Parsley-Onion Condiment

Here’s a “Why didn’t I think of that?” concoction that’s added to many plates—and sometimes simply set on the table as a condiment—throughout the Middle East. Fresh and delicious, it’s often made with mint instead of parsley or shallot in place of onion. Serve with any grilled meat, but especially Kofte (page 355).

Green Salad with Oil and Vinegar

Simple, basic, and essential. You can always make a true Vinaigrette (page 600), but as is, this is the simplest green salad, as good for entertaining as it is for weeknights. Almost any greens are good with this dressing, from romaine, Boston, or iceberg lettuce to frisée or radicchio, but a mixture is best. The prepacked mesclun mixtures now sold in almost all supermarkets make it even easier.

Salsa Verde with Tomatillos

A raw salsa, with nice strong flavors. Best with tomatillos, but still good with not-too-hard green tomatoes. I like to mix a little just-ripe red tomato in as well.

Xec

A tiny little side condiment served with grilled chicken or fish that can make any meal sing. It’s fine without any chile at all, but I like a touch. This is a very fragile dish; make it at the last minute and serve it all at once. It will go fast, believe me.

Carne Cruda

Carpaccio, now a staple at many high-end restaurants, even non-Italian ones, is a glorified version of this Piemontese specialty (in Tuscany and other parts of central Italy, an even simpler plate of cured meats is served routinely), which will provide a vibrant beginning to any dinner party. This dish depends on the flavor of olive oil, so break out the good stuff. The meat will be easier to cut into small pieces if you put it in the freezer for about half an hour first to firm it up a bit.

Gravlax

One of the simplest and most impressive cured dishes and certainly the king of cured fish. Speaking of king, if you can find wild Pacific salmon (usually spring through fall), especially king or sockeye, use it; if not, farm-raised salmon is quite good when treated this way. In fact, farm-raised salmon is a pretty good option—because it is harvested and shipped to stores daily it’s usually perfectly fresh, a requisite for all salmon you’d consider using for gravlax. Generally, gravlax is ready within 24 hours, but it’s better after a little longer than that, and you can hold it for another couple of days before serving if you like; it will become increasingly dry and strong flavored, not a bad thing. In any case, treat finished gravlax as a fresh food and use it within a few days.

Ceviche

In any coastal region where you find limes, you’ll find ceviche, going by one name or another. In Mexico, it’s frequently made with a combination of scallops, shrimp, conch, and octopus (the last two usually precooked to the point of tenderness), and those are all good fish for the mix. If you can find spanking-fresh fillets of your local white fish, you can use that here too, although scallops alone are easy and fabulous. (They’re also the safest shellfish to eat raw, but if the whole thing makes you nervous, see Mock Ceviche, page 35.) If you happen to have a couple of different colors of bell peppers, mix them; it’ll make the dish really sparkle.

Wild Fennel Rub

In Italy, wild fennel grows literally wild, all over the place, especially in the south of the peninsula. Duringmy travels across America, I also found it abundant as well, wild and cultivated, but the wild fennel grows especially aromatic in California. You can buy wild-fennel seeds to make this recipe, but you can just as well harvest them in the wild by picking the dried flower tops that harbor the fennel seeds in late summer. The anise-licorice flavor brings freshness to any meat when used as a rub.

Prickly Pear Granita

Prickly pears—or fichi d’India, as they are called in Italy—grow wild and abundant in Sicily and are eaten simply as a fruit, as a salad, or churned into a dessert, as in this recipe for granita. In the Southwestern United States, the prickly pear grows abundant and wild, and when I visited the Salinas Valley in California, I was delighted to see acres upon acres of this cactus plant growing for commercial harvesting. The Mexican culture uses it in their cuisine, but I was especially happy to see a demand for it here in the States. When you find it nice and ripe in your market, buy it and make this simple and delicious granita with it.

Salmoriglio

Salmoriglio, a traditional sauce for seafood, is nothing more than a dressing of olive oil, garlic, lemon juice, salt, peperoncino, and fresh parsley. There’s nothing to it—except remembering to make it ahead, so the garlic and pepper infuse the oil.

Raw Summer Tomato Sauce for Pasta

This is the pasta “sauce” I make in August, when just-picked tomatoes in all shapes and colors are piled on our kitchen windowsills—and it is too hot to hang around the stove. It’s a fast no-cooking preparation, but it requires ripe and juicy tomatoes, preferably homegrown or heirloom tomatoes from the farmers’ market. Be sure to have them at room temperature. The sauce actually develops in the hour or two when it marinates: salt draws the juices from the tomatoes, and they become infused with the flavors of basil and garlic. Then all you do is toss piping-hot pasta with the tomatoes and enjoy one of the rare treats of the whole year.

Pheromone Salad

I have to say that this is one of my all-time favorite salads, my variation of an Alice Waters recipe I came across years ago, and I’ve always loved the simplicity and the flavor. Shave the mushrooms immediately prior to serving, so that they release their aromas. It’s so intoxicating that you’d think they were pheromones. This salad is actually pretty sexy.

Shaved Artichoke and Wild Watercress Salad

Wild watercress appears sporadically in farmers’ markets, but it also grows in more places than you might think. In Seattle, it’s positively thick around Lake Washington and easy to find and pick. Whether you forage for your own or buy it from a purveyor, make sure you pick or buy more than you think you’ll need. I like to use only the very freshest tips and bits for the salad. The peppery flavor is a nice contrast to the mild, grassy flavor of the pecorino and marries well with the earthy finish of the artichokes.

Manila Clams on the Half Shell with Fennel, Lemon, and Chiles

If you love fried clams or a nice bowl of clam chowder, then eating clams on the half shell will be a revelation for you. Serving clams as a crudo plays up their assertive, concentrated clam flavor and guarantees tender meat. It’s easy, delicious, and a little bit different. If you don’t have baby fennel, you can use finely chopped fennel bulb. For a less spicy dish, you can split the chile lengthwise and remove the seeds and membrane first, then dice.
