Wine-Braised Brisket with Tart Cherries

Beef brisket is the centerpiece of many Jewish holiday meals, particularly at Passover, and every family has their favorite way of preparing it. There are countless recipes out there, but how many do you need besides your grandmother's? At least one more: This one!
Why? Because the meat is slowly braised in Pinot Noir, and the cherry notes in the wine pair brilliantly with dried tart cherries, which plump up with winey beef juices to become little mini-pouches of flavor on their own. Add to that a bit of star anise, which perfumes the brisket and your home with an exotic and enticing hint of licorice. Season the mixture with the sweet-and-sour agrodolce dance of brown sugar and balsamic vinegar, and you have a brisket that is at once counterintuitively familiar and wonderfully different. Like all braised meats, brisket improves in flavor, and slices more easily, if made a day ahead and chilled (see Cooks' Notes). Crunchy Breadcrumb Dressing with Prunes

Haroseth (Dried Fruit and Nut Paste)

Haroseth, a symbolic seder food, alludes to the mortar that the Jews used to build the pyramids when enslaved by the Egyptian pharaoh. Though haroseth visually mimes the unappealing look of cement, its taste is actually a delicious combination of fresh or dried fruit, nuts, spices and wine. There are as many variations of haroseth as there are seder tables around the world, and all reflect a myriad of traditions. This recipe is inspired by my grandmother's simple grated apple, walnut, and cinnamon version, along with the flavors of my husband's Middle Eastern background.

Mediterranean Salad

Couscous is technically a pasta made from semolina, though many people consider it a grain. In southern Italy it is used often, a lasting memento of the Arabs that invaded Sicily in the ninth century. I particularly appreciate the way it cooks so quickly. This is a perfect side dish for large-scale entertaining because it doubles or even triples beautifully.

Granola

Chock-full of grains, nuts, seeds, fruits, and natural sweeteners, granola is easy to prepare, and, when it’s homemade, it’s much lower in sugar and fat than store-bought varieties. This basic recipe can be easily adapted to create many different versions, including the three variations that follow. You can omit the nuts or the dried fruit, as desired. For a vegan option, simply omit the egg whites; the granola won’t be as crunchy but will still be delicious. Freeze granola in an airtight container for up to three months (it thaws quickly), or store at room temperature for up to two weeks.

Sablefish in Tomato-Saffron Stew

This aromatic stew can be made with other types of fish, including haddock or regular cod, but sablefish delivers higher amounts of omega-3 fatty acids. A whole-wheat baguette is good for sopping up the broth.

Quinoa, Apricot, and Nut Clusters

In this version of a granola bar, clusters of quinoa, apricots, pistachios, and sunflower seeds make a sweet and delightfully chewy snack. White quinoa is used in this recipe, but you can substitute any variety; all share the same nutritional qualities, flavor, and texture.

Chicken Breasts with Fennel, Carrots, and Couscous

After the chicken is browned and the vegetables are sautéed, the meat is braised until fork-tender. Orange juice adds vitamin C and brightens the dish, but you can omit it and increase the chicken stock by half a cup.

Oat Bran–Applesauce Mini Muffifins

Loaded with soluble fiber, the old-fashioned oats in these muffins help reduce cholesterol and regulate blood sugar. Dates and applesauce—both full of fiber, vitamins, and natural sugars—create a complex caramel flavor when combined with the honey.

Turkey with Mole

Native to North America, turkey has always been a celebratory bird (or at least it was celebrated by those who dined on it). Turkey (guajolote, in Spanish) was used for special feasts in pre-Columbian times and was a favorite food of the American Indians. In Mexico today, turkey in mole is still the preferred holiday dish. For Thanksgiving dinner one year at Coyote Café, we raised almost thirty wild turkeys (so much better than the modern domesticated turkey) on open ranchland so they were free to go anywhere and eat anything. The flavor of those turkeys was magnificent! This recipe is a tempting taste of what awaits any traveler to Oaxaca or Puebla, two of the great Mexican mole capitals. Commercially produced mole sauces are widely available throughout most major grocery store chains in the United States. We have used turkey breast for this recipe, but any part of the turkey will work. Note that the turkey must marinate overnight before cooking.
