Ingredients: 1/4 cup olive oil; 2 cloves garlic, roughly chopped; Juice of 1 lemon; 1 teaspoon Neely’s barbecue rub (see page 112); Kosher salt and freshly ground black pepper; 16 jumbo shrimp (about 1 pound), peeled and deveined; 8 slices bacon, cut in half crosswise; 8 bamboo skewers, soaked in water for 30 minutes; 1 recipe sweet and spicy orange dipping sauce (recipe follows); 3/4 cup orange marmalade; 1/4 cup sweet Asian chile sauce; 1 tablespoon soy sauce; Pinch of crushed red-pepper flakes; (makes about 1 cup)
