Try a heritage Berkshire pork loin rack for great flavor and tenderness. If you are lucky enough to have a pork vendor at your local farmers market you can buy it there (you might want to order it in advance) or it can be mail ordered from www.heritagepork.com or prairiepridefarmminnesota.foodoro.com. Many butchers can cut a loin rack for you as well. Commercially, the loin rack is cut into pork chops but if you call ahead they can cut a roast for you.
Spring Chicken Soup with Matzo Balls
The key to a delicious matzo ball soup is in the broth: lots of vegetables and aromatics, including slices of ginger root for a bit of heat, make a perfect vehicle for these matzo balls. Matzo balls can be a very personal thing: some like them light and fluffy, while others fall into the "hard as golf balls" camp. Filled with lots of fresh parsley and dill, these dumplings fall somewhere in between: not feather light, not too hard, but with just enough bite and presence to stand up to its flavorful broth.

Parboiled Rice
South Indian rice is parboiled during processing, which creates a more nutritious but harder grain that needs to be boiled like pasta for 40 minutes. The grains are puffy and separate, and they absorb the curries beautifully. Indian parboiled rice can be ordered from iShopIndian.com; but if this type is not available, American-style converted rice or regular long-grain white rice are both good substitutes. Ghee
South Indians don't use ghee in cooking the way North Indians do, much preferring their coconut oil. But they always have a spoonful with their parboiled rice and dhal. The first step of a Sadhya is mixing ghee, rice, dhal, crushed pappadam, and a little salt. This mixture is eaten by hand and forms the first bites of the Sadhya. Sweet Potato with Toasted Coconut
Erisheris are thick curries traditionally made with yams or pumpkin, toasted coconut, and whole kidney beans. They are hearty and earthy, with a tropical twist of coconut and curry leaves. Cheesy Corn Chowder
When both the recipe developer (Gina Marie Miraglia Eriquez) and the cross-tester (Melissa Roberts) raved about this soup, it was clear we had a winner! This almost-vegetarian chowder is chock full of a variety of colorful diced vegetables. Of course, we love the smoky nuance the bacon gives it, but if you wanted to make this strictly vegetarian, just lose the bacon and use vegetable stock in place of the chicken broth. This is ski-house material to feed a hungry horde, or use a long weekend to have several smaller gatherings to pay back all your friends (once youve cleaned for one party, you might as well throw another one).
Mixed Vegetables with Coconut Sauce (Aviyal)
This quintessential Kerala vegetable curry marries many of the best ingredients of the region: coconut, curry leaves, green chiles, and a host of tropical vegetables. Seasoned Lentil Stew
This aromatic mixture of split peas and vegetables is a staple in the South Indian diet. It always accompanies favorite snacks such as dosas (lentil crêpes) and idlis (lentil dumplings). A traditional Sadhya feast wouldn't be complete without this flavorful source of protein. Asafetida (a garlicky resin from the sap of a fennel-like plant; it's often used in lentil dishes) and fenugreek provide its pleasantly pungent aroma. Green Bean, Corn, and Coconut Stir-Fry (Thoren)
I grew up on green beans thoren, and while I'll never tire of its crunchy deliciousness, I think adding corn makes it even better. And even though people don't often associate stir-fries with Indian cooking, this dish is a favorite in Kerala. Pappadams (Lentil Wafers)
In North India these legume wafers are called papad and are dry-roasted over a flame, but in the South they are deep-fried until they form lots of air bubbles and become light and puffy. They are sold in many flavors, but plain is preferred in Kerala. Pappadams are always part of a Sadhya: You crush one up and mix it together with rice, dhal, and ghee. The pappadam helps to bind all the ingredients together so you can form balls when eating with your hand. Store-bought wafers are used almost exclusively by Indian cooks because the traditional recipes are labor-intensive and require days of drying in the hot sun. East European Caraway Beef and Rice Sausage
The countries of east Europe are a disparate lot, continually at odds over issues of religion and governance. But, as nearby neighbors, they share a cooking culture over and above those differences. This sausage and the following recipe for Hungarian meatballs in a sour cream sauce are my imaginative combining of the foods that this corner of the world can share without rancor or strife. The sausage, formed into balls and sautéed, can also be served with cucumbers in a light vinaigrette and potato salad dressed with dill and sour cream for a meze plate.
Queso Fundido
No offense to salsa, but come on, who doesn't love a gooey, cheesy bean dip, bubbling hot like lava from the broiler? If you're a chile head, you'll probably want to up the number of chiles and leave the seeds in. If your friends are more, ahem, delicate, then stick with one chile and remove the seeds and ribs.
Farmhouse Cheese and Caraway Soda Bread Puddings
Consider this recipe a double whammy. Not only do you end up with a dreamy, cheesy bread pudding, but you also get the recipe for an excellent loaf of Irish soda bread. The bread is so easy to make—there's no yeast involved—don't be surprised if you find yourself baking a loaf often. It makes excellent toast.
Many Irish cheeses are now sold in our supermarkets, but you'll have good results with any sharp Cheddar. Buried in the recipe is a nifty trick: Adding a bit of Parmesan to the mixture helps amplify the flavor of the Cheddar.
