Tart

Caviar Tart

Hard-boiled eggs, sour cream, and onion are traditional accompaniments for caviar. In this longtime staple of community cookbooks, they are turned into a shallow cake and spread with caviar. We used supermarket lumpfish caviar, but if you're feeling flush, use the good stuff, or even Japanese tobiko (flying-fish roe).

Apricot Almond Tart

Apricot season is short, but our love for the fruit endures. Pan-roasting canned apricots revives their tartness. Combined with frangipane filling, they make for one sweet dream in the middle of winter.

Fresh Orange Tart with Hazelnut Crust

Begin making the orange cream filling one day before serving the tart.

Sugar-Glazed Prune Tartlets

Sprinkled with cinnamon sugar, these little prune tartlets (made with just five ingredients) are so delicious, they'll have everyone at the breakfast table begging for more.

Cashew-Coconut Tart in Chocolate Crust

There's a layer of chocolate between the cookie-like crust and the rich filling of this sophisticated spin on the traditional pecan pie.

Apple Tarts with Vanilla Ice Cream

Easily made with puff pastry, these light, thin apple tarts provide just the right amount of dessert. The skins get added to the syrupy glaze, enhancing the tarts with a bit of sweetness and the faintest blush of pink.

Honey-Pecan Tart with Chocolate Glaze

We've made one of America's most famous holiday desserts — pecan pie—even more delicious by adding an unctuous layer of moist caramel, a touch of bittersweet chocolate (to cut the sweetness), and some finely shaved nuts on top.

Citrus Tart

At her restaurant, Magnolia Grill, Karen Barker serves this tart with fresh raspberries and whipped cream. I think it's perfect all by itself.

Chocolate Custard Tartlets in Almond Cookie Crust with Saffron Ice Cream

For this one, you will need six 4 1/2-inch tartlet pans with removable bottoms.

Cream Cheese Crostata with Orange Marmalade

Crostata con Crema di Formaggio e Marmellata di Arance Amare Florentines aren't big dessert-eaters, so many menus have a limited array of sweets. Not so at Zibibbo. Chef Vitali's delicious selection includes this cream cheese tart, which is one of the restaurant's most popular desserts. What to drink: An estate-bottled Vin Santo. Try: Capezzana Vin Santo di Carmignano.

Pear and Almond Tart

This is my friend Paule Caillat's recipe, with its meltingly tender all-butter crust. Instructions for poaching fresh pears are included, but if you want to save time, do what Paule and other French women in a hurry do — use canned pear halves. Just drain the canned pears, dry them very well, and carry on.

Chocolate Tart with Candied Clementine Peel

This tart was inspired by the torta di cioccolata at Florence's Trattoria Garga. (The recipe appeared in our September 1993 issue.) Tender candied clementine peel adds citrus flavor, making this trufflelike tart even dreamier and evoking the taste of chocolate-dipped candied orange peel.
