Roasted Winter Squash

Name: Roasted Winter Squash
Yield: serves 6
Ingredients: 3 pounds winter squash, such as butternut, buttercup, or acorn squash; 3 tablespoons extra-virgin olive oil; 1/2 teaspoon salt; 2 to 3 tablespoons butter, for the baking sheet; 1/2 cup or so Orange Sauce (recipe follows); 1 to 2 tablespoons Drizzling Sauce of Reduced Balsamic Vinegar (page 39); 3 or 4 medium-size oranges; 1 1/2 cups leek chunks (1-inch pieces); 1 cinnamon stick; 1 cup water; 3 tablespoons soft butter, for thickening the sauce; (makes about 1 cup)
