Spaghetti Squash Stew
If it’s possible for squash to be considered a “fun” food, spaghetti squash certainly fits that description. Its noodlelike strands contrast nicely with the crisp turnips and snow peas in this stew.
Moroccan-Style Vegetable Stew
This delicious stew looks and smells as enticing as it tastes. My sister-in-law, Toni Atlas, provided the inspiration for this recipe.
Kale, Yellow Squash, and Sweet Potato Stew
As everyone knows, greens are good for you, but with its high calcium content, kale is a standout. Unlike many greens, kale does not wilt on contact with heat, but needs a good bit of simmering to get done. Its deep green color and elaborately ruffled leaves, contrasted with the yellow of the squash and the orange of the sweet potato, make this an attractive and nourishing dish for the early autumn harvest.
African Peanut Butter Stew
Once, when I was visiting Paris, my friend Emile from Gabon, Africa, made this dish for me. I was amazed that cooking with peanut butter could be so good.
Argentinian Beef
Feel free to make this recipe using ground turkey or pork instead of beef, or even meat-substitute crumbles. You could also use a tenderloin cut of meat. Look for peeled and chopped butternut squash in your supermarket vegetable aisle.
Amaranth Chili
The Aztecs worshipped the life-sustaining properties of amaranth in pre-Columbian times. Sadly, it all but disappeared after the arrival of the conquistadors. A grain (like wheat), amaranth is high in protein, fiber, and amino acids. In this recipe you’ll notice the silky beads add yet another exciting texture to this one-pot meal. I find amaranth in the bulk bins at the health food store. My food processor has a shredding disk, which works well for zucchini; however, sometimes I simply use my grating tower to get the same effect. The shredded zucchini gives this Glorious One-Pot Meal a thick, stewlike consistency that seems especially hearty. Feel free to swap the amaranth for the same amount of rice (the amount of liquid won’t change).
Adobo Pork
Adobo, or roasted, pork is a staple in Latin America and some parts of Southeast Asia. This is just one version of the Latin American-style dish, made easier as a Glorious One-Pot Meal. Replace the rice and broth with 3/4 cup of quinoa and 1 cup of broth for a more authentic South American meal. Ancho chiles are actually dried poblano chiles, which are rich in flavor and popular for cooking. They’ve been described as looking and tasting like prunes, though certainly with more of a bite. Anaheim chiles are a milder substitute. You can use boneless frozen pork chops without increasing the cooking time. However, if they are frozen with the bone in, you may need to allow ten extra minutes in the oven. You can also substitute flank steaks or chicken pieces with good results. I like to add a sliced fresh tomato to this recipe. Layer the sliced tomato on top if there is still space in the pot after adding the green pepper.
Cioppino
Cioppino, or fisherman’s stew, had its origins in San Francisco by way of Italy, but all Mediterranean countries have similar fish stews. Make this version your own with your favorite treats from the sea. Traditionally, this dish is not very soupy; for more broth, do not drain the can of tomatoes. I prefer to avoid precooked seafood for Glorious One-Pot Meals. If your frozen shrimp is pink, it’s precooked. While using precooked seafood certainly won’t ruin your meal (it’s difficult to fail with a Glorious One-Pot Meal!), raw seafood results in a stronger flavor and will be more tender after cooking.
Bobby’s Turkey Vegetable Goulash
Bobby loves his goulash. It’s still the dish he begs Mama to make for him, even though he can have this easier, leaner version ready for himself when he gets home whenever he likes. Mama often serves her goulash the next day to let the flavors marry; cooking it in a crockpot in a single day achieves the same delicious effect.
Braised Chicken with Peppers and Mushrooms
Cooking chicken with mushrooms gives you such a nice intense and meaty-tasting broth. Along with meltingly soft bell peppers and onions, this throw-it-all-in-the-pot stew has wonderful Italian flavor. We love it over buttered noodles.
Quick-’n’-Easy Chicken ’n’ Dumplings
Mama’s chicken and dumplings are sooo good. She simmers her chicken for ages until she has the richest stock—that’s how we do it at The Lady & Sons. All that effort certainly pays off, but we just never have time to cook like that. That’s where the slow cooker comes in. Along with easy-to-make drop dumplings (Mama would roll hers out), you’ll get that hearty chicken flavor and the light, fluffy, comforting dumplings without having to stay by the stove all day.
Polish Crockpot Stew with Kielbasa and Cabbage
We got this recipe from our good buddy (and Bobby’s neighbor) Michael Peay. He remembers his mom always used to make more than he and his brothers ever could eat because their house was so popular with their friends, especially around dinnertime. This stew, full of good porky sausage and plenty of tender cabbage, was his favorite childhood meal.
All-Day Beef Chili
Serve this hearty chili over rice for a simple meal, or do it up Deen style over a bowl of Fritos corn chips with cheese, fresh onions, and sour cream. It sure tastes good with Moist-and-Easy Corn Bread (page 45).
Brunswick Stew
When I make this stew, an extremely old-fashioned and indigenous example of the “poor people” food that the South was built on, I feel like I’m cooking a piece of my own history. The origins of this piquant, thin stew, which is loaded with meat and vegetables, are hotly disputed between Brunswick, Georgia, and Brunswick County, Virginia (I’m a Georgia product myself, so you know which side I’m on). I always make this for a crowd. A big crowd. Like those at my cooking school, which typically draws more than fifty students. I have my own professional-size meat grinder, and what I often do is grind the onions and potatoes together with the pork and brisket. You don’t need to do that at home; you can just mix them together. And feel free to cut this recipe in half (or quarters, whatever you need), but I suggest you make it for your next snow day, and bake up some cornbread to go with it—feed the whole block and you’ll have friends for life, trust me.
Bulgur Wheat with Leftover Lamb
Here’s a dish I concocted when I had some leftover rare lamb from a roast. I had stripped most of the meat from the bone, but there was enough still clinging in the crevices to make a meaty broth, so I put the meat and the bone in a pot with an onion and a carrot, poured cold water over, and let it simmer for an hour or so. It made about 5 cups of lamb broth, most of which I stored in the freezer.
