Sweet Couscous

Name: Sweet Couscous
Yield: serves 6 to 8
Ingredients: 2 1/2 cups fine-ground couscous (seffa); 2 1/2 cups warm water; 1/2 to 1 teaspoon salt; 2 tablespoons sunflower or vegetable oil; 1 stick (1/2 cup) or more unsalted butter; 2 tablespoons superfine sugar; To decorate: confectioners’ sugar and ground cinnamon; To serve: little bowls of confectioners’ sugar, ground cinnamon, and honey

A sweet couscous made with the fine-ground couscous called seffa (see page 28) is served hot, accompanied by a drink of cold buttermilk or milk perfumed with a drop of orange blossom water served in little glasses. The couscous needs quite a bit of butter because there is no broth. See the suggestions below for extra garnishes.
