Ingredients: 2½ cups all-purpose flour; 2 Tbsp. granulated sugar; 1 tsp. kosher salt; 5 oz. sharp cheddar cheese, finely grated (about 1¼ cups); ¾ cup plus 2 Tbsp. (1¾ sticks) chilled unsalted butter, cut into pieces; ¼ cup chilled whiskey; 3.5 lb. Granny Smith or other sweet-tart firm baking apples (about 7), peeled, cored, thinly sliced; ¾ cup (packed) dark brown sugar; ¼ cup whiskey; 1 tsp. finely grated lemon zest; 2 Tbsp. fresh lemon juice; 2 tsp. ground cinnamon; ¼ tsp. ground allspice; ¼ tsp. ground cloves; ½ tsp. kosher salt; 3 Tbsp. unsalted butter; 1 Tbsp. plus 1 tsp. cornstarch; All-purpose flour (for surface); 1 large egg; 1 Tbsp demerara sugar; 8 ¼"-thick slices sharp cheddar cheese (about 8 oz. total); A 9"-diameter pie dish (not deep dish)
