Mixed Pickled Vegetables
A pickle can be a symphony of flavors. Be creative with pickling spices—try throwing in the whole kitchen sink if you like. Experiment with different accents: cumin seeds and coriander for an Indian pickle; caraway, celery, and mustard seeds to evoke Eastern European flavors; ginger, garlic, bruised lemongrass, and a shot of soy for a taste of Southeast Asia. For a crisp pickle start with crisp fruits and vegetables; those that are just shy of ripe work well.
Tamarind Ketchup
Tamarind provides acidity with a delicious fruity tartness. It is mainly used in Indian, Thai, and Mexican cooking, although it grows in many tropical climates, including Florida. Look for the caramel-colored tamarind concentrate or paste in markets, as extracting the fruit from the pods is labor-intensive. Use the ketchup on the Indonesian Corn Fritters (page 155), Indian Spiced Scrambled Eggs (page 75), and burgers or grilled shrimp. For all of the preserving recipes, including this one, use kosher salt; unlike table salt, it is free of additives that can discolor ingredients.
Orecchiette with Morel Mushrooms and Garlic Ramps
This recipe pairs two foods you might find on a spring hike: morels and ramps, the latter being the wild leeks that grow from South Carolina to Canada. Both have the fresh earthiness of spring, tempered here by the richness of Grana Padano and mascarpone. Buying morels can get expensive, so if you can only afford a few, you can make up for it by adding another portobello or two. If you can’t find the pasta called orecchiette (literally, “little ears”), use small shells or another bite-size pasta.
Tortilla Española
Tortilla Española is an indispensable dish: It makes a great breakfast, goes well in a sandwich, and makes a hearty hors d’oeuvre when cut into small squares. The only challenge is removing the tortilla from the pan intact, but you can cheat by waiting until it’s cold. Embellish the tortilla with Stinging Nettle Pesto (page 115), Cilantro-Jalapeño Sauce (page 184), or plain ketchup. For a light meal, serve the tortilla alongside the Puntarelles with Anchovy Dressing (page 156) and fresh bread.
Tofu Steak with Japanese Mushrooms
This is a very comforting, home-style dish, perfect for a blustery autumn day. Be sure to use only firm tofu for this recipe; softer varieties will fall apart during cooking. The trio of cultivated shiitake, enoki, and shimeji mushrooms is a classic combination in Japanese cooking, and it adds a nice woodsy and earthy flavor to this dish. You can use other kinds of mushrooms, too, if you’d like, everything from the humble button mushroom to fancier porcinis or chanterelles—whatever your budget allows.
Sweet and Chili Shrimp
This is a popular dish in Japan that I love to prepare because it has so much going for it: complex sweet and tangy flavors, a heavenly ginger and garlic aroma, and wonderful textures. I’ve included puffed rice paper “chips” to add a nice crunch and a bit of flair. With its fiery colors, this dish makes a beautiful conversation-stopping presentation. I divided my recipe into seven small parts, each of which you prepare separately, then combine everything at the end. The trick here is to make sure you finish your prep before you cook—the actual cook time for the shrimp is only 5 minutes, so you’ll have to move fast! To make the recipe easy to follow, I have paired the ingredients for each step with the instructions.
Gyoza
The funny thing about gyoza is that I never cooked them—until I moved to America. Back home I always went out for these extremely popular, garlic-infused pan-fried dumplings, which have a special place in the hearts of Japanese. When I arrived in America, gyoza was one of the comfort foods I missed the most, so I started cooking them at home. That’s when I realized how easy it is to prepare perfect gyoza: they simply need a fragrant, juicy, flavor-packed filling; crispy skin on the bottom and silky skin on top; and a spicy dipping sauce. Now my kids and I love to make homemade gyoza together. This recipe is the classic pork-filled version that I grew up with. Keep in mind that you can conveniently freeze uncooked gyoza for up to a month. To prepare, follow the fry-steam technique below with the frozen dumplings—no need to defrost. Just extend the cooking time by 3 minutes. Note: You can also prepare this dish without pork belly. Just substitute more ground pork (1 pound total). But I love using pork belly here because it adds so much flavor and richness to the gyoza.
Tsukemen Ramen
Tsukumen means, literally, “dipping ramen,” and it’s a dish that’s taken Japan by storm. When I was growing up, we didn’t eat ramen this way, but now you can find this dish offered in shops across the country. It’s not hard to understand why—eating ramen in this deconstructed way gives you a chance to enjoy the noodle and each of the garnishes on its own, dipped in the flavorful broth. This dish is also a delicious play between cold ramen and hot broth. Think of it as noodle nouvelle cuisine! Naruto has a signature spiral swirl, and interestingly enough, it’s an ingredient used almost exclusively for ramen (and on rare occasions, udon).
Meme’s Pear Chow-Chow
A Southern tradition, chow-chow is a spicy, pickled fruit-and-vegetable relish that utilizes the produce at the end of the harvest. The fruit and vegetables can vary from recipe to recipe, and can include green tomatoes, sweet peppers, onions, cabbage, carrots, and cucumber. Since Meme and Dede had a pear tree in their yard, they made chow-chow with pears. When I called Aunt Louise to ask for this recipe, she started reciting, “A peck of pears, peeled, cored, and sliced.” I laughed. Members of my family teasingly offer loving sentiments accompanied by the phrase, “A bushel and a peck, and a hug around the neck.” But that is pretty much the extent of my definitive knowledge about a peck. However, a peck is an actual measurement: one-fourth of a bushel, which is about fifty pounds, depending on what is being measured. Bushel and peck baskets made of curved wooden slats with thin wire handles are still seen at farmer’s markets and farm stands all across the South.
Old-fashioned Buttermilk Ranch Dressing
I’m not fond of a garlic press—cleaning out all the holes is a chore. I prefer chopping garlic, but finely chopping or mashing large quantities to a paste (see page 72) can be tiresome. Recently I picked up my Microplane, a rasp-type grater, and grated the garlic directly over my saucepan. A couple of swipes back and forth and the garlic had disappeared into the pan below.
Country Rémoulade
Rémoulade is a cold French sauce made with mayonnaise, mustard, pickles, capers, and various herbs, and is very similar to American-style tartar sauce. It’s important the onions and celery are very finely chopped. It’s a dip, not a salad. To cut the celery, first cut the stalk into even, manageable lengths. Then cut into very thin matchsticks, line them up like little soldiers and slice across in thin cuts to make small perfect dice.
Vidalia Honey Mustard Dressing
The secret to a creamy, emulsified dressing or vinaigrette is mustard. You’ve probably noticed that when you combine oil and vinegar in a bowl they form separate layers. If you whisk the mixture it will combine only for a brief period, then separate out again. Mustard helps thicken liquid sauces by absorbing some of the liquid and allows the suspension of one liquid in another. Try this savory-sweet combination over crisp salad greens or buttercup lettuce or as a dipping sauce for the Oven-fried Chicken Breasts with Pecan Crust (page 102). If Vidalias are unavailable, use another sweet onion, such as Walla Walla or Texas Sweet.
Vidalia Onion Soup With Bacon Flan
This soup is decidedly uptown and was inspired by one I had at the Ritz-Carlton dining room in Atlanta. It’s a perfect marriage of Southern ingredients and French techniques that clearly states, bon appétit, y’all! I like to serve it in mason jars or French glass yogurt cups so you can see the layering.
Classic French Onion Soup
Mama loves this soup. What’s not to love? It’s a hearty bowl of sweet, brown, caramelized onions in a rich beef broth, enriched with a dose of sherry and topped with deliciously nutty, golden brown, melted Gruyère cheese. Why does Gruyère taste so good? Aged, low-moisture cheeses such as Gruyère and Parmigiano-Reggiano have a stronger protein structure than younger, softer cheeses like fontina or fresh mozzarella, and require higher temperatures to melt. The higher heat, combined with less moisture, causes the protein to actually break down, bringing out their nutty flavor.
Summer Squash and Turkey Sausage Gratin
Southerners love a casserole. They are church supper staples, great to take to the new neighbor, and equally welcome to a new mom. Cheddar, sometimes called “rat cheese” in the South, ranges in flavor from mild, nutty, and creamy to extra-sharp, rich, and robust. Gruyère is a low-moisture cow’s milk cheese from eastern France and western Switzerland. It has a sweet, rich, almost nutty flavor and is excellent for a cheese sauce. Cheddar cheese is more Southern, though, if you wanted to stay truer to those roots. Turkey sausage is much lower in fat than sausage made from pork and other kinds of meat. Use country-style or coarse-ground sausage, and if purchased in links, remove it from the casing before cooking.
Baker’s Potatoes
Years ago in France, many homes did not have an oven, so if anything was to be baked, it was taken to the local baker (boulanger) to cook in his oven. This recipe, known in France as pommes boulangère, is a healthy departure from classic potato recipes that use lots of butter and cream. It really shines with freshly harvested potatoes, when they are at their finest. Serve it with Herb Roast Chicken (page 110) for a warming winter meal.
Savannah-Style Marinated Shrimp
In Atlanta, people ask you, “What’s your business?” In Augusta, they ask, “What’s your mother’s maiden name?” In Macon, they ask, “Where do you go to church?” In Savannah, they ask, “What would you like to drink?” That generous hospitality and sense of fun is typical of Savannah style; this dish is very likely to be served at one of Savannah’s legendary cocktail parties. As Georgia’s most valuable seafood crop, between 4 1/2 million and 9 1/2 million pounds of heads-on shrimp are harvested annually by a fleet of more than five hundred boats, the majority owner-operated and based within an hour or so of Savannah. It is common to find fishermen whose families have fished the same grounds for generations. Preserving and pickling seafood in citrus juice, vinegar, and brine is a technique used all over the world—in Spanish ceviche, for example. This combination of ingredients acts as a cooking agent, denaturing the proteins and rendering the raw seafood cooked. Many recipes state shrimp pickled by this technique may be stored for up to ten days, tightly covered in the refrigerator, but I disagree. Even if you weren’t concerned about food-borne illness, why bother? The acid would continue working and you’d wind up with bouncy balls of shrimp-flavored pink rubber. Up to two days in the refrigerator is fine. Serve on a bed of lettuce for a nice cold salad, or as a delightful nibble on a buffet.
Stuffed Flounder for Mama
Mama always loved to order this dish when we went to the beach. But many cooks now avoid serving it since the harvesting methods are not considered ecologically friendly. In many instances, the fish are caught using a trawling method. Imagine a bulldozer scraping along the ocean floor, indiscriminately catching intended as well as unintended species. Even though flounder also suffers from overfishing (it seems too many people appreciate one of the best fish in the Gulf): I am calling for flounder here for old times’ sake. But you can substitute flat fish like English or Dover sole and turbot, which get better ecological marks and whose flavors are similar to that of flounder.
Boeuf Bourguignonne
In classic French cooking, each dish has a name that indicates its precise ingredients and correct garnish. Bourguignonne is a term for dishes cooked in red wine, as some of the most famous French wines are from Bourgogne (Burgundy). These dishes are garnished with pearl onions, button mushrooms, and lardons of bacon. Never choose stew meat already in precut cubes. It’s more expensive and you have no idea if you’re getting, for example, leftover bits from the shoulder or rib-eye, two wildly different cuts that won’t cook at the same rate.
Brisket with Vidalia Onion Puree
Brisket is tough, and it is best suited for braising and slow cooking, which tenderizes the meat from within by dissolving the cut’s plentiful collagen and fat. Brisket is very often smoked in the South; in fact, barbecue means brisket in Texas, as barbecue means pork in the Southeast. Buy fresh brisket (not corned or brined), ideally the flat or first cut, which is leaner than point or second cut, and has a layer of fat running across it to help keep it moist. Hungarian paprika, ground from dried sweet peppers, gives the sauce another layer of flavor and a slightly reddish color. There are six types of Hungarian paprika, ranging from delicate to hot; any of them would be fine in this dish. My mother and Aunt Lee took a whirlwind trip to Eastern Europe several years ago. True to their natures, they did have enough time, however, to shop. Knowing how much I like to purchase local ingredients when I travel, Mama brought me paprika as a gift. It’s basically a lifetime supply. I store it in the freezer in an airtight container to help it last as long as possible and not become stale and flavorless.
