Spicy Mac and Cheese with Pancetta
Epicurious member Tess Ellis of Washington, D.C, drew inspiration from the ingredients she had on hand to create this eclectic take on a classic comfort food. The savory ingredients add dimension to the creamy dish, while the red pepper flakes add a touch of heat. To achieve a delicious crusty top, she suggests that you “put it under the broiler for a few minutes to give it a nice brown coating.”
Spaghetti with Turkey-Pesto Meatballs
In addition to being packed with meaty flavor, turkey is a healthy alternative to beef, rendering this a great dinner option for the whole family; to really save on fat and calories, stick to lean ground turkey. Pair this dish with a green salad and red wine, then finish off the meal with bowls of your favorite ice cream.
Greek Salad with Orzo and Black-eyed Peas
This salad is low in calories and high in fiber, so why not double the recipe? The ingredients can be assembled in jars and stored in your fridge, making it easy to pack and carry to work or the beach. Simply mix it up and serve at room temperature with a side of toasted pita chips so you can scoop up every bit of the oregano and vinegar dressing.
Orzo with Grilled Shrimp, Summer Vegetables, and Pesto Vinaigrette
Served cold or at room temperature, this colorful orzo is picnic and party ready. Save yourself some time—and effort—by buying peeled and deveined shrimp, and look for bocconcini, which are tiny mozzarella balls, usually sold in water. With precut veggies, this salad is a snap.
Faux Arrabbiata with Penne
Arrabbiata (Italian for “angry”) sauce is a heated-up version of your classic marinara, made from garlic, tomatoes, red chiles, and olive oil. What makes this a “faux” arrabbiata is the ever-so-slightly unorthodox addition of basil, lemon, and balsamic vinegar, which add sweetness to the sauce. Cookbook author and Epicurious member Serena Bass notes, “Mince the lemon with a sharp knife rather than grate, as it is nice to get little pieces of zest to bite on. And don’t be tempted to cook this for longer than 10 minutes, as it will lose its fresh TKO punch. I like this sauce with penne or spaghettini.”
Mediterranean Couscous and Lentil Salad
The perfect compromise between a grain and a salad, this refreshing Mediterranean side makes a lovely accompaniment to grilled lamb for a backyard barbecue. Or, highlight its Middle Eastern influences by pairing it with baba ghanoush and a platter of stuffed grape leaves. Add personal touches by substituting your favorite herb for the mint, topping off the salad with a squeeze of lime and a bit of orange zest, or using spinach instead of arugula. However you decide to frame it, you’ll be set up for a nice snack the next day.
Linguine with Herb Broth and Clams
The key to this classic pasta dish is using the best-quality white wine you have; contrary to popular belief, the quality of the wine is directly proportional to the quality of the broth. Make it a meal with a crusty warm Italian loaf and a glass of the leftover wine.
Lobster Pasta in a Roasted Corn and Sweet Bacon Cream
Here’s a restaurant-quality sauce that is rich and luxurious but easy enough to make at home. Professional cook and Epicurious member Thomas Campbell of New London, Connecticut, invented it, and his favorite part of the recipe is the bacon-flavored liquid; it adds a slightly sweet but smoky flavor to the sauce, and tastes even better after the flavors have time to mingle.
Lemon Gnocchi with Spinach and Peas
Lemon lovers adore this simple and satisfying pasta. Lemon zest and juice brighten the peas and spinach while lightening the creamy Parmesan sauce. You can also use penne, orecchiette, or another small pasta. To cut back on calories, use whole milk or half-and-half in place of some or all of the heavy cream.
Jerusalem Artichoke and Artichoke Heart Linguine
Despite their names and their common family, the Jerusalem artichoke and the globe artichoke aren't at all alike—one is a tuber, the other a thistle. Yet, flavorwise, they relate perfectly in this pasta dish. Add some slivers of red onion, lots of garlic, a kick of red pepper flakes, a squeeze of lemon juice, and a shower of thinly sliced fresh mint and you have a boldly seasoned pasta dish worthy of serving to company yet easy enough for a family meal.
Frascatelli with Pecorino and Mustard Greens
Frascatelli, a semolina dumpling, is the one homemade pasta suited for weeknight dinners. Just sprinkle water over a tray of semolina flour; the dumplings cook up in about a minute.

Linguine with Clam Sauce
According to my father, this was one of Nònno Tucci's favorite sauces to make. "He preferred to open the clams himself," recalls Stan. "He would collect the juice and remove the clam meat, making certain to collect all the juice. In the summer when we had large outdoor parties, we often served a bushel of raw clams on ice. Any remaining clams were prepared following my father's methods and frozen. They defrost quickly, providing a meal in the time it takes to cook the pasta."
If your fish market will open the clams and reserve the juice, it will save a lot of preparation time. If not, wash the clamshells thoroughly. Open the clams over a large bowl to catch the juices. Remove clams, discarding the dark sac, and set aside. Strain the juice through a fine-mesh sieve to remove sand and shells. Add the clams to the strained juice. Begin to prepare the sauce when the pasta is halfway cooked.
