The term chokha refers to any dish of vegetables roasted over a fire or scorched in hot oil, then mashed into a paste, and usually eaten with roti. Although it has become synonymous with something simply “mashed.” Baigan is egglant and here can be grilled or broiled to equally delicious effect.
