Stuffing

Herbed Bread, Cracker and Leek Dressing

"Common crackers," good-keeping hard wheat flour crackers akin to ship's biscuits or hardtack, were found in early New England households and often made their way into poultry dressings. In this recipe, we add leeks and large quantities of the kinds of herbs cultivated in Colonial kitchen gardens.

Porcini Stuffing with Leeks

Lane Crowther, Bon Appétit contributing editor, "Stuffing has always set the tone for our Thanksgiving dinners. We choose the stuffing—it might be Tex-Mex, or another regional American, or something else—then create the menu around it. A few years ago, the feast had an Italian accent, and a vegetable stuffing led the way."

Escarole and Mushroom Dressing

Country Sausage and Sage Dressing

This recipe is intended as a baked dressing to accompany the Thanksgiving turkey . It can be used as stuffing (a practice I do not recommend for turkey), if you desire. It also makes a good stuffing for capon or pork.

Andouille Sausage and Corn Bread Stuffing

Bruce Aidells, founder of Aidells Sausage Company, says, "Stuffing was the most important part of my family’s holiday menu. The turkey was always overcooked, but the stuffing was moist and delicious. We usually had two, sometimes three stuffings, but I leaned toward the kind with sausage. It was meaty and spicy, just like this one."

Herbed Shallot Stuffing

This simple yet rich stuffing uses coarse bread crumbs from a baguette instead of cubes. The Cognac really brings out the flavor of the herbs. It's adapted from James Beard's tarragon crumb stuffing recipe, published in Gourmet in December 1983.

Southern Rice Pilaf Stuffing with Ham, Pecans and Greens

At Thanksgiving, rice stuffings are standard on many southern tables. This one, a combination of white rice and wild rice, gets more regional notes from collard greens, pecans and ham.

Country-Style Peppered Pork and Bread Stuffing

Jim Fobel, cookbook author, says, "My mother always added lots of sage and nutmeg to her stuffing. I loved those flavors when I was a kid, and I still put them in the stuffings that I make today."

Roasted Stuffed Onions

Many people consider stuffing the best part of a Thanksgiving meal, and they can be quite particular about it — some like it dense and moist from the turkey juices, others fluffy and browned from the oven. We've made sure everyone will be satisfied: This recipe makes enough stuffing for the turkey and the onions, with plenty left over for another baking dish of stuffing. You can easily adapt the recipe to suit vegetarian guests — simply eliminate the bacon (use olive oil instead of bacon fat for sautéing the vegetables) and substitute vegetable stock for the turkey stock. Corn and Herb-Bread Sausage Stuffing

If this stuffing is to be baked inside the holiday turkey, reduce the amount of chicken broth to 2 1/4 cups.

New England Sausage, Apple and Dried Cranberry Stuffing

This impressive stuffing gets its Yankee accent from apples and dried cranberries.

Sausage Stuffing

Part of this stuffing is used in Crown Roast of Pork with Sausage Stuffing. To serve as a side dish, place all of the stuffing in a baking dish, cover and bake at 375°F for 45 minutes.

Basic Bread Stuffing

The rule for figuring out the proper amount of stuffing is easy to remember — approximately 1 cup per pound of bird. This works very well unless you want stuffing for only one meal, in which case this quantity is excessive. So, starting from the maximum, reduce the among of stuffing to suit your needs.

Crackling Corn Bread Dressing

Put the dressing in the oven as soon as the turkey comes out to rest before it's carved.
