Name: Key Lime Tart
Yield: makes one 9-inch tart
Ingredients: All-purpose flour, for dusting; Graham Cracker dough (page 90); 4 large egg yolks; 1 can (14 ounces) sweetened condensed milk; 2 teaspoons grated Key lime zest; 1/2 cup freshly squeezed Key lime juice (about 12 Key limes); Pinch of salt; 1 cup heavy cream; 2 tablespoons confectioners’ sugar; Candied Key Lime Slices (recipe follows); 1 cup sugar; 2 Key limes (about 1 ounce each), very thinly sliced into rounds; (makes enough to garnish one 9-inch tart)

We’ve reinvented the classic Key lime pie as a tart made with a homemade graham cracker crust. Key limes are smaller, rounder, and have a yellower cast than regular limes; look for them in gourmet shops and some supermarkets. Otherwise, substitute regular limes; six limes should yield 1/2 cup juice.
