Ingredients: 1 large eggplant (about 2 pounds); Pinch of kosher salt; Canola oil, for frying; 1/2 cup well-shaken buttermilk; 2 large eggs; 1/2 teaspoon sea salt; 1/2 teaspoon freshly ground black pepper; 1/2 cup all-purpose flour; 1/2 cup dried bread crumbs; 1/2 cup fresh bread crumbs (see Know-how, page 134); 1/4 cup grated Parmesan cheese; Sugared Tabasco Sauce (recipe follows), for serving
