610–612), Guacamole (page 22), or a combination.
Piquillo Peppers with Shiitakes and Spinach
A tapa based on piquillo peppers (see page 47), which are sold in jars and cans at specialty food stores and many supermarkets and are naturals for stuffing.
Canapés with Piquillo Peppers and Anchovies
Peppers and anchovies are a delicious standby appetizer, and when you use piquillos (page 47) and good anchovies (page 25)—packed in olive oil—they become even better. If you think using the garlic this way may be too strong for your tastes, simply cut a clove in half and rub the bread with it, then discard—or omit the garlic altogether.
