Slow-Roasted Pork with Red Cabbage, Jalapeños, and Mustard
While there are twelve or thirteen sandwiches in this book that Tom calls “my absolute favorite,” this one truly is Sisha’s. We use the pork shoulder, a very flavorful cut that benefits from slow cooking—so slow, in fact, that we set the oven on the lowest setting and leave the pork cooking overnight, which breaks down the textures, develops the flavors, and renders a lot of the fat. For the amount of meat called for in this recipe, you can get the same great texture and flavor in about four hours. This recipe has its origin in pork barbecue, which is often served with coleslaw. The cabbage in our sandwich—a nod to that side of slaw—is seasoned with olive oil and red wine vinegar. It is assertive and acidic, balancing the richness of the pork, while the jalapeños add a nice kick. Peppers vary in intensity—sometimes two slices are more than plenty while sometimes eight won’t be enough—so be sure to taste-test yours before layering them on.
Fried Cod with Tomato Salad and Serrano Mayonnaise
This dish was inspired by one from Sisha’s native Chile: a fried fish with a traditional tomato and onion salad. In Chile, the onion is not a condiment in the salad but, rather, an ingredient in its own right. So as not to be overpowered by so much raw onion, we “shock” the onion first; this blunts the thrust of the onion without sacrificing its texture. The sparkling water in the batter lends a tempura-like quality. And since the traditional Chilean green chile is unavailable here, we use serrano chiles—smaller and about five times hotter than jalapeños, but thin-walled and easy to use.
Jalapeno-Cheddar Corn Bread
Embellishing a recipe as iconic as corn bread could be a disaster of New Coke magnitude, so when a friend suggested dolling up the recipe with jalapeños and cheddar cheese, I proceeded with caution. I have issues with vegan cheese—it’s often overprocessed, packed with preservatives, and usually gross—but Emily, my office Queen Bee and resident persnickety vegan, suggested Follow Your Heart’s cheddar and made me a convert. I found nary a gluten globule or preservative in sight, and it melted! My mind adequately blown, I got to work in the kitchen, and a new bakery regular emerged. The cheese has the perfect creamy texture to complement the corn bread’s slightly grainy quality, and its sweetness is offset by the heat of the jalapeños. Bring this along to your next barbecue, but be sure to make extra: Those non-vegan eat-everything sorts tend to devour an unfair share.
Chocolate-Chipotle Soup
Working in a restaurant affords me the opportunity to learn the food cultures of many of my colleagues, who often bring home cooking to share for lunch. When that home cooking is Mexican, the dishes are sometimes flavored with chipotles or another chile, and I’ve come to crave that little kiss of heat, even in dessert. The gentle kick in the chocolate soup is tamed by the soothing chocolate-coconut foam.
Chocolate-Chile Cake
Inspiration here comes from my many Mexican friends who add chocolate to savory dishes. I thought I’ d return the favor and add chiles to dessert. This frozen chocolate cake has a gentle heat, tamed by the chocolate and its hidden apricot center.
Chili-Infused Oil
In the past few years, it’s become all the rage for restaurants to serve a little saucer of olive oil, instead of butter, for diners to dip their bread in while they have the aperitivo and wait for their first courses. This simple recipe is not only great for dipping, but can also be used to liven up the flavors in other dishes—as your cooking oil, or in salad dressing, or just drizzled over grilled fish or meat. It’ll keep in the fridge for a month.
Spicy Calamari Stew with Garlic Toasts
If you love fried calamari, you’ll really like having a new way to serve squid. The soup is thicker than a cioppino but not quite a chowder, and it’s nice and light. My husband, Todd, loves this soup because it’s spicy and the calamari gives it a meaty quality. Don’t add the calamari until right before you’re ready to serve, though, or it will become rubbery.
Southwestern Seasoning
This is the seasoning mixture that I use to flavor the Southwestern fries at my Mesa Grill restaurants. It’s not hot, just subtly spicy and earthy in taste. The fresh cilantro provides a bright touch of both color and flavor.
Barbecue Seasoning
Who out there doesn’t love barbecue-flavored potato chips? Toss this seasoning blend with Homemade Potato Chips (page 98) or Perfect French Fries (page 86) to satisfy your craving at home.
Lime-Pickled Red Onions
Pickled onions such as these are most often used as a garnish for tacos, burritos, and guacamole in Mexican cuisine. I think they are just as delicious on most of the burgers in this book, and they add a level of intrigue that raw onion slices could never do. The fresh lime juice is essential for its fresh, clean flavor as well as its acidity. If you want to pump up the volume on flavor and add a bit of heat, try adding a few whole jalapeño or serrano chiles to the mix.
Pickled Jalapeños
I love the spicy, vinegary punch of pickled jalapeño chiles. There’s no need to reserve these for nachos only; this pickle goes well with any Mexican- or Southwestern-inspired dish—and that includes burgers—that could use an acidic touch of heat. It’s simple to make your own, and I think you’ll find that the freshness of home-pickled jalapeños beats any jarred or canned supermarket version, hands down.
