Chocolate Cranachan

Cranachan is Scotland's traditional harvest-time pudding, a blend of Crowdie (an artisanal cottage cheese), cream, toasted oats, berries, whisky, and honey. Here, it's updated with crème fraîche (instead of the Crowdie), toasted hazelnuts, and grated chocolate, and served parfait-style in individual goblets. To allow the flavors to meld, assemble the parfaits ahead of time and chill them overnight before serving.

Pedro Ximenez Sherry Cheesecake

Nicola, Steve's wife, likes this dessert more than any of his others, mostly because you have to eat it with yet more Pedro Ximénez sherry. If you don't want to splash out on the real McCoy, use another good, sweet dark sherry.

Cherry Linzertorte

This jam-filled pastry with a cookie-like dough takes its name from the town of Linz. The recipe uses cherry preserves for the filling. It makes enough dough for the torte and extra cookies. To make cookies, roll out dough to 1/4-inch thickness. Cut out decorative shapes and bake at 350°F on a parchment-lined sheet until golden, about 10 minutes.

Gianduia Chocolates

This recipe involves tempering, in which the chocolate is melted — and if necessary, cooled — to a temperature of just below body heat. Tempering chocolate helps to ensure that it will be glossy and stay firm at room temperature.

Pear and Fig Pie with Hazelnut Crust

Roast Turkey with Prosciutto-Hazelnut Crust

These nut meringues are also called erstesternen ("first stars"), a reference to the heavenly signs indicating the end of a fast day. They are traditionally served by German Jews at the meal following Yom Kippur.
