Gingerbread Snowflakes

Name: Gingerbread Snowflakes
Yield: makes about 2 dozen
Ingredients: 5 1/2 cups all-purpose flour, plus more for work surface; 1 teaspoon baking soda; 1 1/2 teaspoons salt; 4 teaspoons ground ginger; 4 teaspoons ground cinnamon; 1 1/2 teaspoons ground cloves; 1 teaspoon freshly grated nutmeg; 1 cup (2 sticks) unsalted butter, room temperature; 1 cup packed dark brown sugar; 2 large eggs; 1 1/2 cups unsulfured molasses; Royal Icing (page 241); Fine sanding sugar, for sprinkling

This snowflake gets its icy sheen from piped Royal Icing dusted with sanding sugar. You can use this basic recipe to make gingerbread men or other cutout shapes; just alter the baking time if the size of the cutter is different. Decorate each with Royal Icing, candies, sprinkles, and other embellishments, as desired.
