Bacon and Basil-Wrapped Chicken Breasts
The following recipe uses whole chicken breasts with the "tenders" (fillet strips) still attached. Because some supermarkets remove the tenders and sell them separately, it is best to buy your chicken from a butcher. All is not lost, however, if you use chicken without the tenders simply stuff the chicken breasts with basil and wrap with bacon as described below.

Shortcut Pork Cassoulet
To begin, offer a bowl of brine-cured green and black olives, another of marinated artichoke hearts, and some pâté and toast. The cassoulet needs only red wine and a loaf of good French bread as accompaniments. A pear or apple tart would add an appropriate French country flourish.

For convenience, we substituted chicken for the rabbit used at the restaurant. The gravy can be made ahead of time, but the chicken should be fried just before serving.
Roasted Beef Tenderloin Wrapped in Bacon
The roast can be prepped one day ahead. What to drink: A robust, medium- to full-bodied red, such as an Italian Barbera. Susan Simon also recommends a Carlo Hauner 1998 Rosso Antonello (made with Sangiovese and Nero d'Avolo grapes); it's produced on the Italian island of Salina.

Slow-Braised Short Ribs, Lardons, and Baby Vegetables
Though Lynch uses flanken for this dish, we prefer the look of regular short ribs.You can often find flanken as well as short ribs at your local supermarket. Both are from the flavorful chuck, or shoulder, portion of a steer; the former are a three-rib portion of short ribs cut through the bone and the latter are ribs cut between the bones.
