Pork Chops with Prunes and Cream

A Norman recipe, easily identified with the region because of the combination of dairy and meat. It may sound overly rich, but pork is so lean these days that the added fat is welcome, and the taste is incredible. A wonderful dish for midwinter; serve it with simple boiled potatoes or rice and a steamed vegetable. Other cuts of meat you can use here: veal chops or bone-in chicken breasts.

Sandwich Cubano

If you have leftover roast pork, especially from Lechon Asado, this is how to use it. Combined with ham, Swiss cheese, and pickles, it makes the classic grilled sandwich of the Latin Caribbean. Though purists insist on Cuban bread (essentially a fairly soft French loaf), the best I ever had was in San Juan, made on a sweet roll. A definite bastardization but one that demonstrated that almost any kind of bread will do and that this sandwich is great in many guises. Ordinary yellow mustard is the norm for this, but consider Dijon or brown mustard instead. Similarly, bad dill pickles are standard, but if you can lay your hands on some half-sour pickles (or use Lightly Pickled Cucumbers, page 455), the results will be better— if less “authentic.”

Stir-Fried Pork in Garlic Sauce

The most challenging part of this recipe is cutting the pork into thin shreds; freeze the meat for 30 or even 60 minutes first, which will make it easier, but plan on spending the bulk of the time allotted for this recipe on this single task. The cooking itself takes only 5 minutes (in fact, if you want to serve rice with this, which you should, cook it beforehand and keep it warm). Don’t mince the garlic; you want its flavor to be strong in this dish. Serve this with white rice. Other cuts of meat you can use here: beef, preferably sirloin; lamb, preferably from the shoulder or leg; boneless chicken.

Stir-Fried Pork with Asparagus

If you like a really strong garlic flavor, reserve half of the garlic and stir it in at the end of the cooking, along with the optional sesame oil. Serve with rice. Other cuts of meat you can use here: beef, preferably sirloin; lamb, preferably from the shoulder or leg; boneless chicken; shrimp (which will cook more quickly).

Stir-Fried Pork in Coconut Milk

Akin to the preceding recipe, this one and its Japanese variation use additional liquid. This, plus the braising time, makes for a saucier dish that can be stretched, with white rice, to serve more people if you like. But in any case, it’s delicious. See page 500 for information on Asian fish sauces like nam pla. Other cuts of meat you can use here: boneless chicken.

Barbecued Pork

This traditional Cantonese dish can be eaten with rice or noodles, tossed into a fried rice or noodle dish, or used to stuff into a sweet bun. It’s beloved by all meat eaters and a great dish for parties.

Roast Pork with Prunes and Apricots

Ginger may not be a spice you associate with Sweden, but it’s there (as is cardamom), and it makes its mark in this winter dish.When I was first served this, it was done in traditional, fancy style: a large roast of pork with a hole poked right through its center, stuffed with the dried fruit. It’s a glorious presentation and my first choice. But I have since been served it, and made it, in the simpler, stewed fashion of the variation, which is equally legit. I like this with Potato and Horseradish Gratin (page 482), but it’s good with most any potato dish.

Lechon Asado

An international dish if ever there was one (the Philippine version is quite similar and you can find others around the globe) and one that can be spiced with as little as a rub of garlic, salt, and pepper or a little more elaborately, as is this one. Use a bone-in loin cut, from the rib (shoulder) end, or simply a boneless shoulder (picnic or butt) roast. This is the pork that is best used for Sandwich Cubano (page 363).

Beef Stew with Bean Paste

This is a very fast and almost equally flavorful relative of Kalbi Jim (page 388). If you cannot find go chu jang, the chili-bean paste sold in Korean markets, substitute a couple of tablespoons of good miso and add more hot red pepper flakes to taste. All you need to complete this meal is white rice. Other cuts of meat you can use here: boneless pork, preferably from the shoulder or leg (fresh ham); boneless chicken thighs.

12345 Spareribs

The name of this dish may be cute, but it also reflects its simplicity; it is an honest sweet-and-sour pork dish. While the ribs need to braise for at least 40 minutes, the preparation time is just 10 minutes or so. Ask your butcher to cut across the ribs to form 1-inch strips (a supermarket butcher can do this), then have him separate the ribs, or you can do that part yourself. This dish reheats perfectly. Serve the ribs with white rice.

Black Bean and Garlic Spareribs

Chinese fermented black beans (see page 207) keep forever and add a distinctive flavor to every dish they’re used in; best yet, most people like them immediately. This classic highlights them perfectly. Ask the butcher to cut the ribs into small pieces for you (a supermarket butcher can do this). Serve as a starter or an entree with steamed white rice.

Sesame Spareribs

No rib-cooking technique makes more sense than the one used in Korea, which begins with a tenderizing poaching and continues with a kind of dry-roasting in the fat and juices exuded by the ribs themselves, along with a dose of strong seasonings. It results in ribs that are dark, glossy, and so tender that just a tug of the teeth will pull them off the bone. If possible, ask your butcher to cut the ribs into 2-inch lengths, which will make them easier to cook (and to eat). I love these preceded by Pajon (page 80) and, of course, with some Kimchi (page 444) on the side, but you may serve them with white rice and a simple steamed vegetable. Other cuts of meat you can use here: short ribs (which will take considerably longer to cook in step 2).

Braised Spareribs with Cabbage, Root Vegetables, and Caraway

A big rustic one-pot meal. Easily expanded with the addition of more vegetables. Serve with a salad for contrast, and some bread or rice if you like. Other cuts of meat you can use here: short ribs, oxtail, or veal shanks.

Braised Spareribs with Cabbage, Roman Style

A Roman classic and, like so many of those dishes, smacking of garlic, chile, and bay. You can serve this with just bread, of course, or precede it with a pasta dish or soup.

Braised Ribs with Spicy Adobo

Oven-baked ribs, which were once the standard, are now uncommon, because everyone thinks grilled ribs are the thing. But these are delicious, great with rice or polenta, and far easier than grilling. But if you like, you can use this sauce for grilling, too: parboil the ribs in water until nearly tender, then grill them, basting with the sauce, until they are nicely browned. Other cuts of meat you can use here: chunks of pork shoulder, short ribs (which will need much more time), bone-in chicken thighs (which will cook much more quickly).

Pork with Red Wine and Coriander

This dish nicely combines the Mediterranean trio of garlic, red wine, and coriander. I first had it in southern Spain, where the culinary influence of North Africa remains strong. Like most braises, it takes time but, once the initial browning is done, very little work. There are a couple of ways to deal with the coriander: You can leave the seeds whole and wrap them in cheesecloth or just leave them in the sauce and eat them. Or you can crack them first, either with a mortar and pestle or by putting them in a plastic bag and crushing them with a rolling pin or the bottom of a pot. I like crusty bread here, plus a salad or steamed vegetable; the dish is complex and attention-grabbing enough not to bother with much more. Other cuts of meat you can use here: lamb shoulder is a great substitute; chunks of beef chuck or brisket are also good.

Pork Chops with Orange

In Spain, where the world’s best oranges grow, they are used to season just about everything. One of my favorite encounters with the citrus fruit was an oven-braised dish of pork and oranges that I had in Seville. It could not have been simpler and can be reproduced easily. Use either country-style ribs, ribs cut from the rib (shoulder) end, or even spareribs if you like; avoid center-cut or loin pork chops here because they will become dry and tasteless.

Shredded Pork

Not exactly a dish, but the ideal filling for tacos and a preparation that plays many other roles, too. Use it to augment bean and rice dishes or to stuff cabbage, grape leaves, empanadas, or almost anything else. Do not use any cut of pork other than shoulder here; all others are more likely to become tough than tender.

Tamale Pie

Despite its name, this is not a tamale (it’s closer to polenta). It has neither the taste nor the texture of a real tamale, and, strictly speaking, it isn’t even Mexican, unless you remember that Texas is as Mexican as it is American. That being said, tamales are complicated, and this, at the very least, combines the earthy flavors of corn and pork. It’s a true Tex-Mex dish, dating back at least a century. Serve with rice and beans.

Braised Pork with Coconut Milk

A surprising cousin of the Italian Roast Pork with Milk (page 400), similar in its preparation and results, completely different (but equally superb) in the eating. Because the pork is cut up and braised, it cooks more quickly. Use meat from the shoulder end. See page 500 for information on Asian fish sauces like nam pla. Serve this with Sticky Rice (page 508).
