Ham, Leek, and Three-Cheese Quiche

Marsha and John Antonelli of Whittier, California, write: "We recently had lunch at Bistro Jeanty, in Yountville, California, where the ham, leek, and three-cheese quiche was so outstanding we went back twice. Could you persuade the chef to share this excellent recipe?" Extremely creamy and rich, this quiche could be served for breakfast, lunch, or dinner. You can make your own crust, but the premade kind will save some time.

Caesar Potato Salad with Grilled Red Onion

Great with: Grilled rib-eye steak.

Spring Greens with Sherry Vinaigrette

Baby spinach can stand in for the mâche.

Roasted Racks of Lamb with Malagueta Pepper and Farofa Crust

If you're making this entire menu in a single oven, we recommend baking the yuca gratin ahead; while it cooks, brown the lamb and coat with the sauce and farofa. When the gratin comes out of the oven, the lamb can go in. (The gratin will stay warm while the lamb bakes and stands.)

Spring Berry Champagne Cocktail

Sliced strawberries infuse raspberry brandy with fresh berry flavor, and the strained liqueur is topped off with Champagne.

Carrot Cake with Marmalade Cream Cheese Frosting

Root vegetables were often used to lend sweetness to eighteenth-century cakes and puddings. The carrot cake layers in this recipe are sandwiched with marmalade and iced with a cream cheese frosting.

Sauteed Shrimp on Parmesan Grits with Redeye Gravy

Madeira, shiitake mushrooms and hot pepper sauce make the gravy in this dish from Jack Fry's something special. It's great for brunch.

Coconut Cake with Lime Curd

For many Southerners the holidays wouldn't be the same without coconut cake. Because coconuts can be difficult nuts to crack — especially for cooks new to the task — we offer an easy method that involves baking the coconut briefly (which does not alter the coconut's flavor appreciably). If the coconut doesn't crack while in the oven, it will once force is applied.

Chocolate-Toffee Easter Eggs

To prevent fingerprints or smudges, wear thin cotton gloves* while handling the eggs.

Roast Racks of Lamb with New Potatoes and Mint Pesto

Ask the butcher to "french" the racks of lamb, which involves cutting away the meat from the ends of the rack to expose the bones. Serve with: California Cabernet • asparagus sprinkled with chives and toasted pine nuts • crusty baguette • blueberry crumble with cream

Roasted New Potatoes with Spring Herb Pesto

These also pair nicely with beef or lamb.

Pineapple Glazed Ham

If you buy a boneless ham, you'll still have the same amount of meat to eat, about 10 to 12 pounds (because the bone accounts for about 4 pounds). The bottom line is that the recipe directions are the same, regardless of the cut of ham.

Potato, Bacon, and Chive Salad

This is great warm or at room temperature.

Orange-Pineapple Carrot Cake

"My wife, Jean, and I run a coffee farm on the Big Island of Hawaii," writes George Fike of Keauhou Mauka, Hawaii. "I really love to cook, so we entertain a lot, and I enjoy planning the dinners as much as I do making them. I tell people the best restaurant in town is our house! Since I do most of the cooking, recipes must either be relatively fast or look after themselves." Based on George's mother's recipe, this is an easy, moist, and tender carrot cake with delicate tropical flavors and macadamia nuts. There are a lot of ingredients, but they come together in just minutes.
