Stewed Zucchini with Tomatoes, Oregano & Pine Nuts

This dish reminds me of summertime as a kid. Growing up we had a vegetable garden and we always grew zucchini—one of those veggies that if you grow some, you get a ton. So my mom was constantly coming up with different ways to use all the zucchini we had hanging around—we had stuffed zucchini, grilled zucchini, zucchini bread, you name it. (I took more zucchini bread to my teachers at school than you can imagine!) This preparation of stewed zucchini was one my favorites. Zucchini with tomatoes and cheese . . . HELLO? What’s not to love???

Pork Milanese & Escarole Salad with Pickled Red Onions, Hazelnuts & Pecorino

To me, absolutely anything fried is delicious. In this recipe I take a traditional crispy, crunchy, salty, fried preparation for chicken and apply it to pork. I serve the pork with escarole—the unsung hero of the salad world (I’m on a mission to popularize escarole). Then I toss some chopped nuts and pickled onions into the mix. My mouth is so excited it just doesn’t know which way to go; there’s crispy pork, crunchy escarole, salty sweet nuts, and bright acidic onions. So many different things are going on in this dish that even though it’s super-easy to make, it’s also incredibly exciting to eat!

Braised Chicken Thighs with Mushrooms & Almond Purée

I LOOOOOVE dark meat chicken! Especially chicken thighs—they’re succulent and delicious, the perfect portion size (two thighs per person), and they’re cheap. I also love nuts. In this recipe I put these two ingredients together and take the humble chicken thigh to a totally new level. I braise these lovelies with lots of mushrooms and then thicken the sauce with toasted almond purée. The result is a dish that is surprisingly rich and, thanks to the nuts, has an excellent mouthfeel. It’s definitely one of the best recipes I’ve ever come up with.

Tagliolini with Arugula-Walnut Sauce

I LOOOOOVE nuts. And this super-classic preparation, which is hugely flavorful and really easy to make, is all about them. I start by toasting and puréeing walnuts—both of which help bring out their flavor and natural fattiness. Combine them with some sharp cheese and spicy arugula, and you end up with a dish that’s luscious and palate cleansing at the same time.

Escarole Salad with Walnuts, Pecorino & Pickled Onions

Escarole is one of those greens I LOOOOOVE to use in a salad. It has a firm texture and an exciting flavor; to me it’s a sleeper hit. Whether you cook it or dress it with a nice bright vinaigrette, escarole stands up to whatever you dish out—it’s a green with a strong personality. Add a big ol’ acid punch with these onions, and this is what I call a party in your mouth.

Figs Stuffed with Gorgonzola & Walnuts

People think fresh figs are elegant—and this preparation definitely is. To be honest, figs are not my favorite fruit, but when I make them this way I really love ’em. They are a quick and easy (Q&E) piccolino. Cut ’em, stuff ’em, and roast ’em until everything melts and gets all toasty—it’s SOOOOO easy!

Mortadella Pâté

Mortadella is a super-high-quality baloney. In fact, it’s probably the most delicious baloney you’ve ever had. At one of my dinner parties I was serving mortadella and one of my guests said, “Hey, this baloney has nuts in it!” And it does: Mortadella is full of pistachios and chunky bits of fat, both of which make it super-flavorful. My mortadella pâté is puréed, mixed with whipped cream, and topped with pistachios—think of it as baloney mousse.

German Chocolate Cake

I’m hoping this cake doesn’t need much introduction. It’s one of those recipes for which a photograph speaks clearly and perfectly to its mega-rich glory. I will add, however, that even though a German chocolate cake is not as recognizable without its beloved pecans, you can easily omit them if you are allergic and still achieve the same delicious experience. If you want to add a little crunch and you have extra time on your hands, you can fold in graham cracker crumbs from the S’mores recipe (page 79) along with or instead of the pecans.

Sweet-and-Spicy Popcorn Balls

This is one of my absolute favorite snacks—a perfectly refined marriage of competing flavors. Whatever you do, do not put these in a big bowl by the couch and dig in for a reality-TV marathon while pretending to write a cookbook on a windy, rainy spring day like I did. You will lose that productivity battle, I assure you. Instead, make a big batch and divvy the balls out into individual air-tight sandwich bags for on-the-fly enjoyment throughout the week.

Summertime Spaghetti Squash

Cooking spaghetti squash in the microwave steams the squash and the strands come out nicely—unlike cooking it in a conventional oven, which can cause the strands to bake to the skin. A simple quick fresh pesto is a snappy sauce for the steamed squash.

Peanut Slaw

Like reverse butterflies, when the showy yellow blooms of peanuts begin to fade, the peduncle bows to the ground and buries its head in the earth, forming the webbed cocoon-like shells this legume is known for. This slaw is a great one for picnics in the hot summer because it isn’t bound by mayonnaise. Chile, cilantro, and rice vinegar give it a fresh, spicy crunch that makes it the perfect peanutty partner for grilled chicken or pork.

Fig Pecan Fondue

Rarely do I pull out any of the inexplicable number of fondue pots we got for wedding gifts. They just sit up on the ledge above my kitchen cabinets and collect dust. The fig preserves my girlfriend Jane Rule gifts to us also sit up on that shelf. I love her preserves. I love them so much that I always think I’m going to save them for a special occasion, and they end up collecting dust until the next jar arrives. It’s ridiculous. This sweet, nutty cheese fondue uses both of these thoughtful gifts. On a chilly night, sharing this communal dish with friends makes you feel warm all over.

Toasted-Almond Panna Cotta with Maple Roasted Pears

In the scheme of desserts, panna cotta is not only one of the lightest, it’s thankfully also one of the easiest and fastest to prepare. The eggless custard sets with gelatin, but what really matters is the quantity used. If you have a heavy hand, then the result is more like cement Jell-O than melt-in-your-mouth. The infusion of the almonds adds a nutty-creamy flavor that’s satisfying without being cloying. Roasted pears set the whole thing off with a balance of texture and fruitiness.

Milk Chocolate Cremoso with Espresso Parfait

This decadent milk chocolate cremoso—a silky puddinglike dessert—is drizzled with olive oil for an unexpected pop of flavor. Some people are like, whoa . . . olive oil and chocolate? But the combo really works. The hazelnuts and chocolate bring forward a Nutella-like flavor, and the salt cuts the sweetness. The slight sourness of crisp sourdough bread and smoky flavor of espresso deepen the complexity of the dish. A recipe is only as good as its ingredients, and this is no exception. Use the best-quality chocolate—it makes all the difference between a waxy, vaguely chocolaty flavor and intense chocolatiness. Valrhona, Lindt, and Scharffen Berger are premium chocolates I like. Most of this dessert can be made ahead, so it’s perfect to serve for a dinner party.

Almond Braised Lamb Shanks with Toasted Almond Salad

This out-of-the-ordinary stew is seriously good and its enticing aroma seductive. The sauce is smooth and complex: cinnamon, mustard, cumin, fenugreek, and cardamom all add up to an intriguing flavor that really lingers. The parsley-almond garnish adds brightness to the dish. Sweet, nutty, and crunchy, with layers of Indian spices, this killer recipe is a musttry. Serve it over basmati rice.

Slow-Roasted Boneless Short Ribs with Romesco Sauce

Beef short ribs are commonly braised for hours. What is slightly unusual and great about this recipe is that the short ribs are slow-roasted until tender and then grilled to impart a smoky char. It may seem like a difficult recipe, but I swear it’s not, and the delicious result is so worth the time. The ribs need a day to marinate, so plan accordingly. After tasting this dish, you’ll never braise a short rib again! Use any leftover meat to make Short Rib and Fontina Cheese Panini with Tomato-Onion Chutney (page 120) or Pappardelle with Beef Sugo and Ricotta (page 111). This is a really rich dish; all it needs to round it out is a simple green salad. To make the spiced short ribs really sing, I prepare a version of Spanish romesco sauce. Bold, tangy, and definitely habit-forming, romesco looks ordinary enough but in one bite transforms the dish. When making the sauce, it’s important to use a food processor and not a blender so it retains a chunky texture. This recipe will make more than you need for the short ribs and is a terrific go-to sauce to keep around. Try it with grilled vegetables and seafood (it’s particularly awesome with shrimp), tossed with pasta, or as a sandwich spread.

Whole Roasted Chicken with Plumped Raisins, Toasted Pine Nuts, and Arugula

Succulent, tender, and aromatic, roast chicken is a dish that all cooks should have in their arsenal. There are many schools of thought on how to master the perfect roast chicken. My philosophy is the simpler the better. I don’t use a big roasting pan or rack, truss the bird, or change the oven temperature fifty times. As far as technique goes, I like to start roasting the chicken breast side down to protect it from drying out in the initial intense heat. Gravity also works on your side that way; all of the juices gather in the breast meat during the first half of cooking, keeping the meat really moist. Then I turn the bird over to finish cooking and brown the breast. Swiss Chard and Caramelized Onion Panade (page 183) makes a terrific side.
