White Cupcakes with Pastel Buttercream Peaks

Fanciful peaks in a spectrum of shades crown cupcakes with a motif inspired by a vintage Russian cookbook. You could also opt to use just one color of frosting, or leave it untinted. White cupcakes, made with egg whites only (instead of whole eggs), are very light and delicate. For a stronger vanilla flavor, scrape the seeds of one vanilla bean (halved lengthwise) into the milk in step one, and omit vanilla extract.

Banana and Coconut Cashew-Cream Tart

This gluten-free, dairy-free, no-cook tart relies on dates and pecans for a sturdy crust, maple syrup for sweetness, and bananas and coconut for tropical flavors. The cashew “cream” is made by grinding cashews with water and vanilla-bean seeds. Soaking the nuts overnight in water ensures a puddinglike texture once they are ground. All in all, it makes an enticing dessert, even for those without food allergies or sensitivities.

Herbes Salées

Every year we buy a large jar of herbes salées in Kamouraska. It’s a typical Bas Du Fleuve product that lets you enjoy the taste of garden fresh herbs when the temperature is –4°F (–20°C) and your backyard is under a blanket of snow. It is essentially a big spoonful of herbs with carrots and onions that stay fresh because of the brine. You can use this traditional northern condiment with anything: potatoes, soups, seafood, lamb, gravies, terrines, and meat pies.

Mustard

Most Dijon mustard that is shipped to North America from France is made with seeds from Saskatchewan, Canada. Hence, it makes sense that we make our own mustard. Feel free to experiment with the types of vinegar and flavorings (tarragon, horseradish, dill).

Purée De Fines Herbes

This is part of our mise en place at the restaurant. We mix it with mayonnaise (page 175), serve it straight up with potatoes or fish, or use it to punch up sauces, soups, stews, or anything raw like tartare. Do not use woodsy herbs like rosemary, thyme, or sage in this purée, and be sure to wash all of your herbs well.

Pepper Vinegar

Southern cooks use their chile-infused vinegar to add a tart, floral kick to dishes like chicken or greens. You can also use it to wake up salad dressings. Customize it by adding bourbon or fruit liqueur and using your favorite chiles.

Donnie's Spice Mix

Editor's note: Chef Donald Link of New Orleans restaurants Cochon and Herbsaint, shared this recipe as part of a special Mardi Gras celebration he created for Epicurious. Use the spice mix to make his Link Family Crawfish Boil. When I'm at home and want to cook something quick and easy, I love having this blend in my cabinet so I don't have to fish out a bunch of spices. There is no salt in this mix, so be sure to add salt to whatever you are cooking. (I do the salt separately because some food needs more of it than others.) I use this mix for everything from fish fillets to jambalaya.
For the record, I let a few people call me Donnie—my cousin Billy Boy, Richard Reddington, Grandma Hammack, and my coauthor, Paula. It was the latter who named this recipe.

Garden of Eden Soup

This chilled soup always makes me imagine what summer in Eden must have been like: silky, verdant, bright, and refreshing. My only other need would be a glass of cava or vinho verde to go with it. The quality of your avocados is key to this recipe. Try to find the Haas or Bacon varieties from a domestic grower—the Fuerte ones from Chile (which are common in supermarkets) are too watery.

Fennel, Blood Orange, and Avocado Salad

This salad demonstrates how fresh winter can taste. The raw fennel is clean, aromatic, and crisp, the citrus sweet and a touch bitter, and the avocado rich and smooth. You can substitute other citrus with similar success or even use several types. To really take this salad over the top, I love to top it with fresh plucked Dungeness crab meat (another winter wonder); about 8 ounces is perfect for four servings.

Crème Fraîche Sorbet

Lighter than a custard-based ice cream, Chef Rob Wilson’s sorbet makes a refreshing accompaniment to summer berries, grilled peaches, or baked fruit desserts. Or scoop the sorbet into compote dishes and accompany with his Chocolate Sea Salt Cookies (page 185).

Carrot, Fennel, and Green Olive Slaw

Brian likes to serve this slaw with Moroccan Lamb Brochettes (page 124), but it would also complement grilled swordfish, fish brochettes, or grilled sausages. Sometimes, at home with his family, he buys spicy merguez (lamb sausages) from a local merchant, grills them, and tucks them into a baguette with aioli and this crunchy slaw. Choose firm green olives, such as picholines. The texture will be better if you buy the olives unpitted and pit them yourself.

Raw Tomato Soup

Charlie makes this refreshing soup when tomatoes are at their peak of ripeness and flavor. The same method can be applied to extract flavor from other watery vegetables and fruits, such as cucumber and watermelon.

Raw Tomato Sauce

This recipe is only for tomatoes that are at their absolute peak: dead ripe and full of flavor.

Pineapple-Ginger Sorbet

A special combination, decidedly Asian. Use fresh ginger if at all possible.

Mayonnaise

Whether you work by hand or with a blender or food processor, it takes just five minutes to make mayonnaise, and when you’re done you have a flavorful, creamy dressing that is so far superior to the bottled stuff you may not recognize it as the same thing. Next to vinaigrette, it’s the most useful of all dressings, and despite its luxurious nature it contains little saturated fat. If you’re worried about the health aspects of using a raw egg, start with bottled mayonnaise and beat in a little oil and/or any of the suggested additions.

Fig Relish

While the best way to eat figs is out of hand—few fruits are as delicious when ripe—there are rewarding ways to use them in recipes; this fig relish is one of them. It is especially brilliant on grilled swordfish or tuna (try it on Grilled Fish the Mediterranean Way, page 98), but nearly as good with grilled or broiled chicken (especially dark meat), pork, lamb, or beef. Note that all of these foods contain some fat; because the relish is so lean, combining it with nonfatty meats or fish—such as boneless chicken or flounder—produces a dish that seems to lack substance.
