Sautéed Halibut with Arugula, Roasted Beets, and Horseradish Crème Fraîche
The colored beets and bright green arugula in this dish make for a visually stunning presentation. The sweet roasted beets marinated in lemon vinaigrette play off the pure white fish and horseradish cream. Look for a few different types of beets, such as golden beets and Chioggia beets, and dress them separately, so the dark ones don’t bleed their juices onto the lighter ones. In the spring, you could make this dish with wild salmon. And to make a more hearty meal, serve some beluga lentils on the side (see page 331).
Portuguese-Style Pork and Clams with Chorizo and Fried Potatoes
My first real chef position was at Alloro, a small Italian restaurant in Boston’s North End. In this all-Italian neighborhood, the owner was not Italian, but rather a Portuguese guy named Armando. Some cultures care more about food than others, and, like the Italians, the Portuguese are definitely devoted to their cuisine. Armando loved to tell me about the Old Country and the dishes his mother made for him when he was growing up. This dish is traditionally made with pork loin, but when I tried it, the loin was dry and didn’t seem to marry well with the flavors of the clams. So I decided to try it with pork confit, which would get crispy on the outside but stay meltingly tender on the inside. To give more pork flavor to the broth, I added chorizo and came up with my own version of pork (and pork!) and clams. In honor of Armando, I always make my pork and clams with fried potatoes. If he had his way, everything would come with fried potatoes.
Australian Barramundi with Winter Vegetables Bagna Cauda and Toasted Breadcrumbs
This dish is the Italian equivalent of the French grand aïoli. In France, a colorful assortment of vegetable crudités is accompanied by a large bowl of garlicky homemade mayonnaise. In Italy, instead of dipping the vegetables into aïoli, they dunk them into a bowl of bagna cauda, a “warm bath” of garlic and anchovy simmering in butter and olive oil. In this dish, I toss my favorite winter vegetables with the bagna cauda and pair them with a meaty Australian bass, barramundi. Feel free to adapt the recipe to your location, season, and cravings. If you’re in the mood for asparagus or potatoes, add them to the mix. And if you can’t find barramundi, this dish is delicious when made with another bass, snapper, or halibut.
Grilled Halibut with Herb Salad and Meyer Lemon–Green Olive Salsa
This invigorating dish is a refreshing change from the hearty comfort foods of winter. The herbs here aren’t relegated to the sidelines; tossed with arugula, they become the main attractions of this bright salad. Meyer lemons are diced with their peels on and combined with green olives, champagne vinegar, honey, and olive oil for a bracing sweet-tart salsa to accompany the grilled halibut.
Mussels and Clams with Vermouth, Cannellini Beans, and Cavolo Nero
Shellfish and beans are a classic Italian combination. In the tradition of frugal and resourceful peasant cooking, nothing goes to waste in this dish. As the beans simmer away with the thyme, rosemary, and chile, they create another invaluable ingredient: a delicious stock. Starchy and flavorful, it’s added to the steaming shellfish, thickening their juices into a complex broth. The cavolo nero adds an earthy note and a chewy texture to the seafood stew. This is a rustic family meal in which everyone should take part, serving themselves from the bountiful platter at the center of the table. And don’t forget to serve big hunks of crusty bread for sopping up all those juices.
Torchio with Cauliflower, Cavolo Nero, Currants, and Pine Nuts
This pasta might sound unsubstantial, but I promise you won’t leave the table wishing you’d made a roast instead. The caramelized cauliflower, rich cavolo nero, and chewy pasta, sautéed with rosemary, chile, garlic, anchovy, and onion, meld together into a filling, savory whole. Although sautéing the pasta isn’t traditional, I love the integration of flavors and the slightly crisped noodles.
James’s Broccoli with Burrata, Pine Nuts, and Warm Anchovy Vinaigrette
If you leaned against your sink, closed your eyes, and focused on conjuring up the quintessential organic farmer, James Birch would appear in your kitchen. He looks like a cross between a grizzly bear and an overgrown Little Prince. And he is, in fact, the king of broccoli. I’d guess that most people don’t walk into Lucques with a hankering for broccoli, but this appetizer might just change that. Tossed with a garlicky anchovy butter, topped with pine nut breadcrumbs, and served with slices of creamy burrata cheese, this broccoli is how addictions get started. Burrata literally translates as “bag.” Cream is beaten into mozzarella, creating a skin of cheese that’s filled with creamy curd. Burrata’s silky, soft texture and rich flavor make it feel like a mozzarella that died and went to heaven. We get our burrata from Caseificio Gioia, which, although it sounds like it must be located in a quaint Italian village, is actually a family-owned cheese company in the decidedly unromantic industrial township of South El Monte, just outside Los Angeles. For many years, they’ve been providing L.A. chefs with the most delicious fresh mozzarella, ricotta, and burrata this side of the Atlantic. Burrata has a shelf life of about 3 to 4 days, so eat it quickly. (If you can’t find burrata, substitute a soft, fresh handmade mozzarella.)
Taylor Bay Scallops with Chanterelles, Sherry, and Parsley Breadcrumbs
Taylor Bay Scallops are named for fisherman Rod Taylor, who farm-raises them and harvests them by hand in the icy waters off Cape Cod. Unlike diver scallops, which are larger and have a meaty texture, the small, delicate Taylor Bays are sold live in their beautiful pink shells. Their size and sweetness make them perfect for steaming, which releases the juices trapped in the scallop shells, giving an oceany, scallopy flavor to the broth.
Grilled Pancetta-Wrapped Trout with Verjus, Crushed Grapes, and Fennel Gratin
Rainbow trout is a delicious option for fish-loving home cooks. It’s available year-round and won’t break the bank even when you want to feed a crowd. Have your fishmonger bone and butterfly the trout for you, leaving the tail intact and keeping the two fillets attached on the fin side. This preparation is a study in contrasts, a three-way complement to the flaky flesh of the trout. The blushing sweet-tart sauce is made with both crushed grapes and verjus, the juice of unripe wine grapes. (The French used verjus in medieval and Renaissance times in much the same way we use vinegar or lemon juice today.) Less acidic and more complex than most vinegar, the verjus’s refreshing fruitiness plays counterpoint to the salty cured Italian bacon wrapped around the trout. And finally, hidden within this lively package: rich, herbaceous sorrel cream, bringing us back to earth.
Sautéed Skate with Parsnip Purée, Brussels Sprouts, Pancetta, and Balsamic Brown
Kite-shaped rays, or skate, coast along the ocean floor foraging for mollusks. Eating clams, shrimp, and periwinkles gives skate a sweet, rich flavor. Its oddly ridged and finely textured flesh is unique in the fish world. In France, the classic preparation pairs skate with a nutty brown butter called beurre noir, usually garnished with lemon and capers. Here I dredge the skate in ultra-fine Wondra flour, then quickly sauté it until golden brown. For a play on the classic, I finish the brown butter with sweet balsamic vinegar. The creamy parsnip purée and Brussels sprouts sautéed with pancetta harmonize nicely with the crisp, glistening skate and sweet, nutty butter.
Spiced Snapper with Carrot Purée and Gingered Beets
This exotic spiced snapper dish evolved from the most mundane ingredient in the mix: the everyday carrot. But the carrots that inspired it, grown by local farmer Jerry Rutiz, are by no means ordinary. His funky-shaped, dirt-encrusted carrots are the sweetest and most delicious of any I’ve tasted. One week at Lucques, we found ourselves with an abundance of Jerry’s carrots. I ended up making a big batch of carrot soup for the staff, just to get the carrots out of the walk-in refrigerator. The result was so delicious that I had to find more ways to show off these remarkable roots. Caramelized and puréed with onion and cilantro, they are the perfect foil for this harissa-spiced snapper topped with gingered beets and lime salsa.
California Sea Bass with Shell Bean Risotto and Gremolata Butter
Shell beans are a big part of late summer and early fall in our kitchen. If you happen to come by Lucques on a slow night when they’re in season, you’ll see runners, cooks, and dishwashers gathered around huge piles of shell beans, shucking, shucking, shucking. For me, shucking provides a much-needed period when my hands can do the work and my brain takes a little time off. Don’t worry, shell beans for six won’t require a crew of shuckers.
Lamb Osso Buco with Shell Bean Ragoût, Haricots Verts, and Tapenade
This was one of our first Sunday suppers at Lucques. It’s a variation on the classic osso buco, which is traditionally made with veal shanks. I use the same technique, but for this lighter summer version I braise the lamb shanks in white wine and a combination of veal and chicken stock (as opposed to straight veal stock). The tender shanks are a rich counterpoint to the freshness of the shell beans and crunch of the haricots verts. Ask your butcher for lamb osso buco, but if you can’t find it you can use lamb shanks.
Grilled Tuna with Potato-Tomato Gratin and Rouille
This dish takes me back to Pantelleria, a tiny volcanic island in the Mediterranean, situated between North Africa and Sicily. Undeveloped and relatively untouched by the modern world, the island is famous for two things: the caper bushes that dominate the dry, brush-covered hillsides of the rocky coast, and resident Giorgio Armani. My husband and I spent a magical week in that salt-drenched haven, eating grilled, freshly caught tuna; bowls of couscous; and salads of tomatoes, potatoes, and capers. The grilled tuna and the combination of tomatoes and potatoes in this dish are a tribute to those leisurely days on Pantelleria. And though rouille isn’t part of their Moorish-meets-Italian culinary lexicon, I’m sure the Pantellerians would love this saffron-tinted, spicy pepper mayonnaise.
Warm Squid Salad with Spinach, Chorizo, and Black Olives
Although they might sound like an odd combination, hot crispy squid and spicy chorizo tossed together with spinach, cilantro, and olives make an irresistible warm salad. This salad is a salute to the Portuguese and the Spanish, who have been cooking seafood and meat together for centuries, long before the term “surf and turf” was coined.
Santa Barbara Spot Prawns with Tomato Confit, Garlic, and Chile
Maine has lobster and Maryland has soft-shell crabs, but the prize shellfish of Southern California is the Santa Barbara spot prawn. Spot prawns have a softer texture than most shrimp and are best when cooked in their shells, heads on. As the shrimp shells caramelize in the pan, they leave behind crispy bits that infuse the sauce with a rich shellfish flavor. Besides, they’re fun to eat out of the shell, and they make for a beautiful and dramatic presentation. Serve the spot prawns with salt and lemon and a big hunk of crusty bread. This is a messy feast, so choose guests who will enjoy participating in such a primal feeding frenzy.
Tomato Tart with Capers, Anchovies, and Caramelized Onions
This tart has all the boisterous Mediterranean flavors of pasta puttanesca: tomatoes, anchovies, capers, and olives layered on puff pastry and caramelized onions. Make a tapestry of red, yellow, and orange by layering different-colored heirloom tomato slices over the onions. Though I usually want to put cheese on everything, this tart doesn’t need it. The tomatoes are the stars, so let them shine.
California Sea Bass Kabobs with Eggplant, Peppers, and Charmoula
These skewers of sea bass are seasoned with a North African condiment called charmoula and served over marinated eggplant and peppers. Charmoula, like so many Old World recipes, has as many versions as there are cooks. Although the proportions and some ingredients vary, everyone seems to agree that charmoula must have cilantro, garlic, cumin, and paprika and then be finished with olive oil and vinegar. One Sunday when we were working on this dish, Julie Robles, then sous-chef at Lucques, suggested adding rice wine vinegar to our charmoula experiment. It’s certainly not authentic, but we both liked the milder, sweeter nuance it gave the sauce. In fact, the charmoula was so good we decided to use it twice. First we marinated the fish in the spicy condiment (acid-free, so it wouldn’t “cook” the fish), and then, as we pulled the kabobs from the grill, we slathered them once again in charmoula.
