Black Walnut Cake
My grandmother came up with ways to use all of the black walnuts we get at the farm, where the trees grow like weeds. They're literally tough nuts to crack (my grandfather would drive over them with his tractor). Regular English walnuts are a less labor-intensive and milder substitute. My Aunt Janet sent me a copy of my grandmother's original handwritten recipe, which I've modified only slightly. This is a dense cake and doesn't need a frosting, but a scoop of ice cream makes it even better.
Bubby's Granola
This homemade cereal is hearty, wholesome, and filled with nutritious ingredients such as walnuts, rolled oats, raisins, and sunflower seeds. Granola is very flexible, so you can add whatever fruits and nuts are your personal favorites. This granola is great with milk or yogurt, or even as a topping on pancakes. Because raisins can make the granola soggy, we add them right before serving. The granola keeps well for a long time, so this is a big batch—it makes three pounds. Just keep it in an airtight container and eat it for breakfast all week, as we do at Bubby's or cut it in half to feed a smaller crowd.
Charred Green Beans with Lemon Verbena Pesto
If you grow pole beans, you know that at first glance, you have only a few beans, and then suddenly there is an onslaught. That's when bean varieties like the green Blue Lake or the yellow wax beans can be stir-grilled with a bit of olive oil for a very simple yet satisfying dish to use the surplus of beans. When you're in the mood for a more robust sauce, try this lemony pesto tossed with the grilled beans right before serving.
Editor's note: If you can't find lemon verbena leaves or even fresh lemon balm leaves, substitute basil pesto.

Haroseth (Dried Fruit and Nut Paste)
Haroseth, a symbolic seder food, alludes to the mortar that the Jews used to build the pyramids when enslaved by the Egyptian pharaoh. Though haroseth visually mimes the unappealing look of cement, its taste is actually a delicious combination of fresh or dried fruit, nuts, spices and wine. There are as many variations of haroseth as there are seder tables around the world, and all reflect a myriad of traditions. This recipe is inspired by my grandmother's simple grated apple, walnut, and cinnamon version, along with the flavors of my husband's Middle Eastern background.

Ellen Levine's Vegetarian "Chopped Liver" a la Dragon
There are countless variations on this much-loved recipe, which has its origins in kosher cooking. By making a meatless (pareve) version of chopped liver, Jews who keep kosher get to enjoy a much-loved dish while sticking to the dietary requirements of nonmeat meals. While this is often served as a Sabbath appetizer, particularly in homes with Ashkenazic roots, and also as a seder dish, novelist Ellen Levine brings it to the annual potluck picnic that gathers together writers and illustrators of children's and young-adult books from all over new England. It's always swiftly scarfed up.
As odd as it may sound to prepare a vegetarian spread whose name references an animal organ, somehow this dish lacks the turn-up-your-nose unpleasantness of many pseudo-meat dishes. Maybe this is because its origins are based in authentic foodways. But it could just as well be because it is very versatile and just plain good. as with all home-style dishes, from bouillabaisse to barbecue to gumbo, there are many versions of pareve chopped liver, and whichever one you grew up with is, to you, the one and only. I've attempted to give at least a nod to some of these variations following the main recipe, but this is my take on Ellen's. Try it as a sandwich spread or with crudités; or serve it with crisp crackers, toasted baguette slices, or, at Passover, matzoh.
Butternut Squash Tortelloni with Cranberry Walnut Sauce
This recipe has several steps, but give it a try; I think you’ll find that none of the steps is difficult, and you can prepare the recipe in stages if you like. Make the filling one day, fill and cook the tortelloni the next, or make and fill the pasta to freeze, and cook anytime you want! The autumn flavors of squash, nuts, and cranberries make this the perfect side dish for a big holiday meal, or a vegetarian alternative for the non-meat eaters at the table.

Rotelli and fusilli are different names for the same, corkscrew-shaped pasta twists. This sauce is essentially a walnut compound butter, and it’s a very easy option for those nights when you’re not in the mood to do a lot of cooking.

Walnut pesto is very popular in Piedmont, where I first tasted this dish. It’s really great on its own, simply tossed with a long-cut pasta, but I think the peppers give it a bit more body and also make the dish more beautiful on the plate.

This robust red-pepper dip is based on muhammara, a Middle Eastern specialty whose name describes its brick-red color. For best results, make it a day ahead to let the flavors blend. Serve with toasted pita wedges or crudités.

Dark chocolate, walnuts, and crystallized ginger combine in these incomparably good biscotti. Chocolate with at least 70 percent cocoa helps keep them rich but not too sweet.

Orange-Walnut Olive Oil Cake with Sweet Yogurt
Olive oil cakes are popular in Italy, where they are typically made with orange-flavored liqueurs. This version replaces the alcohol with orange juice (and zest), and calls for brown sugar instead of the more refined granulated variety. Use extra-virgin olive oil if you prefer a more pronounced fruitiness. This cake was made with an 8-by-2-inch round “professional” pan; the batter can also be baked in a standard 9-by-1 1/2-inch cake pan.
