Ingredients: 12 tablespoons (1 1/2 sticks) unsalted butter, softened; 1 cup granulated sugar; 1/2 cup unpacked light brown sugar; 1 large egg; 1/2 cup molasses; 1 teaspoon coffee extract or pure vanilla extract; 2 1/2 cups all-purpose flour; 1 tablespoon ground ginger; 1 tablespoon grated fresh ginger; 1 1/2 teaspoons baking soda; 1 teaspoon ground cinnamon; 3/4 teaspoon ground cloves; 1/2 teaspoon kosher salt; 1 tablespoon finely chopped crystallized ginger

Puffed and crackled exteriors make these chewy, intensely spiced cookies as pretty as they are delicious. I got the idea to add coffee to the dough because of how beautifully the flavors of ginger and molasses come together with bitter, smoky coffee. Serve with iced coffee to double the effect.
