Ingredients: 1/4 cup rice wine vinegar; 2 heaping tablespoons Dijon mustard; 2 tablespoons honey; 1 teaspoon kosher salt; 1/4 cup extra-virgin olive oil; 3/4 teaspoon coarsely ground black pepper; 1 cup coarsely chopped green onions, white and green parts; 1/4 cup red wine vinegar; 2 serrano chiles, stemmed and seeded; 2 tablespoons mayonnaise; 1/4 cup olive oil; Kosher salt and freshly ground black pepper; 1/2 head of purple cabbage, finely shredded (about 3 cups); 1 small red onion, halved and thinly sliced; 1/4 cup chopped fresh cilantro leaves; 1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean); Kosher salt and freshly ground black pepper; 1 1/2 tablespoons canola oil; 4 hamburger buns, split; toasted (see page 15), if desired
