Name: Mini Calzones
Yield: makes 16 calzones; 4 to 6 servings
Ingredients: 1 tablespoon olive oil; 8 ounces Italian-style turkey sausage; 1 cup tightly packed arugula (about 1 ounce); 4 ounces cream cheese, at room temperature; 1/3 cup plus 1/4 cup freshly grated Parmesan cheese; 1/2 teaspoon salt; 1/4 teaspoon freshly ground black pepper; 1 (13.5-ounce) tube of refrigerated pizza dough; All-purpose flour, for rolling the dough; 1 egg, beaten (for egg wash); 1 1/2 cups marinara sauce, store-bought or homemade (page 144)

Calzones are more popular in Italy than in this country, but they are great kid food and are a little easier to eat than a conventional pizza slice. Each one is a little surprise package; stuff whatever you like inside. Let the kids fill, roll, and seal the calzones before you pop them in the oven.
