Khoresh Bademjan

Chicken may be used instead of meat. Serve with plain rice steamed in the Persian manner (page 338) or the quick and easy boiled and steamed rice (page 339). The eggplants are usually deep-fried, but in this instance it is as good to broil or grill them, as they get stewed as well. If you don’t fry them, it is not really important to salt them (see page 289).

Khoresht-e Gheimeh

This Persian sauce is exquisite, with delicate spicing and dried lime as the dominant flavor. Serve it with plain rice prepared in the Persian manner (page 338) or the quick and easy boiled and steamed rice (page 339).

Khoresht-e Ghormeh Sabzi

This is one of the most popular sauces in Iran and a favorite of mine. Dried limes and the herb fenugreek give it a unique and delicious bitter-sour taste. Flat-leaf parsley, chives, and in some versions dill and cilantro complete the symphony of flavors. Fresh fenugreek can be found in Iranian and Oriental stores in the summer, and packets of dried fenugreek leaves are available the year round. Only a little is used, because it is very powerful. The dried limes can be found in Oriental and Indian stores in various forms, whole, broken into pieces, and powdered. To make them yourself, see page 44. If you can’t find the powdered one, add an extra whole one. Serve with plain rice steamed in the Persian manner (page 338) or the quick and easy boiled and steamed rice (page 339).

Geisi Polow

Apricots have a particular affinity with lamb. The early Arab Abbasid dynasty, centered in Baghdad, adopted the combination from the old Persian Empire that preceded it and created a series of dishes on the theme which they called mishmishiya (see page 255), mishmish being the Arab word for “apricot.” Apricot is still a favorite partner to lamb in modern Iran. The rest of the Middle East has adopted it to a lesser degree. You need a tart, natural variety of apricots, not a sweetened one.

Chickpeas with Turmeric

In Morocco it is poor food eaten hot with bread. A grander version with saffron is served as a first course. You may use canned chickpeas. The same can also be done with white cannelini beans, dried or canned.

Shula Kalambar

A lentil-and-spinach dish was prepared in medieval Persia to heal the sick. For the cure to be effective, the ingredients had to be bought with money begged in the streets. Here is a modern version.

Adds bel Tamatem

This is good hot or cold, with plenty of raw olive oil.

Spicy Root Vegetables

A Tunisian way of cooking winter vegetables. It can be eaten hot or cold.

Kharshouf bel Ful wal Loz

The Copts of Egypt observe a long and arduous fast during Lent—El Soum el Kibir—when they abstain from every kind of animal food, such as meat, eggs, milk, butter, and cheese, and eat only bread and vegetables, chiefly fava beans. Artichoke hearts and fava beans in oil is a favorite Lenten dish, also popular with the Greeks of Egypt. These two vegetables are partnered in every Middle Eastern country, and indeed all around the Mediterranean, but this dish with almonds is uncommon and particularly appealing. You can find frozen artichoke hearts and bottoms from Egypt that are difficult to tell from fresh ones, and frozen skinned fava (or broad) beans in Middle Eastern stores. But if you want to use fresh ones, see the box on the opposite page for preparing artichoke hearts or bottoms. If your fava beans are young and tender, you do not need to skin them.

Kawareh bi Hummus

This dish is loved all over the Middle East and in the Balkans for its rich, gelatinous texture. It is sometimes served as a soup. Christians also use pig’s trotters. Serve with bread and a light salad.

Kouneli Stifatho

Stifatho is a Greek dish also made with beef. Serve it with rice or potatoes.

Lamb with Apples and Cherries

This is a Persian stew which is a sauce for plain rice. You will find many more Persian sauces with meat in the rice chapter. Use dried pitted sour cherries.

Safardjaliya

This is a Moroccan version of a dish you find in many Middle Eastern countries. Serve with bread.

Pssal ou Loubia

They call it the Tunisian cassoulet.

Rutabiya

Rutab is the Arabic word for dates. You might find this dish too sweet. In Morocco it is made with fresh Tafilalet dates, but you may use the Tunisian or the moist dried California ones available in America. Serve with bread.

Mishmishiya

The dish derives its name from the Arabic word for apricot—mishmish. Only a tart natural—not sweetened—dried or semi-dried variety will do. Fresh apricots may also be used, in which case they should be added at the end and cooked for a few minutes only, so that they don’t fall apart. The reason why there is fresh gingerroot rather than the ground spice which is usual in Morocco is that the recipe comes from Paris. Serve with bread.

Marquit Quastal

This Tunisian dish, more commonly made with dried chestnuts, is more to my taste with fresh and even frozen ones. While Tunisia has been sympathetic to Western ideas, and although it was subjected to a massive immigration of French and Italian peasants when it became a French protectorate, it has sustained Arab cooking in its most ancient form. This beautiful and fragrant stew is an example.

Lamb Tagine with Artichokes and Fava Beans

This Moroccan tagine is easy to make with the frozen artichoke bottoms from Egypt and frozen skinned fava beans (both really good) available in Middle Eastern stores.

Lamb Tagine with Peas, Preserved Lemon, and Olives

Here is another Moroccan tagine. Buy the peas fresh and young, in the pod, when you can. Some supermarkets sell fresh shelled ones that are young and sweet, and frozen baby peas—petits pois—are also perfect to use.

Laban Ummo

Recipes for meat cooked in yogurt abound in medieval Arabic cookery manuals, where the dish was called madira. As early as the tenth century, the Arab writer Badia’z Zaman wrote a tale entitled “Al Madirya” about the dish. Such dishes are still popular in the Arab world. The name of this Lebanese version, which means “his mother’s milk,” implies that the meat of a young animal is cooked in its own mother’s milk. It can be made with chunks of meat or lamb shanks. Serve with plain rice (page 337) or rice with vermicelli (page 340).
