Schaner Farm’s Avocado and Citrus Salad with Green Olives
This dish offers an opportunity to showcase the great variety of citrus that farmer Peter Schaner grows for us this time of year: pomelos, Oro Blancos, grapefruits, mandelos, tangelos, clementines, and blood oranges. When making the vinaigrette, choose the juice from the oranges and tangerines rather than that of the grapefruits (too bitter) or blood oranges (too dark in color). You’ll have more juice than you need for the vinaigrette, so you can pour the leftovers into a chilled glass and sip it as you finish making dinner. (Vodka is optional.) As for the avocados, look for Reed, Hass, Fuerte, Pinkerton, or Bacon varieties. The olives may seem like an odd addition to this dish, but their brininess contrasts wonderfully with the fresh, juicy citrus and the buttery avocado.
Blood Oranges, Dates, Parmesan, and Almonds
Every winter, when the first blood oranges appear at the market, I’m as impressed as I was the first time I saw one, while visiting Rome my junior year abroad. One morning, at the local café where I had my daily cappuccino and pretended to read the paper, I heard a loud racket coming from behind me. When I turned and looked, I got my first glimpse of that blood-red juice spewing from the juicers lined up on the bar. I had to order a glass. When I got the bill, I was shocked by the steep price. But even back then, I knew it was something very special and worth every lira. This salad is my homage to those blood oranges that won my heart so many years ago. Layered with sweet dates, Parmesan, almonds, and a few leaves of peppery arugula, the blood-orange slices burst with sweet, tart juice. Because this salad has so few ingredients and nothing to “hide behind,” now is truly a time to seek out the very best ingredients. Once you’ve gathered your perfect components, the only difficult part is arranging them on the plate. Thoughtfully weave the ingredients together, layering them into “hills and valleys,” rather than piling them up into a “mountain.” Think of this as a tapestry, rather than a tossed salad.
Beets and Tangerines with Mint and Orange-Flower Water
Earthy, sweet beets and tangy, juicy tangerines were meant for each other. I’m just the hungry matchmaker. I set them up on an exotic date with a splash of fragrant orange-flower water and ribbons of mint. Not only do they taste delicious together, they also make quite a stunning couple.
Braised Leeks
These leeks are also delicious cold, dressed with a mustard vinaigrette and served with sliced prosciutto and chopped egg.
Beluga Lentils
These tiny black lentils are named for their resemblance to caviar.
Sautéed Rapini with Garlic and Chile
The amount of oil called for in this recipe might shock you, but to get the rapini nicely sautéed and coated in all the flavors of the chile, shallot, and thyme, it really is necessary. If you don’t want to end up eating all that oil, you can remove the rapini from the pan with tongs, leaving the oil behind. Or you can serve it all together, and let the olive oil pool beneath the rapini on the plate. Of course, I can never resist sopping up the oil with a crusty hunk of bread!
Persimmon and Pomegranate Salad with Arugula and Hazelnuts
This is one of those salads that I can’t stop eating once I start. It’s thirst quenching, crunchy, and downright addictive. The juice from the pomegranate binds with the olive and hazelnut oils to make a bright, acidic dressing for the peppery arugula and sweet persimmons. Juicing your own pomegranates is easy, but if you’re not careful, it can result in some embarrassing mishaps. One night at Lucques, a customer asked for a pomegranate martini. Bartender Soren Banks, having seen a bowl of pomegranates in the kitchen, happily agreed to make her one. He rushed back to the kitchen for a quick juicing lesson, and then back to the bar. Following what he interpreted to be my instructions, he proceeded to spray himself and all the customers at the bar with the bright-red juice. Fortunately, everyone was more amused than angry, especially after a free round of pomegranate martinis (juiced this time in the kitchen). Roasted Beet Salad with Fried Chickpeas, Nyons Olives, and Ricotta Salata
I was raised by a beet-hating mother, so we never ate them when I was growing up. But when I left the nest and actually tasted a “forbidden” fresh beet, I was smitten with its sweet earthiness and beautiful color. For years, my mother and I battled back and forth: I relentlessly tried to convince her of beets’ many virtues, and she adamantly hung on to her contempt for them. One Sunday, she called Lucques to ask me what we were serving for supper that night. And then I did it—I lied to my mother. I couldn’t help myself, and made up the name of a beetless dish that I knew would tempt her. I told myself it was all for a good cause. When Mom came in that night and tasted roasted beets, bathed in toasty cumin vinaigrette and arranged on the plate with so many delicious treats, like Nyons olives, fried chickpeas, and slivers of dried ricotta, I knew I had cured her of her beet-hating ways.
James’s Broccoli with Burrata, Pine Nuts, and Warm Anchovy Vinaigrette
If you leaned against your sink, closed your eyes, and focused on conjuring up the quintessential organic farmer, James Birch would appear in your kitchen. He looks like a cross between a grizzly bear and an overgrown Little Prince. And he is, in fact, the king of broccoli. I’d guess that most people don’t walk into Lucques with a hankering for broccoli, but this appetizer might just change that. Tossed with a garlicky anchovy butter, topped with pine nut breadcrumbs, and served with slices of creamy burrata cheese, this broccoli is how addictions get started. Burrata literally translates as “bag.” Cream is beaten into mozzarella, creating a skin of cheese that’s filled with creamy curd. Burrata’s silky, soft texture and rich flavor make it feel like a mozzarella that died and went to heaven. We get our burrata from Caseificio Gioia, which, although it sounds like it must be located in a quaint Italian village, is actually a family-owned cheese company in the decidedly unromantic industrial township of South El Monte, just outside Los Angeles. For many years, they’ve been providing L.A. chefs with the most delicious fresh mozzarella, ricotta, and burrata this side of the Atlantic. Burrata has a shelf life of about 3 to 4 days, so eat it quickly. (If you can’t find burrata, substitute a soft, fresh handmade mozzarella.)
Young Onion Tart with Cantal, Applewood-Smoked Bacon, and Herb Salad
Lucques had been open only a few months when we were asked to host an Alsatian wine dinner. Working on the menu reminded me of a road trip I had taken many years before through that northeastern region of France. With a corkscrew in the glove compartment and a stinky wheel of Muenster tucked away in the backseat, my boyfriend and I tooled around the picturesque Alsatian countryside. We lived for a few days on tall glasses of Hefeweizen—golden, unfiltered wheat beer always served with a slice of lemon—and on wedges of Flammeküche, warm, cheesy bacon-onion tarts. I made this version of that traditional tart for our wine dinner.
Grossi’s Potatoes
In the early days at Lucques, Corina Weibel, my opening sous-chef, and I were the only two cooks in the kitchen on Sundays. After a hectic Saturday night, both of us looked forward to cooking in a tranquil kitchen on Sunday. During those afternoons, Corina loved to tell stories about her Swiss heritage and to reminisce about her grandmother’s cooking. When she described her grossi’s potatoes, a combination of crisp sautéed potatoes with a coating of crunchy breadcrumbs, I knew I would love them (starch plus starch!).
Roasted Root Vegetables with Gremolata
Look for young root vegetables that are small enough that you can leave a little of their stems on and preserve their natural shape. If you’re using larger root vegetables, cut them in half lengthwise, place them cut side down on a cutting board, and slice on the diagonal. It’s important to cut all the vegetables approximately the same size, so they cook evenly. I like to divide the root vegetables between two pans so they aren’t too crowded.
Balsamic-Braised Brussels Sprouts with Pancetta
It’s funny when some of your biggest enemies turn out years later to be your best friends. As a child, I dreaded nothing more than those mushy, boiled-todeath, off-color Brussels sprouts. But once I discovered fresh Brussels sprouts and learned how to cook them, I became a full-fledged devotée! Here, in my favorite preparation, they’re sautéed with pancetta, shallots, and garlic and then braised in the pan with balsamic vinegar and veal stock until they’re shiny and glazed.
