Name: Nougatine
Yield: 60 1-inch squares or 40 1 1/2-inch circles
Ingredients: 3 tablespoons unflavored vegetable oil, such as safflower oil; 1 3/4 cups sugar; 10 drops freshly squeezed lemon juice; 1 cup lightly toasted almonds, finely chopped; 12 ounces bittersweet chocolate, finely chopped (optional)

Nougatine is a crisp nut brittle made by cooking sugar with no liquid. The sugar must be stirred constantly to avoid burning and prevent lumps from forming. Nougatine is eaten plain, dipped in chocolate, or used as an ingredient in other candies.
