Layered Pickled Herring Salad with Tart Apples and Red Onion

One of the layers in this delicious salad is lightly pickled sweet-and-sour cucumbers, a favorite throughout Denmark. They do need to marinate overnight, so make sure you start this recipe a day ahead of time.

Salade Verte

Active time: 45 min Start to finish: 45 min We created this recipe using Louis P. De Gouy's article on green salad and agree with the quote he includes from Fred Allen: "A salad should be dressed like Dorothy Lamour — adequate but lightly."

Crispy Shredded Duck and Noodle Salad

It's important to use large lettuce leaves (about 6 inches) for this salad, so you may need to buy 2 heads of lettuce in order to get 6 good leaves. Active time: 45 min Start to finish: 45 min

Minted Lettuce Soup

Can be prepared in 45 minutes or less but requires additional unattended time.

Radish and Mushroom Salad with Parsley

Can be prepared in 45 minutes or less.

Kunkhen's Torn Noodle Soup

Fermented black beans are an essential ingredient to this soup. I couldn't find exactly the kind of beans Kunkhen used, so I settled for a prepared black bean garlic sauce, which was perfect and gave the soup the same earthy taste that Kunkhen's had. I recommend that if you are using black beans you begin by adding 5 teaspoons, then taste the soup for seasoning. If it needs more flavor, add more black beans. The tablespoon of black bean garlic sauce was perfect to season this amount of soup.

Roast Duck Soft Tacos

You've never seen these on the menu at your local fast-food Mexican restaurant, and you probably never will. One of the joys of cooking is that leftovers can be used to create better meals than most people get when they eat out. These tacos are remarkably simple to make. Just put the various ingredients in their own serving containers on the table and let everyone serve themselves.

Roast Beef with Rosemary Mayonnaise

Serve the roast beef and the mayonnaise on their own, or put assorted breads alongside so that guests can make little sandwiches.

Lobster-Salad-Stuffed Eggs

Can be prepared in 45 minutes of less.

Romaine Salad with Radishes, Olives, and Mint

Can be prepared in 45 minutes or less.

Bibb Lettuce with Sherry Vinaigrette

Can be prepared in 45 minutes or less.

Butter Lettuce Salad with Oranges and Red Onion Dressing

At the restaurant, they use Champagne in the salad dressing. We've simplified it with white wine vinegar, but if you've got a bottle of the bubbly open, feel free to substitute.

Bibb Lettuce, Avocado, and Dried Cranberry Salad

"Five years ago, I threw my first dinner party," writes Kristin McGill of Chicago, Illinois. "It was a memorable night with good friends, great food and lots of wine. That night, cooking became my passion. And despite all of the effort, I still love to throw parties. My husband, Henry, and I host get-togethers once or twice a month. I do most of the preparation — admittedly that's because I enjoy cooking so much that I prefer to have the kitchen to myself. But I have to confess that since I started sharing the counter space, I've discovered we make a great team." Pair this lovely side or first-course salad with the Blue Cheese Toasts. Add cooked, peeled shrimp for a lunch entrée.

Caesar Dip with Crudites

Over the Fourth of July weekend in 1924, a group of unexpected guests arrived at Caesar’s Palace restaurant in Tijuana, Mexico. Running low on food, the owner, Caesar Cardini, threw together a salad with ingredients he had on hand. He made a thick dressing with a coddled egg, garlic-flavored oil, lemon juice, grated cheese and Worcestershire, which added a taste of anchovy. This dip has all the flavors of that first Caesar salad, and romaine lettuce and fresh veggies are nice “dippers.”
