Tagliolini with Salsa Cruda & Ricotta Salata
I first encountered this sauce while working in Umbria, and it’s one of my favorite summertime pastas. To me, this is Mother Nature’s last blast, her crescendo before fall. This is where you take everything she has to give, all those glorious summer ingredients, and toss them together to let the wonderful flavors marry. Then you just barely heat everything up, never actually letting the veggies cook, so they maintain their fresh flavors. Punctuate this with a salty grate of ricotta salata and say, “Mmmmm . . .”
Tagliolini with Arugula-Walnut Sauce
I LOOOOOVE nuts. And this super-classic preparation, which is hugely flavorful and really easy to make, is all about them. I start by toasting and puréeing walnuts—both of which help bring out their flavor and natural fattiness. Combine them with some sharp cheese and spicy arugula, and you end up with a dish that’s luscious and palate cleansing at the same time.
Tagliatelle with Bacon, Sweet Corn, Burst Cherry Tomatoes & Arugula
Where I come from, corn is the epitome of a summer vegetable; we used to drive out to the fields to get ours fresh and just leave our money in a can on the side of the road. So in this dish I combine corn with lovely little cherry tomatoes sautéed until they burst out of excitement, letting their delightful juices flow! Add some bacon and this sauce just steps up, pokes you, and says, “Hi, I’m summer, glad to see you!”
Spaghetti with Olive-Oil-Poached Tuna in Tomato-Fennel Sauce
I used to go to Lupa, Mario Batali’s Roman trattoria on Thompson Street in Manhattan, and eat preserved tuna belly with beans. It was SOOOOO good! The tuna belly—which is a highly underrated ingredient—becomes succulent and delicious when it’s slow-poached, and that’s exactly how I cook it. I use it in a pasta sauce that’s full of tomatoes, fennel, and lots of garlic to create a wonderful tomato-y, perfume-y, olive oil-y dish that just screams of Sicily. One of the great things about tuna belly is that because it’s considered the throwaway part of the fish, it’s really cheap. You have to spend some time cleaning it, but usually if you pay a bit more you can get it already prepped from your fishmonger (much easier!). If you can’t find tuna belly or don’t feel like making it, a good substitute is Sicilian tuna packed in olive oil.
Raviolo Al’Uovo
After culinary school, I spent a year in Italy learning to cook Italian food the way the Italians do, the right way. That year was probably one of the most important of my education; I learned a ton from the chefs I worked for—techniques and methods I still rely on every day. I also learned how to make this dish—which is a total showstopper. Uovo means “egg,” and that’s what this dish is all about: a lovely golden egg yolk nestled in a bed of creamy ricotta cheese all wrapped up in a tender blanket of pasta. Cut these lovelies open and the yolk flows out of the center. It’s an incredibly sophisticated and sexy dish, but deceivingly easy to make—the only catch is you have to cook the raviolis in batches. I realize this may seem like a pain, but it’s really the best approach as these ravs are very fragile (and they do cook really quickly, so it’s actually not that big a deal). I promise it’s worth it, because this recipe will make you a rock star!
Bucatini All’Amatriciana
When I’m in the mood for tomato sauce, Amatriciana is my go-to. It’s all about onions, spicy tomatoes, and pork products. Guanciale—cured pork jowl—is the key here. It has a sweeter, more interesting flavor than bacon. In a pinch, pancetta can be substituted, and in a double pinch bacon will suffice (though it does add a smokier flavor, so be warned). What else can I say? This sauce makes me want to dive into the bowl head first with my mouth wide open!
Pasta Carbonara
Eggs, bacon, and cheese, oh my! After a long shift in the kitchen and a few glasses of wine, carbonara is a chef’s late-night favorite. It’s fast, flavorful, and oh-so-satisfying. The thing is, as much as I love it, carbonara poses a bit of a dichotomy for me because while it involves some of my very favorite ingredients (eggs, bacon, and cheese), it also includes my nemesis: black pepper. The thing is, this is such a classic preparation that black pepper really belongs here—so I use it.
Pasta Fagioli
I love beans—any time, any way. And while my preference is to cook my own beans (see page 55), I’m the first to admit that sometimes a can of beans is a lifesaver. For this recipe in particular I have no problems using canned beans, and you shouldn’t either. Having a few cans in the pantry means whipping up this dish is easy—it’s one of my very favorite things to make when I want something super comforting to slurp up and stick to my belly while sitting around watching TV on a Sunday afternoon.
Sweet & Spicy Sausage Ragù
Years ago, I was working at a tiny restaurant in Tuscany. This is where I first learned to make ragù—an unbelievably delicious sauce that I would let cook for hours and hours. But in the beginning, no matter how long I let it simmer, the owner would come over, taste it, and tell me the vegetables were raw! In my head I remember thinking, are you freaking kidding me? But he was right. I was skimping on an essential step—I was rushing the browning of the soffritto: the early stage in a ragù’s life cycle when the flavor begins to build and deepen. Now, of course, I’m super-sensitive to this step, and when I taste a ragù in a restaurant, I can tell instantly if the chef has taken a shortcut at the browning stage. So be patient—if you’re taking the time and effort to make this spectacular sauce, don’t rush it; brown it and enjoy!
Chef Anne’s All-Purpose Pasta Dough
Making fresh pasta doesn’t have to be a big to-do. Yes, it can be a lot of work, but the possibilities that await you are endlessly exciting. I love what can be done with just a few basic ingredients and a little bit of skill. Depending on the season, the amount of time you have, or the mood you’re in, you can make short pasta, long pasta, stuffed pasta, whatever you like. As your skill and confidence grow, you’ll realize that a whole new world is open to you with fresh pasta. What I offer here is a way for you to dip your toe in the pool of well-salted pasta water and see where the noodles take you!
Lemon Fettuccine
When I go to New York, I often eat at Serafina Restaurant, which makes an amazing lemon spaghetti dish that is so good that I was again inspired to get the recipe. The chef kindly obliged. This version is a little simpler and creamier than the original. As with most other pasta dishes, you want the sauce to be ready before the fettuccine is so that the hot noodles absorb the creamy, lemony sauce (the longer it sits, the less saucy it will be). Note that the broth and cream will need to simmer for a good long time so that they are well reduced. Be sure to grate the lemons before you juice them. This is wonderful served with grilled chicken brushed with Steak Grill Sauce (page 164).
Tomato-Basil Spaghetti
This is one of the dishes I turn to when unexpected guests drop in. The sauce comes together in less time than it takes to boil the water and cook the pasta, but the results are always impressive. Begin the sauce as soon as you put the water on to boil, because it’s better if the sauce is ready before the pasta, rather than the other way around.
Sopa de Fideo
I call this Mexican spaghetti. In Mexico, sopa de fideo is truly a soup, while fideo seco is much drier. I like a texture between the two. As with Mexican Rice (page 124), the trick is to cook these without touching them very much at all. Any stirring will make the noodles sticky, so when checking the level of the liquid in the pan, just use a long-handled spoon to gently move the noodles aside and check the bottom of the pan. Note that the longer this sits, the more the noodles will absorb the broth. This is a great method for cooking chicken, so even though I’m serving the noodles only as a side dish, sometimes I take advantage of the simmering pot to cook some chicken for the next day. I add as many drumsticks as possible without crowding, and the well-seasoned broth turns out tender, juicy, and really flavorful chicken every time.
Baked Goat Cheese Rigatoni
When I am in Dallas, I make sure to stop in at the Palomino, where the chef puts a unique spin on mac and cheese. He uses rigatoni and goat cheese. It’s so creamy and delicious, I finally asked the chef for the recipe so I can make it myself at home! Make sure to use regular, unflavored soft goat cheese.
Mexican Lasagna
This is a really fun dish to make and serve. It’s great for parties or to bring to potlucks and it’s convenient. You can assemble it completely and then freeze it (let it stand at room temperature for 1 hour before baking as directed below). I like to make it in two round cake pans because it looks really pretty when you slice it. Use any saucy salsa that you like; don’t use pico de gallo, which is too chunky. Shredded Mexican cheese is a packaged combination of three to four cheeses, usually Cheddar, Monterey Jack, queso quesadilla, and asadero. It adds more complex flavor than a single cheese and melts really well. Of course, you can grate your own selection of cheeses, but I like the convenience of the preshredded and packaged version.
Rotini Pasta Salad
Full of colorful, crunchy vegetables and bursting with flavor, this looks really pretty on a buffet table. By the time I was in middle school, I knew that rotini and vegetables in the kitchen was the sign that we were headed to a potluck soon. This was and is my mom’s go-to recipe for PTA meetings, school plays, recitals, and baby and bridal showers.
Lemon Orzo Soup
This soup can be pulled together in minutes, and it’s one of the most soul-satisfying things I make. It should be very brothy so the orzo just floats in the rich, lemony broth. The pasta will absorb the broth as it sits, so serve as soon as it’s ready.
Braised Chicken with Apricots, Green Olives, and Herbed Couscous
A departure from classic chicken stew, this one-pot wonder with Middle Eastern flair is a little bit exotic but not off-putting or difficult to make in the slightest. In fact, my kids love it. The sweet apricots and salty olives play nicely off each other and collide under a shower of cilantro to jack up the flavor even more. The recipe should make a little extra for leftovers, which are even better the next day.
Fregola Risotto with Shrimp, Roasted Corn, and Melted Leeks
I’m crazy about the deep nuttiness of fregola (Italian couscous) and I’m always looking for new ways to show it off. When cooked in the style of a risotto, fregola gets really creamy and is a change from typical Arborio rice. Fresh corn turns this creamy risotto into summer goodness. The familiar flavors are boosted by the addition of shrimp and a topping of creamy melted leeks, which also makes a fabulous side dish on its own.
Fettuccine Carbonara with Crisp Bacon and Poached Egg
This dish was inspired by my friend and mentor Frank Crispo. To satisfy those deep creamy-pasta cravings, you’re not gonna get more decadent than carbonara sauce. Pasta bathed in butter, oil, eggs, bacon, and cheese—it’s a rich dish but enjoy it; you don’t eat this every day.
