Steamed Salmon with Garlic and Ginger
This steamed fish recipe, given to our family by our Chinese Vietnamese friend Uncle Su, is special. During cooking, the bold seasonings mix with the sweet fish juices to create a wonderful sauce for flavoring the flesh and a bowl of hot rice. Fresh salmon steaks or fillets are a fine substitute for the heads, which my parents prefer. You can also try the sauce atop other moderately flavored fish that have some richness to their flesh, such as sablefish. Avoid lean, dense fish, such as halibut or swordfish, which dry out and toughen when steamed.
Salmon Cakes with Dill and Garlic
Smooth, well-seasoned meat and seafood pastes have many uses in the Vietnamese kitchen. Here, a pinkish orange salmon paste is shaped into small cakes before undergoing a two-step cooking process: an initial steaming to cook the cakes, followed by broiling, grilling, or frying to crisp the outside. The cakes are sliced and served as an appetizer or dunked into Simple Dipping Sauce (page 309) and eaten with rice for dinner. If you have enjoyed Thai fried fish cakes (tod mun), these will remind you of them. When my mother came to the States, she substituted salmon for the rich-tasting tuna she had used in Vietnam. I have since prepared the cakes with the ahi tuna available here, but the results were too firm and dry. The fattier salmon is superior. If you can’t find skinless salmon fillet, buy 2 1/3 pounds of skin-on fillet and remove the skin before you cut the fish into chunks. The cakes can be frozen after they are steamed and then thawed and crisped for a good last-minute meal or snack. The recipe is also easily halved, but I advise you to make the whole batch and tuck away the extras for when you need a quick dish.
Salmon and Galangal Simmered in Caramel Sauce
Most people are introduced to galangal, a relative of ginger, by way of Thai curries and seafood soups. The rhizome is seldom used in Vietnamese cooking, but when it is, it is paired with other bold-flavored ingredients. Here, its pungent heat brightens a northern fish kho, with the bittersweet caramel sauce tempering its fire. Use the smaller amount of galangal if you want a dish with less intensity. Although salmon isn’t native to Vietnam, it takes on the robust flavors of the kho remarkably well. Fresh side pork (pork belly), which you can find at Asian markets, is the stealth ingredient here, enrobing everything with its richness to create a unique surf-and-turf combination. The result is spicy, savory, and a touch sweet.
Salmon with Tomato, Dill, and Garlic Soup
When riêu is brought to the table, expect a full-bodied soup laced with rich-tasting seafood and tangy tomato. Viet cooks prepare a fish riêu like this one as an everyday canh, or the more extravagant crab and shrimp riêu noodle soup (page 215) for a special occasion. Carp is the fish typically used in this soup, but since it is not commonly available at regular markets, my family switched to salmon, which has the fattiness to pair perfectly with the tomato, dill, and garlic of a classic riêu. We used salmon steaks for years because the bones and skin enriched the broth. But steaks can be difficult to handle during cooking and later on in the bowl, so I now use salmon fillet. In the classic northern Vietnamese tradition, the fish is seared first to firm its flesh. The searing not only helps the fish hold its shape, but also provides a nice textural contrast in the finished soup.
Cedar-Planked Salmon
This dish is a celebration of the Pacific Northwest’s Native American heritage. Native Americans were the first to cook salmon in this way, slowly roasting the dense flesh on cedar planks arranged around an open fire. (You can get the planks at a hardware store.) A light smoky essence permeates the fish as it cooks, boosting the flavor quotient of rich salmon. In addition to the salmon that run though its waters, the Pacific Northwest is known for its lush and balanced Pinot Noir wine. A reduction of the wine is the basis of a darkly fruity, savory sauce that finishes the dish.
Puffy Duck Egg Frittata with Smoked Salmon
I’ll admit to a tendency toward obsession, especially when it comes to food, as my experience with duck eggs proves. I bought my first dozen a few years ago at the Saturday farmers’ market at 14th and U Streets in Washington, D.C., and from the first time I fried one, I was pretty much hooked, buying duck eggs and only duck eggs and going through a dozen every week or two, at least while the ducks were laying. I’ve since veered back toward moderation, especially after remembering that these richer, more flavorful eggs are also higher in saturated fat and much higher in cholesterol. Still, I like to splurge every now and then, and this puffy frittata is one of my favorite ways. It also illustrates the magical properties of egg whites as a leavener; the simple process of separating whites from yolks, beating the whites to the soft-peak stage, and folding the two together results in a light-as-air texture, something between a frittata and a soufflé. Nonetheless, you can use these same ingredients in a more straightforward frittata; instead of separating the eggs, just follow the method for the Mushroom and Green Garlic Frittata (page 32). And if you can’t find duck eggs, chicken eggs work fine here, too.
Grilled Sesame Salmon with Cyprus Hardwood Smoked Flake Salt
The plump pink flesh of a salmon needs so little to bring it to life that many people call it quits before they’ve tested its limits. The smoky-sweet flakes of Cyprus hardwood smoked lend an explosive crunch that brings a whole new vocabulary to the language of fish. The salt’s cleanliness penetrates through the richer flavors, adding depth to breadth; its pastrylike crackle gives the palate something firm to hold onto amid the fish’s sometime incessant unctuousness; and its lilt of golden smoke brings an oakiness that incandesces on your palate long after the fish has left the fire.
Salt Block Gravlax
Impress your Jewish grandma with gravlax, or just impress yourself. Actually, my Nana preferred the cold-smoked cousin, lox, but gravlax is an incredibly easy, positively delicious way to cure salmon. The name comes from any number of Nordic fish dishes inspired by the openly morbid technique of burying in the ground (grave) your salmon (lax) with some salt cure. I like this dish because it yields a particularly moist, delicate, and lightly salted gravlax, since the salinity of the salt block does not migrate as readily into the fish flesh as a packed cure of loose salt. Also, because you don’t need plates and weights, and because the salt blocks can be reused over and over again, the method boasts a certain elegance and economy of tools. See page 267 for more about salt blocks.

Smoked Salmon–Scallion Cream Cheese
A luxurious spread for bagels that is so much better than ordinary cream cheese, this will keep for about a week in the refrigerator. For best results, remove the cream cheese from the refrigerator about an hour or so before you plan to use it, so it will soften.
Smoked Salmon
Smoking a whole side of salmon may seem like a lot of effort, but it is worth it, especially if you are having more than eight people for brunch. Not only is the salmon better tasting than many commercial products available, it is also about 80 percent less expensive. Smoked salmon is cold smoked. In other words, it is not smoked in a hot smoker; the smoke does not cook the fish. The fish is cooked through the brining process. Cold smoke imparts a subtle smoky flavor. With practice, you can develop your own levels of curing and smoke. This is an ancient way of preserving food, and there are myriad subtleties to achieve. Smoked salmon keeps in the refrigerator for up to two weeks. The process of curing and smoking salmon takes a couple of days. You need a refrigerator with enough room to let the salmon sit inside, unobstructed. The process involves curing, rinsing, crusting, smoking, and saturating in oil. Bubby’s uses a combination of maple syrup, sugar, and kosher salt to cure salmon. Besides these ingredients, you’ll also need a vented tin can, a piece of charcoal, apple wood chips, a barbecue grill large enough to hold a whole salmon fillet, and 4 quarts of canola oil.
Smoked Salmon and Goat Cheese Roses
A beautiful and elegant starter to have on the table when guests arrive, these are easy to prepare. Toothpicks are optional; you can also just seal the rolls with a firm hand. Make these up to six hours in advance, if you like, and store them, tightly covered, in the refrigerator. These are meant to be eaten in one bite from your hand.
Salmon, Steamed Spinach, and a Lemon Salad
There is no fish I can think of that doesn’t work with spinach. But where creamed spinach seems perfectly fine with a steak of halibut or haddock, the richer, oily fish such as salmon are more appropriately matched to the leaves in a simpler state. A mouthful of lemon salad, at once breathtakingly sharp, is more than at home on the same fork as a piece of salmon or a bunch of meltingly soft spinach. Bring all three together and you have a dish of extraordinary vitality.
Smoked Salmon and Salmon Roe Fettuccine
Salmon roe, a sushi bar standard here in America, is a very popular ingredient in Japan. I love how these orange-colored pearls explode with a burst of flavor when you bite into them. They add a wonderful zing to this classic fettuccine recipe. Try this dish in the spring when broccoli is at its peak.
Grilled Salmon and Chilled Somen with Yuzu Sauce
The daikon and cucumber in this recipe are perfect for summertime: cooling, crunchy, and fresh tasting. The mitsuba, an herb that has a wonderful, delicate flavor that’s a bit like chervil, adds another refreshing note and doesn’t overpower. Add tangy yuzu and rich salmon and you have a balanced, nutritious, and delicious dish you can knock out in 15 minutes, from start to finish. If you’d like, you can substitute canned salmon for the fillets and avoid firing up the oven altogether.
Salmon, Mushroom, Sorrel, and Aromatic Rice Bisque
Several species of salmon can be found on the Pacific Northwest coast, and morel mushrooms and lemony sorrel are plentiful in the inland woods. They make a nice combination with a good wild rice blend. Serve the soup with crusty bread.
Smoked Salmon Asparagus “Risotto”
Yes, we know that real risotto uses arborio rice, but we also know that it has to be stirred constantly for 40 minutes and that’s not a good way to impress your date. Arborio rice releases more starch as it cooks than other types of rice, making risotto very creamy. This version is still really creamy, but can be prepped ahead of time and finished in less than 15 minutes.
Salmon with Herbed Cheese and Broccoli
I know you are probably thinking, “Me make fish . . . how about No.” I promise you this dish is perfect date food, not only tasty but easy and impressive. Come on, three ingredients including the side dish. It doesn’t get any easier than that. All the seasoning comes from the cheese, so it’s foolproof and only takes about 5 minutes to get ready. Better yet, it cooks in foil so there are no pans to wash.
Salmon Cakes with Potato wedges
I know this chapter is “Just Like Mom Makes,” but this is actually one of my dad’s specialties. With his culinary repertoire being limited to meatloaf, pot roast, salmon cakes, and any breakfast food, we were guaranteed to have these whenever Mom was out of town. Good thing we liked them. These are very similar to crab cakes, but since salmon is about one sixth of the cost of crabmeat we have them a lot more often.
Salmon and Vegetables En Papillote
En papillote (PAH-peh-loht) is French for “in paper,” which is how this dish is made. This method of cooking steams the food and allows you to cook without fat, but we did add a little butter, thyme, and lemon for flavor. This is a really simple, foolproof way to cook fish and, best of all, it makes for easy cleanup.
