Ingredients: 2 tablespoons olive oil; 1 pound smoked ham, cut into 1-inch chunks; 2 onions, chopped; 2 red or green bell peppers, cored, seeded, and chopped; 2 garlic cloves, smashed; 2 1/2 cups (about 1 pound) dried red beans, soaked in water overnight and drained; 1 cup chopped fresh parsley; 2 tablespoons Worcestershire sauce; 4 bay leaves; 1 tablespoon fresh thyme; 1 teaspoon crushed red pepper flakes; 1 teaspoon freshly ground black pepper, plus more to taste; 3 generous dashes of hot sauce, plus more for serving; Sea salt; 1 pound andouille sausage, sliced; Steamed long-grain white rice or Carolina Gold Rice (page 215); 4 scallions, trimmed and minced
