Shrimp Bisque

When developing this recipe, Epicurious member Joan Higgins of Pearl River, New York, decided to use extra shrimp to make sure that her diners had a piece of shrimp with each spoonful. The bisque’s base is indulgent, too—half-and-half infused with earthy nutmeg and enlivened with paprika. Even with its deep flavor and silky texture, Higgins says the best thing about this recipe is that it’s foolproof.

Chili Con Carne with Chili Cheddar Shortcakes

Few comfort foods hit the spot like a good chili. Don’t forget the Cheddar shortcakes; the light, fluffy consistency of the dough pairs perfectly with this Tex-Mex staple.

Green Pozole with Chicken

Chicken makes this ceremonial Aztec soup healthier than the pork-based original. While this does require some preparation, the extra time and effort pay off with an intense, flavorful entrée.

Braised Chicken with Tomatoes and Olives

With only twenty-five minutes of active prep time, even a less-experienced cook can add this timeless chicken recipe to his or her repertoire. The simple dinner utilizes produce of southern France—olives, onions, and fennel—cooked in the same pan as the chicken and sauce. Substitute a combination of dried thyme, fennel, basil, and savory if you can’t find herbes de Provence. Serve this in the backyard with a baguette and a bottle of Côtes de Provence, and have yourself a true pique-nique français.

Cioppino

Shrimp, scallops, crab, clams, and red snapper make up this 60-minute fish stew, a dish that sounds Old World Italian but most likely originated in the Italian-Portuguese neighborhood of San Francisco known as North Beach. Although the recipe may seem overwhelming at first, the ingredient list is in fact just made up of kitchen pantry staples and seafood. To cut costs, double up on the least expensive wild seafood and omit the priciest. Serve with a toasted baguette.

Indian Spiced Carrot Soup with Ginger

If you’re one of those folks with serious misgivings about cooked carrots (too soft, too bland, too . . . orange), this spicy South Asian starter will likely change your mind. Puréeing the carrot with broth and an aromatic mixture of spices produces an exceptionally rich, velvety texture. Like a little more heat? Kick it up a notch by increasing the amount of ginger, curry powder, or coriander while the pot is simmering. But be sure to remember the garnish: creamy yogurt will actually enhance the layers of flavor in the soup. This healthy option is great as a first course at a dinner party or makes a simple lunch for the kids.

Tom's Tasty Tomato Soup with Brown Butter Croutons

When I was a kid and my mom made tomato soup, she would cut buttered toast into squares and float them on top of each bowl. My twist on Mom's toast is to make brown butter croutons, though when I'm really feeling feisty I go all the way and make grilled cheese croutons to float on the soup. To cut the bread for the brown butter croutons, take a 4-inch chunk of rustic bread (5 to 6 ounces) and cut off and discard the crusts using a serrated knife. Cut the bread into 4 slices, then cut the slices into 3/4- to 1-inch cubes.

White Bean Soup with Chive Oil

This creamy soup, served in tiny cups and bright with chive oil, is easy to make and serve. Kids will like the little cups and the crazy green swirl. Adults will appreciate the healthfulness and the flavor.

Baeckeoffe / Laundry Day Stew of Beef, Pork, and Lamb

This is the stew that made such an impression on the final episode of the first season of Top Chef Masters. Each of us had been asked to create a meal that would be an autobiography told through the dishes we would present to the judges. I immediately thought of baeckeoffe ("baker's oven"). The name refers back to the time when bakers used wood-fired ovens. After the bread was done, this dish would be baked long and slow in the falling temperatures of the cooling oven. Since everyone in town would see the baker every day for the family's daily loaf, each would often bring a casserole to be baked in the oven. It was traditional, particularly on Mondays, when the women went to the river to do their laundry. They would have marinated their meats and vegetables overnight, dropped their casseroles off in the morning on their way, and then picked them up—plus a loaf of bread—on their way home. Even though my father was not the bread baker and had a modern, gasfired oven, people still took their casseroles to him. They liked to drop in because he always had some joke or story to tell. Before the village baker also invested in a modern oven and was still using wood, when my father turned over a fresh loaf of bread to give it the traditional blessing, he would sometimes see pieces of charcoal embedded in the crust. That would send my dad wild, muttering that "he [the baker] did not thoroughly clean his oven!" I make this dish often, both at home and at the restaurant. But these days we tend to increase the vegetables and use less meat, and sometimes we use only vegetables and leave out the meat entirely. While there is never a mushroom in the classic recipe, you can add them or make a vegetarian version with mushrooms and a rich vegetable stock. I've also made this stew as the centerpiece for Christmas dinner, adding plenty of sliced black truffles. The classic dish uses a mix of meats including a pig's foot, which gives a rich, gelatinous texture to the stew. You may be able to special-order a pig's foot. Ask the butcher to slice it crosswise into three pieces. But even at the restaurant I sometimes have trouble ordering them, and your stew will still be delicious without one. You can also use just one or two kinds of meat instead of all three.

Brain-Boosting Broth

This broth, the backbone of many of our soup recipes and an ingredient in many others, was developed with brain health in mind. It includes onions, fennel, parsley, oregano, and rosemary, all of which contain antioxidants, as well as parsnips, which are a good source of folic acid. The recipe uses water as liquid, but you can start with chicken stock or fish stock to make an especially flavorful broth that would be great for sipping on its own.

Red Lentils and Kale with Miso

This dish draws on both Mediterranean and Asian influences and uses the very different flavors of sage, miso, and nori in complementary ways. It's a brain-healthy recipe: legumes such as lentils are a key component of the Mediterranean diet, both kale and onions are good sources of polyphenol antioxidants, and sweet potato supplies a dose of beta-carotene.

Finnan Haddie Chowder

Chowders are by far my favorite kinds of soup and often feature at our table on a Saturday lunchtime. The best, I think is clam, followed closely by finnan haddie. If you can, try and buy some really good-quality undyed finnan haddie, which has a more subtle flavor than some of the others.

Chicken with White Wine and Herbs

My brother, Al, is an inspiring teacher at Jamie Oliver's cooking school, Recipease. This is an adaptation of one of his favorite recipes to enjoy at home. For a wonderful spring stew, try adding some blanched asparagus, peas, and beans, or top it with a crust for a comforting pie .

Butternut Squash Soup with Pumpkin Butter

At the first nip in the air, I start looking for fresh butternut squash at farmers' markets, just so I can make this soup. Considered a Thanksgiving classic, this versatile and universally loved soup is simply too tasty to enjoy only once a year. Now that peeled and precut butternut squash is available in grocery stores year-round, you can make this easy three-step—roast, blend, and simmer—soup anytime you like. Like apple or pear butter, pumpkin butter is gently cooked with some sugar until it's smooth and has a buttery texture. Look for pumpkin butter near the jams and jellies in your grocery store.

New England Clam Chowder

If fresh clams are unavailable (or you're running short on time), substitute two 10-ounce cans of baby clams and 6 cups of bottled clam juice.

Mrs. Patmore's London Particular

The thick fogs that engulfed London until the mid to late 1950s for which this soup is named would not be unknown to the Crawley family. Matthew, a London native, would especially enjoy this hearty ham and pea soup, as it would remind him of his childhood home.
