Braised Cod with Chickpeas
This dish is a characteristic Moroccan Jewish preparation. North Africans, Jews and non-Jews alike, are particularly skilled at cooking fish because the long coastline yields so much. Dried chickpeas, a staple starch in the Mediterranean, traveled with the Jews when they emigrated.

Bouillabaisse
A 1980 charter signed by 11 restaurants (7 in Marseille) dictates what kinds of fish form the basis of an authentic local bouillabaisse. These are generally unavailable here, so we suggest using the freshest nonoily fish you can get, preferably three to five different kinds. As long as we were taking liberties, we also added lobster and used fennel fronds in place of pastis. And though the broth and croutons are usually served separately from the fish itself in Marseille, we enjoyed everything together.

Fresh Cod Cakes
Traditional fish cakes are made with salt cod and potatoes. To create a lighter, more delicate cake, we used fresh cod and left out the potatoes.

The English title of this recipe is not an altogether accurate description of ceviche since it is the lime (or lemon juice) that "cooks" the fish.
Peruvians are justifiably proud of their internationally famous method of serving fish tidbits. A mixed assortment can include squid, octopus, scallops, clams, langostas, as well as pata de mula, a shellfish similar to scallops. Then there are the black scallops of Peru, a rarity. All can be used in a classic ceviche, insuring a variety of textures and flavors.

This Basque dish is essentially a fish pâté or pudding, called budíns in Spain.
Leek and Cod Soup
Porrusalda, or leek soup in Basque, is a very traditional dish. It includes pumpkins, an interesting component in a soup composed of both Old World (carrots, leeks) and New World (potatoes, pumpkin) ingredients.

We like to team this with red and green cabbage coleslaw, pickled onions and carrot sticks-as well as a pint of ale. Have lemon ice cream cones for dessert.
Sauteed Cod with Asparagus Sauce and Fennel
Melon wedges wrapped in prosciutto make a lovely first course; the garlic mashed potatoes, baked tomato halves topped with Parmesan, and an Italian Chardonnay are perfect with the fish. Offer an arugula salad after the main course, and fresh strawberries in grappa with lemon sorbet and biscotti for dessert.

Salt Cod Fish Cakes
Camilla MacPhee, a longtime resident of Souris, Prince Edward Island, fondly remembers when staples like salt beef, salt cod, potatoes, turnips, beets, parsnips, and carrots came entirely from neighboring farmers and fishermen. This recipe is based on the fish cakes she still makes today.
