Ribollita “Da Delfina”
Ribollita is a classic Tuscan soup traditionally made with leftover minestrone thickened with chunks of stale bread. This version is something quite different, and it’s based entirely on the one they serve at Ristorante Da Delfina, a wonderful ristorante in a tiny village nestled in the hills just outside Florence. It was described to me as a fried soup, so the first time I ate it, I didn’t know what to expect. I was pleasantly surprised to discover that they’d turned the soup into something wholly unsouplike that I could eat with a knife and fork. The way we make it, after cooking off the liquid, we thicken the soup with bread, we chill it, and then shape it into patties that we pan-fry in olive oil. We serve it as an antipasto but it could be a side dish or, served with a green salad, a light meal. I often recommend it to vegetarians, and to make it vegan, just omit the Parmigiano rind. One of our inveterate recipe testers, Tracey Harada, tested this recipe about eight times to get the flavors perfect. Cavolo nero, a variety of kale, is one of the defining ingredients of any ribollita. You can find it at specialty food stores and health-food stores, but if you can’t find it, use another variety of kale.
Pancetta-Wrapped Radicchio al Forno with Aged Balsamico Condimento
The perfect example of how good a few simple ingredients, combined and prepared correctly, can be. When we can get it, our preferred variety for this is radicchio di Treviso, which has an oblong head. The roasted heads look so pretty lined up on a platter that they make the perfect addition to an outdoor meal served family or buffet style. As always, the quality of the balsamico you use is essential to the quality of the finished dish.
Meatballs al Forno
When I was building the Pizzeria menu, I wanted it to be a true Italian pizzeria experience with a nod to the Italian-American pizzerias that I grew up eating in. With those American pizzerias in mind, I felt that we had to offer meatballs. What I really wanted to serve was a meatball sandwich, but as strongly as I argued for it, Matt argued against it. He softened over time and finally, two years after the Pizzeria opened, I got my meatballs—not as a sandwich, but as an antipasto: a bowl of meatballs served with buttered semolina toast on the side. Today they are the most popular antipasto in the restaurant.
Fave or Asparagus al Forno with Speck and Parmigiano-Reggiano
The first place I was served fava bean pods, as opposed to shelled beans, was at Zuni Café in San Francisco. When they came to the table, I thought it was such an interesting idea, and when I tasted them I found them delicious. When you serve them this way, you want to use only tender, young, small pods, as larger pods will be tough and fibrous. If you can’t get young fave, use jumbo asparagus instead. In either case, this is a spring dish.
Rucola, Funghi, and Piave Cheese
This mountain of arugula is layered with thinly sliced mushrooms and long thin shards of Piave, a hard cheese similar to but sweeter than Parmigiano—and much less expensive. It’s important to use fresh, firm mushrooms; look for those with closed caps and no blemishes. If you can’t find Piave, Parmigiano is a fine substitute.
Grilled Beef Tagliata, Rucola, and Parmigiano-Reggiano with Aged Balsamico Condimento
Tagliata, which means “cut” and refers to a dish of sliced meat, is probably the most popular secondo at the Osteria. The tagliata I’ve been served in Italy has been dressed in different ways, ranging from chopped arugula to sautéed fresh porcini, to black pepper and Parmigiano, or just a drizzle of aged balsamico condimento. I am a salad nut, so the version we serve at the Osteria consists of thinly sliced steak and a pile of dressed arugula layered with thin slices of Parmigiano. When I make it for a crowd at home, I serve the meat on the cutting board and offer the arugula and Parmigiano in a big, wide salad bowl. This recipe calls for two types of balsamic vinegar: an inexpensive cooking-quality balsamic to marinate the steaks, and an aged condimento-grade balsamico, to drizzle on the steak. If you don’t have an aged balsamico the other is no substitute
Basil Pesto
When we started working on this book, I had a battle with Matt and Carolynn about whether to ask for the various pestos that we use to be made using a mortar and pestle or in a food processor. I always make pesto using a mortar and pestle, and I feel strongly that pesto tastes better this way. That said, as Matt was so kind to remind me, when I make pesto, it’s usually because I’m in Italy in the summer, where it gets light at five, dark at ten, and I have all the time in the world. At the restaurant we make pesto in such volume that we have to do it by machine; it would not be practical for us to make it by hand. “This is a restaurant cookbook,” Matt said, “and how we do it at the restaurant is in a food processor.” I’m sorry to say that Carolynn took Matt’s side. “Save that for the Lazy Days in Panicale cookbook,” she said. Although here they gave you instructions for how to make it in a blender, I’m hoping you’ll prove me right by taking the extra time and using elbow grease to make yours with a mortar and pestle from time to time.
Pancetta-Wrapped Figs with Aged Balsamico Condimento
Bacon-wrapped dates—a more elegant version of rumaki, the 1950s appetizer of chicken liver wrapped in bacon with a water chestnut in the middle—have taken Los Angeles by storm ever since Suzanne Goin started serving them at her restaurant, AOC. I didn’t want to copy hers, but I like them so much that I wanted to make a version for Mozza using figs, which are so abundant in my town in Italy that you almost forget they are a delicacy. Although I’ve never been served anything like these in Italy, I certainly didn’t invent the idea of contrasting the sweetness of figs with something piggy and salty: figs and prosciutto is a classic. At the Osteria, we serve these as an antipasto on a tangle of wilted dandelion greens, but they also make a great bite-size snack for cocktail hour, which is how we have presented them here.
Bavette Cacio e Pepe
This is a very simple Roman pasta dish made with nothing but black pepper and pecorino romano cheese. We believe in leaving traditional dishes alone, but we did make a couple of changes to this dish. We use bavette, in place of spaghetti, which is the shape traditionally used. And we cut the pecorino with Parmigiano because pecorino is so pungent that it can be overwhelming on its own. The pepper for this dish must be coarsely ground. I recommend you use Tellicherry peppercorns, a fragrant, flavorful variety from India. Coarsely grinding or cracking the pepper for this dish is the perfect excuse for breaking out the mortar and pestle.
Arancine Alla Bolognese
Up until we opened Mozza I had eaten only meatless versions of arancine. Those I’d had were mostly in cichetti, the shoebox-size stand-up wine and stuzzichini bars in Venice, where cone-shaped versions are a staple, and in Sicily, where they’re much larger and round, like a tangerine. Both were made of plain risotto with cheese in the middle. In Rome, arancine are often called “suppli al telefono,” meaning telephone cords, because the ideal is that the cheese inside melts and stretches like an old-fashioned telephone cord. Matt and I worked hard to achieve that ideal and I think we did. I suggest you make these when you have leftover bolognese because, as good as they are, it would be a herculean effort to make bolognese for just the 1/2 cup you need to make these. Besides, that is what an Italian grandmother would do.
Ricotta Gnudi with Chanterelles
Gnudi are little dumplings, like gnocchi, but made with ricotta instead of potatoes. Most places don’t do gnudi justice. They are often mushy and heavy, instead of light and fluffy, like these. This recipe makes 36 to 40 gnudi, or enough for 6 to 8 people as a first course. The dough does not keep well, so you need to plan on serving a crowd, or serve hearty, main-dish-size portions.
Gnocchi with Duck Ragù
We serve this rich, meaty ragù alternately with gnocchi (page 172) and pici (page 168). When the ragù is tossed with gnocchi, the flavor becomes like a rich and delicious meat-and-potatoes dish. It manages to be exotic and familiar at the same time. We use only duck legs and not the whole duck because the meat from the legs is more moist and lends itself better to long cooking. You will probably have to special-order the legs from your poultry purveyor, so when you do, make sure to ask for the livers, too. Alternatively, you can make this ragù with one whole duck, cut into pieces. Not only will this be easier to find but also you’re guaranteed to get the liver with it.
