Compote de Pommes

I love this chunky applesauce for its texture and the fact that it uses grapes as a sweetener. The key is good, flavorful apples. Take a bite out of one of the apples to determine the tartness.

Sauce au Raifort

According to the Talmud and the French sage Rashi, beets, fish, and cloves of garlic are essential foods to honor the Sabbath. French Jews also use horseradish, sliced as a root or ground into a sauce, and served at Passover to symbolize the bitterness of slavery. It was probably in Alsace or southern Germany that the horseradish root replaced the bitter greens of more southerly climes as the bitter herbs at Passover dinner. For hundreds of years, local farmers would dig up horseradish roots and peel and grate them outdoors, by their kitchens, making sure to protect their eyes from the sting. Then they would mix the root with a little sugar and vinegar and sometimes grated beets, keeping it for their own personal use or selling it at local farmers’ markets. In 1956, Raifalsa, an Alsace-based company, began grating horseradish grown by the area’s farmers in the corner of a farm in Mietesheim, near the Vosges Mountains. A few years ago, Raifalsa, still the only manufacturer of prepared horseradish in France, agreed to produce a batch of kosher horseradish. They had the rabbi of Strasbourg come to the factory to supervise the operation, which resulted in the production of six thousand 7-ounce pots, all stamped with a certification from the Grand Rabbinat de Strasbourg. Before grating the horseradish, just remember to open a window and put on a pair of goggles.

Rouille

I have always thought that the best part of fish soup is the rouille, a peppery, garlicky sauce that is slathered on toasted rounds of baguette and floated on the surface of the soup. I also like to stir some rouille into the broth. Similar to the Provençal aioli, a garlic-flavored mayonnaise, rouille is flavored with hot pepper and saffron, which give it its signature rust color. (Rouille literally means “rust” in French.) Today I have noticed that North African Jews often spice up their rouille even more, by adding a little harissa (see page 33) to it. Traditionally, a mortar and pestle are used to pound the garlic, pepper, and egg yolk, gradually incorporating the oil to make a mayonnaise. Today it is easy to put everything in a food processor and slowly add the oil, drop by drop. Leftover sauce is good on sandwiches or as a dip.

Mango Chutney for Pâté de Foie Gras

Maurice and Anne-Juliette Belicha, together with their two young daughters, lead a Jewish life, bringing their kosher meat from Paris and only using bio (organic) products, in the Dordogne. While Maurice is producing kosher foie gras (see page 47), Anne-Juliette is trying to realize her dream of opening a kosher bed-and-breakfast in the Dordogne. She makes this delicious mango chutney, which marries well with both her husband’s foie gras and with chopped liver.

Harissa

A sign of the popularity of North African food in France is this hot sauce, which is now prepared and sold in open-air markets and grocery stores throughout the country. In Tunisia, Morocco, and Algeria, the recipes vary slightly from village to village. I have seen it used today in salads, in bourride, in rouille, and in soups.

Eggplant Caviar

The French call this appetizer caviar d’aubergine because the feel of the eggplant seeds on your tongue is similar in texture to that of fish eggs. A delicious and easy-to-prepare dish, it has been in the French Jewish repertoire since at least the turn of the last century, when Romanian immigrants introduced the French to their ways of grilling the eggplant with its dark skin intact, a technique learned in the Middle East via the Caucasus. At about the same time, Russian and Romanian immigrants also brought this so-called poor man’s caviar with them to France. Whereas earlier generations used a hand chopper to make this dish, often blending in either lemon juice and olive oil or tomatoes and green peppers, today most cooks pulse it in a food processor. Although it is easier to roast the eggplants in the oven, oven- roasting will not give you the smoky flavor that comes from grilling over an open flame. This is a recipe to play with. Add diced onion, cilantro, or paprika, if you wish, or a few tablespoons of grapefruit juice or even mayonnaise. I have tasted all kinds of eggplant caviar. The last was at a very upscale French Bat Mitzvah, where the eggplant, laced with pesto, spiced with cumin, and decorated with tiny pansies, was served in an eggshell at the Kiddush after the service.

Garam Masala

A mixture of aromatic (and generally expensive) spices that according to the ancient Ayurvedic system of medicine are meant to heat the body. This is the only spice mixture that I ask you to make at home and keep in storage. Its aroma is unsurpassed if mixed and ground at home in small quantities. Also, it will not contain cheap “filler” spices, such as coriander seeds, as many commercial mixtures do. I do keep the store-bought mixture in my cupboard as well for use in certain dishes that require less perfume. My recipes will tell you which one to use.

Vegetable Pickle with Sri Lankan Mustard Paste

When I first ate this Sri Lankan pickle, known simply as Singhala Achcharu, it was made with green beans and carrots, but it may be made with other vegetables as well, including green papaya, found in East Asian and South Asian markets, and cauliflower. You may combine all these vegetables if you like, cutting each of them so the pieces are more or less the same size.

Darshini Cooray’s Sri Lankan Mustard Paste

Here is a condiment that I just cannot live without. You can add a dollop to curries or use it as you might any prepared mustard. It perks up hot dogs, my husband smears it on bacon and ham, it goes with roast beef, and it is a lovely, pungent addition to sandwiches. We always keep a jar in the refrigerator. Try smearing it on fresh pineapple slices to serve with a curry meal or a ham or pork roast (see next recipe), or use it to make Vegetable Pickle (see page 258).

Pineapple Relish with Mustard Paste

Nose-tingling and refreshing, this Sri Lankan relish goes well with all curry meals. You could also serve it at Western meals with roast pork or pork chops.

Yogurt with Tomatoes and Chickpeas

Here is an easy everyday yogurt relish. I like to use a good whole-milk yogurt here, but if you prefer a low-fat variety it would work well too. My cherry tomatoes were on the larger side so I cut each into eight portions. Use more if they are smaller and just quarter them. Serve with most Indian meals or eat by itself as a snack.

Zucchini Yogurt

This is a typical Gujarati dish: slightly sweet, slightly salty, slightly hot, and dotted with mustard seeds. I just love it. In India it would be served with a meal, but if you are in the habit of having a yogurt for lunch, try this very nutritious version.

Yogurt with Pineapple

Something between a relish and a curry, this may be served with most Indian meals.

Yogurt Relish with Okra

This is a simple and delicious relish to serve at Indian meals.

Yogurt Relish with Spinach

Any soft green, such as chard leaves, may be substituted for the spinach here.

Sweet-Sour Yogurt wth Apple and Shallot

Yogurt relishes are eaten with meals throughout India. They are nearly always savory, though in western states like Gujarat a little sugar is added as well as the salt to give a sweet-sour-salty flavor.

Sri Lankan Cooked Coconut Chutney

This delightful chutney is served with all manner of savory steamed rice cakes and pancakes. I love it with the Semolina Pilaf on page 222, but it may be served with most Indian meals. Store in the refrigerator 2–3 days or freeze leftovers.

Peanut Chutney with Sesame Seeds

This may be served with all Indian meals. It is particularly good with grilled meats and kebabs and makes an exciting dip for vegetables and all manner of crisps and fritters. Also, try a layer of it in a sandwich (cheese, turkey, or tomato-and-lettuce) instead of butter.

Sri Lankan Coconut Sambol

This is Sri Lanka’s everyday coconut sambol. Known as pol sambol, it would be called a chutney in India. It may be served with any meal.

Fresh Green Chutney

A fresh chutney to serve with all Indian meals, it has a shelf life of 2–3 days if stored in the refrigerator. What is not used up may be easily frozen for another day.
