Salmon
Salmon Teriyaki
Spring through fall, you may be able to find wild Alaska king or sockeye salmon (if you live in the Northwest or even on the West Coast, this won’t be a problem), and that is ideal for this dish. Farm-raised salmon, available year-round everywhere, is certainly an acceptable substitute, but it is fattier and has less flavor, so it’ll make a bit more of a mess when you brown it, and it will not stand up quite as well to the sauce. Serve this with short-grain rice (page 507).
Crisp-Skin Salmon Fillets with Chimichurri Sauce
Strictly speaking, chimichurri is Argentinean, but there is far more salmon in Chile than elsewhere in Latin America, and chimichurri has become pan-continental. Keep the skin on the salmon (make sure it’s scaled), and making it perfectly crisp is nearly effortless as long as you use a nonstick skillet. I love this with Peasant-Style Potatoes (page 477) or Potatoes with Bay Leaves (page 481).
Buckwheat Crêpes
Everyone knows about sweet crêpes (page 645), but visitors to France quickly become addicted to these—the classic snack food of Brittany—especially the ham-and-cheese variation. Traditionally, the batter sits for an hour before starting to cook. As long as you plan ahead a bit, that shouldn’t be a problem. But in a pinch you can skip the resting period—it doesn’t make too much difference—and overall these are easy to make and great as savory starters or a light lunch or supper.
Gefilte Fish
Traditionally made with freshwater fish—carp, whitefish, and pike—this is just as good with fish from the sea. You can even mix in some darker fish, like bluefish and salmon, although it is not traditional. Equally untraditional is the food processor, which makes this formerly formidable job a snap. Good, strong horseradish is the essential accompaniment. Make this a day before you want to serve it.
Gravlax
One of the simplest and most impressive cured dishes and certainly the king of cured fish. Speaking of king, if you can find wild Pacific salmon (usually spring through fall), especially king or sockeye, use it; if not, farm-raised salmon is quite good when treated this way. In fact, farm-raised salmon is a pretty good option—because it is harvested and shipped to stores daily it’s usually perfectly fresh, a requisite for all salmon you’d consider using for gravlax. Generally, gravlax is ready within 24 hours, but it’s better after a little longer than that, and you can hold it for another couple of days before serving if you like; it will become increasingly dry and strong flavored, not a bad thing. In any case, treat finished gravlax as a fresh food and use it within a few days.

We sometimes serve this on our buffet, if the staff doesn’t eat it all first!
Salmon Croquettes
I grew up on these tasty little fried cakes, which Granny Foster used to serve for breakfast with fried eggs and biscuits, or sometimes for supper along with mashed potatoes and coleslaw. Like most Southerners, Granny used canned salmon in her croquettes. I opt instead for freshly poached or grilled salmon, a move that allows the delicate, grassy flavor of the fish to come through. Crispy and satisfying (the name croquette comes from the French for “to crunch”), these easy treats are an excellent way to revitalize leftovers from last night’s salmon dinner, ensuring that the switch from canned to fresh fish does not necessarily sacrifice convenience.
Gravlax
Gravlax is surprisingly easy to make at home, and you can vary the herbs or add spices to suit your taste. Once you become comfortable with the process, you’ll want to have this around for easy lunches and snacks.
Salmon with Choucroute and Gewürztraminer Sauce
This unexpected salmon preparation borrows flavors from Alsace. The usual partner for choucroute is a medley of pork meat sausages, but the oceany flavor of the best wild salmon works surprisingly well. The tart sauerkraut and spicy Gewürztraminer balance the richness of the fish. Juniper berries lend a distinct perfume. Needless to say, the perfect wine for this dish is the one that you used to make the sauce.
Smoked Salmon Spread with Lemon and Herbs
Here’s a great way to use a small amount of smoked salmon to good advantage. Fresh herbs and lemon brighten the taste, and the cream cheese acts as a medium to carry the rich flavors. I love to serve this spread on toasted pumpernickel bread, atop tiny baked fingerling or new potatoes as an hors d’oueuvre, or as an open-faced sandwich with thin cucumber slices and watercress.
Smoked Salmon Beignets with Brandied Tomato Sauce
Here’s one I stole from my friend, mentor, and sometimes tormentor from Louis XVI Restaurant, Daniel Bonnot. He taught me how to make these about twenty-five years ago. Beignet is essentially just a fancy French word for a fritter. In New Orleans, people have been known to subsist on beignets and coffee alone. This is not advisable. Feel free to substitute chopped crayfish tails for the smoked salmon—both versions are dangerously addictive.
Asparagus Flan with Smoked Salmon–Potato Salad
Flan is essentially custard—the creamy melding of milk and eggs in what has proved to be a delectable revelation: you can make a savory flan out of virtually any vegetable. We do several savory flans at my restaurants, including mushroom and carrot, but its delicate flavor and pale green color makes asparagus flan my hands-down favorite. A potato salad made with smoked salmon (which is great on its own for lunch or brunch) is a stylish partner, but you can easily serve this flan with toasted slices of French bread and Grana Padano (or your favorite cheese) and a simple green salad with tomatoes.
Salmon Steaks with Hoisin Glaze
Sautéed Bok Choy and Broccoli (page 249) and a big bowl of white rice are all you need to accompany these tasty—and remarkably easy—fish steaks.
Roasted Salmon with Lentils
The cooking time for lentils can vary widely depending on their age, as older lentils require more time. For the best results, buy a fresh, new bag. A mustard vinaigrette boosts the flavor of this Mediterranean-inspired dish.
Chili-rubbed Salmon with Zucchini and Sautéed Corn
Use any salsa you like in this dish: mild, medium, or hot. For the best flavor, buy the fresh variety sold in the refrigerator section of grocery stores. To add more heat, cook 1/4 teaspoon red pepper flakes with the corn and garlic in step 3.
Farfalle with Salmon, Mint, and Peas
This pasta features a few flavors of the season—mint and peas—along with lemon and ever-popular salmon. It’s just the thing to hit the spot on a crisp spring evening.
Salmon Niçoise Salad
Niçoise salads are usually made with tuna, but we substituted fresh salmon in this version. You can, of course, make the salad with a couple of cans of tuna; look for Italian oil-packed tuna, which has the best flavor.
Roasted Salmon with Lemon Relish
The combination of lemon zest, raisins, and pine nuts was inspired by condiments popular in Southern Italian cooking. Try the lemon relish on chicken or pork, or even as a topping for steamed broccoli.
