Cioppino
(San Francisco-Style Seafood Soup)
Cioppino is San Francisco's answer to bouillabaisse and, like that famous Provencal seafood soup, is made with a variety of the freshest fish possible. In San Francisco the mixture included Dungeness crab, which adds a unique flavor, but any regional crab will do. If crab is not available, substitute another shellfish. No clams? Try mussels. The point is to treat the following recipe as a guide and use whatever looks best in the market the day you make the soup.
Coconut Scallops
Can be prepared in 45 minutes or less.
Asian Scallop Stew with Coconut, Ginger and Lime
Serve this stew over rice or on its own as a soup. Either way, sprinkle lettuce with rice vinegar and oriental sesame oil for a light salad. Sliced blood oranges and holiday cookies will do nicely afterward.
Skewered Scallops with Orange-Sesame Dipping Sauce
Fresh mint, cilantro sprigs and strips of orange peel make a nice garnish for a platter of these Asian-accented skewers.
Maverick Grits
"On a recent visit to Charleston, South Carolina, I was greatly taken with the grits served at the restaurant Slightly North of Broad, on East Bay Street," says Charles C. Gordon of Ontario, Canada. "Is it possible to get the recipe?"
Scallops with Mushrooms in White-Wine Sauce

Lobster and Shrimp Cioppino
We recommend using a sturdy food mill (available at cookware stores) to help produce a thick stew base from simmered vegetables and fish. Alternatively, you can use a large heavy-duty mesh sieve to strain the seafood broth. Then push through enough fish and vegetables to make 13 cups of stew base. Serve cioppino with sourdough toasts.
Seared Scallops with Ginger Sauce
The simple, delicious and versatile ginger sauce would also be terrific with shrimp. Look for rice vinegar in the Asian foods section of the supermarket. Serve the scallops with crusty bread or rice.
Scallops with "Melted" Leeks and Tarragon-Caper Butter
The leeks are cooked until they're so tender — or "melted" — that they almost fall apart.
Warm Scallop Salad with Prosciutto Chips
George Kelso of Edinburgh, Scotland, writes: "Although I grew up in Scotland and spent my early years as a chef here, I didn't start specializing in Scottish food until much later in my career. After working in London and at various restaurants in England, I returned to Scotland in 1988 to become chef at Ardsheal House in Argyll, where I started cooking exclusively with Scottish ingredients. We grew our own fruits, vegetables, and herbs, and even raised our own hens and ducks. That experience inspired the kind of cooking I do today at Haldanes, where I'm chef and owner. I keep the food preparation simple and use the freshest produce. That's why I use local suppliers as much as possible."
Slices of prosciutto are fried until crisp for a delicious garnish.
Scallops and Leeks in Star Anise-Orange Sauce
Star anise has been showing up all over restaurant menus lately, even in seafood dishes. This light and lively first course was inspired by such recipes.
Seafood Stew with Fennel and Thyme
NORMANDY
In Normandy, this richly flavored stew would be served with a composed salad of watercress, shallots, and roasted beets. What to drink: Muscadet, Chablis, or unoaked Chardonnay.
